OPEN, SESAME: Burgeoning confectionary markets swing doors wide open for Georgia farmers

It's harvest season for a number of Georgia crops, and amongst the cotton pickers and pecan shakers are a relatively new trend: sesame combines.
Georgia planted 23 percent of the Southeast's mechanically harvested sesame crop this year.
"This is our second year here in Laurens County, and basically our second year in Georgia as well," said Raymond Joyce, Laurens County Extension coordinator. "We have it growing in various soils across the state. We have it up in the Eatonton and Madison area, in southwest Georgia and here through middle Georgia."
The sesame experiment began with 2,500 acres contracted in the Southeast, grew to 45,000 in 2013, but dipped back down to 30,000 this year. Georgia is a big part of that 30,000 approximately 7,000 acres.
"Unfortunately we had a lot of rain last year and that really hurt a lot of the guys that contracted acres. They weren't able to get it planted or when it was planted, it got flooded out. That unfortunately put a handcuff on some acres this year," said Chris Bacon, grain merchandiser for Agrex, Inc., in Buford, Ga.
This isn't just any sesame though: Georgia farmers are planting the world's only mechanically harvested varieties, developed by Austin, Texas-based Sesaco. Unlike older varieties,
which had seed pods that Jimmy Brewer, owner of Southland Seed Company in McRae, Ga., called "extreme shatterers" and required hand-harvesting, Sesaco's seeds stay in the pod, making them able to be combine-harvested with equipment many Georgia farmers already own.
These varieties grew well out West, but major drought issues from 2009 to 2011 led to the company looking for other places to cultivate, including the Southeast. Sesame is droughttolerant once out of the ground, but still needs water for the seed to take root, Joyce said.
The non-shattering varieties include S30 and S34, which are upright plants recommended for no-till drill planting, and the branch-type S32, S36 and S38 are encouraged for those using a planter, Brewer said.
Joyce said sesame thrives in well-drained soil, and fits well in rotation with crops already grown in Georgia.
Sesame is also lauded for breaking the nematode life cycle. Nematodes, which Brewer likened to humans having the shingles, form nodes on a plant's root system and stops the plant from accepting nutrients.
Sesame has a root system instead of a single taproot, giving it better potential to bring nutrients back to the top part of the soil, thus creating a better nutritional environment for the next crop, Bacon said.

Emily Holden's Friday schedule is as follows: wake up, drive to kitchen, bake several hundred cookies, cool several hundred cookies, assemble several hundred cookie sandwiches.
Her cookie sandwiches include the Hall and Oatmeal two chewy, old-fashioned oatmeal cookies with peanut butter chips blended in, filled with a peanut butter buttercream and the popular brown butter snickerdoodle filled with dulche de leche buttercream.
"It's a mixture of recipes that I've used over the years that I've just tweaked to kind of make my own," Holden said. "I usually kind of try to perfect the cookie and then think of what the perfect filling would be for it."
It's a vast difference from where she was two years ago, when her options were limited
to either baking as a hobby or opening a commercial bakery in the metro Atlanta area. There wasn't an in-between.
"I'd been thinking about making it become a business, but when I was first thinking about this, the cottage food license was not in existence yet," Holden said. "My amazing husband noticed an article in the [Atlanta Journal-Constitution] that the cottage food license had happened in Georgia and that just opened up the door for me. I'm pretty conservative in taking business leaps, so this was the perfect transition to actually becoming an actual business. I think that if the cottage food license hadn't happened, I don't think I would have had the guts to take this step."
Her business, Jimella's Bakery named for her great-grandmother is now a staple at several community farmers markets, thanks to the cottage foods permit that became available in September 2012. Thanks in part to the success of her cottage foods operation, Holden took an additional leap toward owning her own bakery this past summer, when she moved production from her home kitchen to a shared commercial
kitchen in Atlanta. Prior to the cottage foods law, consumers
could only manufacture and sell food at nonprofit events, such as a church fundraiser, without a license.
"What the license does, it allows them to sell at for-profit events or to sell them over the Internet retail sales to the end consumer," said Craig Nielsen, associate director for the Department's Food Safety Division.
Cottage food producers are not, however, able to sell out-of-state or do wholesale sales.
A cottage food is a "non-potentially hazardous food," or in layman's terms, something that is shelf-stable and doesn't require refrigeration, said Jessica Badour, recall outreach specialist for the Department's Food Safety Division. This can include cakes, pastries, breads, popcorn balls, granola, spices and seasonings that are produced in a home kitchen.
"A lot of consumers are interested in the option of selling something that they make in their home on a small scale, directly to the consumer," Badour said. "This fulfills that need and

Week-long event places greater focus on Georgia agriculture

The Savannah Food & Wine Festival is in full swing again this week. The festival is designed to be an exciting showcase of local and national culinary, wine and spirit talents. It benefits the Tourism Leadership Council Scholarship Foundation, and last year had a $1.8 million economic impact on Savannah's economy.
"One of our primary goals with the festival is to really make Savannah a notable culinary destination, and to do so by highlighting on the broad spectrum of Georgia agricultural commodities," said Jan Gourley, the festival's co-founder and director.
This year's festival has a much larger emphasis on promoting Georgia agriculture, Gourley said.
In addition to joining the Georgia Grown program, the festival highlights the talents of some of the program's executive chefs and has an entire Georgia Grown Village for other members to be on display. The
festival, which has already drawn numerous visitors since it began Nov. 10, will continue to share the state's agricultural mission through Nov. 16.
Gourley said there is an activity for everyone tastings, dinners and competitions, for example
"I really want everyone to know how much fun we have at this event. I know a lot of people think of Food and Wine Festivals as stuffy events, but that's not our goal here. We want people to come out and enjoy themselves and really get a taste of what Savannah has to offer," Gourley said.

ARTY'S GARDEN: Showing showy crotolaria the door
Although not a graceful plant, showy crotolaria (Crotolaria spectabilis) was pretty enough blooming with my zinnias and marigolds. Its lemon yellow flowers seemed fresh among the golds and oranges of late summer, as did its blue-green leaves.
For some reason, I assumed showy crotolaria was a native wildflower. Several years ago, I collected seeds and sowed them. It thrived in my garden. The only effort it required was pulling up seedlings that sprouted where they were not wanted.
I even liked the seed pods: jade peas that matured into brown botanical bells that tinkled and rattled when shook. This percussiveness accounts for another common name, "showy rattlebox."
When I began researching showy crotolaria, I discovered some unsettling facts. First, it is not native but was introduced from India. That in itself is not necessarily bad. I do not insist on planting only things originally found here before Columbus landed.
What did bother me was finding out it is an invasive species. Invasive species are ones that have been brought into our country and gotten out of control. We have introduced many such species that have been detrimental to gardeners and farmers as well as to other species of plants and animals. Kudzu, Chinese privet, Japanese honeysuckle, porcelain vine, sweet autumn clematis and johnsongrass are just a few that were introduced with good intentions and are now creating problems, costing money and causing headaches and backaches.
Second, showy crotolaria is toxic to livestock. Since I have a fenced garden in an inner city neighborhood with no pastures nearby, why should I be concerned? Mounted police ride through occasionally, but I'm not going to wake one morning and find Bossy or Black Beauty grazing outside. Also, there are many plants with varying levels of toxicity to farm animals, pets and humans.
However, what bothered me about this one was that unlike some others, showy crotolaria won't stay put. And its seeds remain viable for many years. Someone may admire it in my garden, gather seeds there or elsewhere and spread showy crotolaria to uninfested areas of the state. If showy crotolaria was already growing in every county in Georgia, I wouldn't be as concerned. Many invasives are thoroughly established. Showy crotolaria may be one day. However, it is not going to get there with any help from me: I have banished it from my garden. Aren't there other flowers that don't have the possibility spreading and causing problems? The answer is "Yes." Those are the ones I will choose.

"If you've got $150 to $200 in it, you can look to maybe make $70 to $100 an acre on it," Bacon said. "Last year we ended up being 750 pounds an acre or 800 pounds an acre across the board. There have been some glimmers of hope with growers who averaged 1,100 to 1,200 pounds. That's what we expect as the learning curve gets smaller and smaller and guys get more years growing sesame under their belt."
Brewer said growers will have a better chance doubling their investment on sesame than any other Georgia crop.
"Not to say that it'll give you the highest return of dollars up to an acre, but for the amount invested per acre, you can just about double your money. There's no other crop that we can do that with right now," he said.
Once Georgia sesame is harvested, it is taken to receiving points and then shipped to Sesaco's processing facilities.
"Everything that is grown for Sesaco is dedicated toward the confectionary market and goes into the food source somehow, whether it's cooking oil, snack products that you see in a trail mix, baking products in breads and on top of hamburger buns," Bacon said. "The big-
gest growth that they've seen is in the hummus market. One of the main ingredients is tahini, which is ground-up sesame."
Bacon said the majority of what's grown in the US is consumed in the US, though Mitsubishi, the parent company of Sesaco, is developing an international market.
"Their main goal right now is to provide a stable supply of sesame and capture the domestic market first," he said. "There is a lot of domestic use that sesame can be used for and until a few years ago, the majority of it was imported from different countries."
Despite the promising market, Joyce cautions producers from basing their entire farm around this crop just yet.
He said the limiting factors to growing sesame in Georgia are finding the varieties right for its humidity, and continuing to research herbicides that can be used.
"Any time we introduce a new crop to a farm operation, we want to try a little bit to see how it does," Joyce said. "It is one that is still in its infancy. Hopefully if the market and the price that the farmers receive at the farm gate continues to be strong, then I think it is an encouraging sign for the farmers to look at it as far as an alternative market or add it to their operation as a rotation."

One afternoon in eighth grade, I dashed out to the car line, opened the passenger-side door of Mom's car ... and stopped short.
There was a fluffy, weensy-teensy copper-colored furball in my seat, looking up at me with deep brown eyes. At first, we tried to call the fluffball (a tiny toy French poodle) Prissi, but our black poodle Missi, who ruled the roost in the Duncan household, got confused at the similarity of the two names. Inspired by her coppery coat, we settled on the name Penny. Our vet claimed she was one of very few "blonde" poodles he'd ever seen.
We affectionately referred to her as our "dumb blonde," because where Missi was sharp as a tack, Penny was, well, Penny.
You know how when you're little your parents try to teach you that what happens in movies isn't real? We had trouble getting that point across to Penny. If there was an animal on screen, she would leap out of our laps, run up to the television and start barking until either the scene changed or we changed the channel. We couldn't watch soccer, basketball and occasionally football (or any Olympic sport that involved a ball) because Penny wanted to play with the ball, but she couldn't get to it, so she barked instead.
They say dogs are a man's best friend, but Penny was this girl's best friend for 12 years. She loved going on walks every night after supper. She didn't mind when middle-school Dallas dressed her up in American Girl doll clothes. When I needed to work on the laptop, Penny wanted to sit with her head on my wrist, which made typing papers pretty difficult, but you can't really say "no" to that face. Penny liked to curl up in my lap while I knit. She'd let my younger cousins pick her up and play with her, just as she'd let me when I was a kid. She slept with me every night (once she was bigger than a baseball), even after I went to college. And when I came home late at night and the rest of the family was asleep, somehow Penny knew that the next morning she could come scratch at my closed bedroom door and I'd roll out of bed, zombiewalk to the door, let her in and cuddle for a couple more hours.
Or 20 more minutes, if it was one of those mornings Daddy had the treadmill going and the TV turned up and sang Johnny Cash songs so loud that Penny started barking at that, too.
Just about the only thing Penny didn't like (aside from loud noises, deer, our former neighbor's Chihuahua and visits to the vet) was The Bath. Any time the laundry room faucet was turned on, we'd have to go on a scavenger hunt for Penny. She turned up in plenty of odd places under the billiard table, under a bed, the neighbor's yard and one time, behind a toilet.
That tiny fluffy thing that came home with Mom and my sick little brother (fun fact, whenever Barret gets so sick he has to stay home for multiple days, the chances of my mother getting a new animal go up exponentially) grew into a perpetual puppy. She never learned any trick other than "sit." Her ears perked up at the words "walk," "let's go bye-bye," "treat" and "so-and-so is home!"
When she was younger and wandered off into the woods to explore, we'd give Missi a look and tell her, "Go find Penny." As the two grew older, we switched gears and sent Penny to go find Missi.
Penny passed away unexpectedly on Oct. 26. It's not a thing you take well, realizing that the first creature (besides your parents) to love you unconditionally won't be scratching at the door the next time you come home.
But it does make you realize how important the little things in life are puppy kisses and a face always happy to see you because one day, we'll all look back and see that those little things truly were the big things.

gives people the proper licensing to ensure that they are using water from an approved source, and we're at least able to inspect their kitchen."
The first step to becoming a cottage food business is to check with local planning and zoning, to make sure it's OK to operate a home-based business, Nielsen said.
Potential licensees must also test their water for nitrates and coliforms, have public utilities and local boards of health approve their operation, and must take a food safety training course. Once that is complete, the Department inspects the kitchen.
"We're going out there to make sure they have residential equipment in place. We don't want someone gutting their kitchen and running a [commercial] business out of their home," Nielsen said.
The license must be renewed every year for a $100 fee. New applicants who start their businesses between July 1 and Dec. 31 only have to pay a $50 fee, Nielsen said. The kitchen, however, is only inspected once, in most cases. Since they are not producing hazardous products, they're at the lowest risk possible from an inspection standpoint, Badour said.
"We would only go back if they had a problem, if we had a complaint or if they said, `I'm going to change the layout of my kitchen' or `I don't have city water anymore,'" Badour said. "We don't really hear a lot of stories from people, but I'll randomly come across things in the media where people are laid off and are trying to find a way
to make extra money, and they start up a cottage food business. It's a good way to test the waters before investing more money."
Thus far, the only complaint received was from an individual who wanted to open his home to the public to sell from, which brought in additional municipal and county code regulations, Nielsen said.
He said there are 386 active cottage food establishments in Georgia.
"Everybody's looking for homemade or locally sourced, and people want to get not as far-removed from their food source," Nielsen said. "Everybody is very critical of recalls that come out from huge processing facilities and there's the perception that on a smaller scale, there's more control."
Even though she's now in a shared commercial kitchen, Holden still produces on a small-batch basis. She said the main differences in being a cottage food licensee and using a non-residential kitchen is adapting her recipes for the equipment. As a home cook, she used a five-quart mixer and residential oven, but now she bakes in two convection ovens and mixes cookie batter in 30- and 60-quart mixers.
Her advice for future cottage food producers?
"Being organized is really important. You do have to stay on top of making sure everything that's for your business is separate from your family cooking," she said. "And your family needs to be on board since you're going to be invading your home kitchen."

Instructions: For the crust: 1.5 cups Pecan Sandies cookie crumbs
(made by crushing cookies) cup finely chopped Georgia pecans 1/3 cup butter, melted
For the filling: Three eight-ounce packages cream
cheese, softened 1.5 cups sugar 2 cups sour cream 1 teaspoon vanilla extract 3 eggs, beaten 1 cup chopped Georgia pecans
Instructions: 1. Preheat oven to 325 degrees Fahrenheit. 2. In a medium bowl, combine cookie crumbs, pecans and butter. Reserve one-third cup
of the crumb mixture. 3. Press remaining mixture in the bottom and up one inch of the sizes of a nine-inch
springform pan. Place the pan on a double thickness of foil and wrap securely around the pan. 4. Beat cream cheese and sugar in a large bowl until smooth. Beat in sour cream and vanilla. Add eggs and beat on a low speed to combine. Fold in pecans. 5. Gently pour the filling into the crust and sprinkle reserved crumb mixture on top. 6. Place springform pan on a large baking sheet. Fill baking sheet with one inch of water and bake for 70 to 80 minutes, or until the center is set. 7. Remove the springform pan from the water bath and cool on a wire rack for 10 minutes. Carefully run a knife around the edge to loosen and cool one hour longer. 8. Refrigerate overnight. Remove sides of the pan before serving.
