Cooking up a delicious holiday: Q&A with Georgia Grown executive chefs

November and December bring with them family hugs, a giving spirit and open ovens. The Market Bulletin staff polled the Georgia Grown executive chefs on their tips and tricks for serving unforgettable meals sure to please family, friends and picky eaters alike. The contributing chefs are Linton Hopkins, owner of Restaurant Eugene and Resurgens Hospitality in Atlanta; Dave Snyder of Halyards, Tramici Restaurant and Halyards Catering in St. Simons; Jennifer Hill Booker of Your Resident Gourmet, LLC, in Atlanta; and Ahmad Nourzad of Affairs to Remember Catering in Atlanta.
Q: What kitchen tool could you not live without?
BOOKER: Besides my chef knife, I have to have a rubber spatula. You would be amazed at how much food you can save by giving that bowl, pot or pan an extra scrape with your spatula.

Q: What's the most useful cooking appliance in your kitchen?
NOURZAD: I use the blender for so many different things such as purees, sauces, soups, spice mixes, etc. I feel that people overlook and underutilize the importance of a good blender in the kitchen.
Q: How can I prepare a great holiday meal for a large crowd?
HOPKINS: Prepare by spreading preparation out over time to make the day-of a calm one.
Q: After Thanksgiving, there is just so much turkey! How can I make leftovers more interesting?
SNYDER: Stews, pot pies and gumbos are my favorite way to use up leftovers. And do them with twists, like Southwestern turkey pot pie.
Q: What's your favorite spice on the rack?
BOOKER: Cumin is a favorite, but so are Caribbean-style curry blends, and I always have red pepper flakes on hand. I prefer big, bold tastes.
NOURZAD: Cayenne pepper, any kind of chili and saffron.

Q: In your family, what's the most popular side item for a holiday meal ... and how can I make it?
HOPKINS: My mom's baked wild rice. Recipe is family secret.
BOOKER: Their most favorite is macaroni and cheese. I only make it twice a year and I make a "real" mac and cheese. I start with a bchamel sauce, add lots of extra sharp cheddar and Colby jack cheeses, a little dry mustard, salt and paprika, and layer it over cooked pasta with more cheese. I usually use penne style pasta so that the sauce can ooze into the pasta.
SNYDER: Sausage stuffing or dressing was our big favorite, [made with] crumbled Italian sausage, leeks, garlic, red peppers, chicken stock, toasted baguettes, thyme and oregano lots of herbs.
NOURZAD: A good vegetable and rice casserole is one of our favorite dishes.
Q: What's the craziest dish you've ever brought to a holiday gathering?
BOOKER: I'm pretty traditional when it comes to holiday food. It would have to be the year I brought homemade eggnog to a holiday gathering. It may seem pretty tame, but considering the fact that I separated dozens of eggs and whipped egg whites by hand to make it while most people just pick up of a carton of eggnog at the market, my friends considered me crazy!

Q: How can I incorporate seasonal, Georgia produce in my holiday meals?
HOPKINS: This is the time of year for greens and Georgia grows the best variety of collards, kale, mustard and turnip greens. Try cooking a blend of them in the style of creamed spinach. I think you will like it even better. See Chef Hopkins' creamed greens recipe on p. 7.
NOURZAD: Georgia produce is so abundant and beautiful throughout the holiday season! I always try to look outside the box, so if you usually make mashed potatoes for your meal, and turniips and rutabagas are available and fresh, use them in your mash. Instead of green beans, you can always saut fresh kale or cabbage.
Q: Share some tips on how to set a great holiday table.
HOPKINS: Simplicity is the key. Leave room for the food to be the star and present dishes in some of the pieces they were cooked in: clay pots for sweet potatoes, enameled cast iron for casseroles and a large family heirloom turkey carving tray. My wife and I also love candles and good linen napkins.
SNYDER: I like to decorate with produce more than anything else. Cut squashes, herbs, colorful peppers and fragrant herbs. Then you get to make a great stew the next day to not waste them.
Q: My kids don't like ham or turkey. What are some non-traditional holiday meat ideas I can cook that are kid-friendly?
SNYDER: Chicken is the easy meat that kids will eat. I like to hide some veggies by using a squash puree as a sauce.

Stanley Farms, a staple in the Vidalia sweet onion business, became vertically integrated in 2005 by establishing its own processing company, Vidalia Valley. In 2005, a new state-of-the-art facility was built in the Vidalia countryside, most often called "The Valley." This facility became the Vidalia Valley headquarters where the company now produces its own relishes, dressings, salsas and sauces as well as other processed foods and ingredients.
The Stanleys proudly use their homegrown Vidalia onions as the key ingredients that make up their extensive product list. In fact, Vidalia Valley is the only manufacturer in the country that grows its own Vidalia onions and processes them into gourmet and country-style products on its family farm.

Vidalia Valley is a proud Georgia Grown member and works to promote not only its homegrown Vidalia onions, but all vegetables produced in Georgia.
"Georgia Grown has a huge presence in connection to Vidalia Valley products. We include the Georgia Grown label on our product
labels, promote Georgia Grown through our social media campaigns and also attend Georgia Grown events," said Lauren Dees of Vidalia Valley.
Vidalia Valley loves connecting with other Georgia Grown members throughout the state and watching trends with their category. The company has the capability to provide co-packing services for other Georgia Grown members and encourages any Georgia Grown member who may be interested to contact them. "Using locally grown ingredients keeps the integrity on which our business was founded," Dees said.

It's the most wonderful time of the year! The holiday season kicks off in T-minus 24 hours from publication date of this issue!
I adore the winter holiday season. Everything smells good. There are days set aside when it is socially acceptable to eat several slices of pie. Christmas lights adorn houses and yards. And, in my experience, everyone just seems a little bit nicer when Thanksgiving rolls around. There's just something in the air that makes me cheerier and puts an extra spring in my step.
Thanksgiving means a lot to me because I feel that in addition to having a day to be with your family, it's a day when all of America is thankful for American agriculture. Otherwise, that crispy-skinned turkey drumstick, those silky mashed potatoes and that cinnamon-y pumpkin pie would be nowhere near our tables. My favorite things to eat on Thanksgiving have changed as I grew older I distinctly remember everyone at the "kids' table" eating hot dogs and not being allowed to leave until we ate at least one bite of butter beans but all-in-all, I'd say my family does it right when preparing a menu worthy of celebrating our farmers.
The turkey has come in a variety of cooking preparations. We've done everything from my mom cooking it in a special turkey pan from Williams-Sonoma all the way to the menfolk setting up a turkey fryer in Nanny's driveway. Nanny's in charge of most of the big-ticket Turkey Day fare. She's got her macaroni and cheese recipe (my personal favorite) down pat. Her giblet gravy rivals Paula Deen's and the stuffing she makes is the best I have ever eaten.
Side dishes vary according to who's got what food trends on their minds. There's always a vegetable course; we've had squash casserole, green bean casserole, roasted asparagus and more. The cranberry sauce does come out of a can, but some years an ambitious chef decides to make a homemade version as well. As for dessert, we might as well have a dessert table as big as the main one, because someone's gone and bought pumpkin pie, there might be a pecan pie too, and my cousins and I sometimes try our hand at baking. Oh, right, and then my mom and aunts have a sweet offering, too.
For the last couple of years, my mom's side of the family decided Thanksgiving was a great time for a family vacation. We went to Hilton Head, SC., one year (during which I was the last one to arrive and as such, slept in a closet for a week). We made the decision (grave mistake?) to go Black Friday shopping at midnight, not realizing some of the stores we went to never closed for Thanksgiving and thus were mobbed. Last year, we stayed in a cabin at the tip-top of Scaly Mountain in North Carolina. It was a one-lane road up and back down. On that trip, we visited Highlands, NC., and then drove into Franklin. If you've never taken that ride before, let me be the first to advise you to bring Dramamine, prayers and a functioning seatbelt.
This year we're headed to Charleston, SC., where my little brother lives. He attends pharmacy school at the Medical University of South Carolina, and I am already curious as to what adventures await us there. I'm also curious as to what I'm going to bring to put on the table. Sometimes Mom decides that each family unit is going to be in charge of a certain part of the meal, sometimes it's a freefor-all and we get there all hauling huge Tupperware containers.
I figure since I'm a fully functioning adult, I should at least attempt a Turkey Day dish. I'm thinking spanalatkes, which were a hit last Christmas, should do the trick. They're a cross between spanakopita, a Greek spinach pastry, and latkes, the traditional potato pancakes eaten during Hanukkah (which is also this week). Or maybe I'll be the one to attempt homemade cranberry sauce this year!
Anyway, I've got a few more hours to figure it out. So I hope your family's table is as stuffed as mine is sure to be, and that you don't forget to thank a farmer! Happy Thanksgiving from the Market Bulletin staff!

`Young farmers' representing
Georgia in leadership program

Each year, one Georgia soybean grower or couple is selected to represent the state in a national leadership training program put on by the American Soybean Association and DuPont Pioneer. ASA announced on Nov. 11 that the 2013 Georgia representatives are Andrew and Savannah Moore of Resaca, Ga.
The first part of the program was held earlier this month in Johnsonville, Iowa, and the program will culminate in February at the Commodity Classic trade show, said Walter Godwin, president of the Georgia-Florida Soybean Association.
"The program selects only one individual or one couple from each of its 26 member associations across North America," Andrew Moore said. "We are honored to be selected, and we are looking forward to participating in the leadership training and networking programs that will be provided by DuPont Pioneer."
The Moores are part owners of their family operation, Resaca Sun Feeds, LLC. Resaca Sun specializes in Expeller press oilseed processing. It's well-known for creating locally grown and produced, non-genetically modified kosher feed in commercial and custom blends.
The Young Leader Program is open to any soybean grower age 21 or older. Each state association reviews applications and chooses the representative to send on to the national event, Godwin said.
"They learn leadership skills that hopefully they can use to progress in their state [soybean association] boards and then one day to the national board," Godwin said. "They teach them many things, from how to get in front of people speaking, to issues that go on in the industry."
Georgia has had a representative almost every year since the program started, but this year has special significance: the Moores are "young farmers" taking on their family operation, Godwin said.
"I know down here around me, there's not many young farmers anymore," he said. "To have these young guys come up and express their views of agriculture ... about farming, about what goes on and how we try to nurture livestock and nurture the land, if we can get those young farmers involved and expressing their views, I think it would open up a bunch of eyes across the country."

Ingredients: 2.5 cups broccoli florets, steamed 2 cups chopped cooked turkey 10.75 ounces canned cream of

Editor's Note: This recipe comes to us from Georgia Grown Executive Chef Linton Hopkins, who owns Restaurant Eugene in Atlanta, Ga. The recipe makes a flavorful and healthy side dish for up to six people. Spinach can be added to the greens mixture as well. Chef Hopkins notes that the weight of greens can be deceiving, so he advises to use baby greens for four quarts of clean, torn greens.

Ingredients: For the greens: 2 pounds baby collard, mustard and kale greens;
mixed, blanched and chopped 1 cup minced green onion 2 teaspoons minced green garlic cup heavy cream 4 tablespoons whole unsalted butter Salt, vinegar and pepper, to taste Bacon lardons 2 cups bchamel sauce (instructions below)

For the sauce: 2 cups whole milk 2 tablespoons whole butter 2 tablespoons whole flour 1 bay leaf 6 peppercorns 1 minced shallot Vinegar, to taste

Instructions: 1. Make the bchamel sauce. Melt two tablespoons
whole butter over medium-low heat. Stir in flour and cook for one minute. 2. Slowly whisk in milk. Add the bay leaf, peppercorns and shallot. Bring to a boil while stirring. 3. Reduce heat to low and cook for five minutes, stirring constantly to prevent scorching. Strain sauce and reserve liquid. 4. Remove the stems from greens. Wash and tear greens into large strips.

5. Heat butter in a large skillet and cook until golden brown. Add onion and garlic, and cook until the onion softens, about two minutes. Be careful to not burn butter.
6. Add greens and toss until wilted. Stir in the bchamel sauce.
7. Add heavy cream. Season with salt and pepper, and cook over medium-high heat until liquid reduces and coats greens. Stir often.
8. Add bacon lardons. Adjust acidity with vinegar and serve.

Safely serving up Thanksgiving Day meals

This time of year includes numerous family gatherings that end up around the dining table. As home cooks channel their inner food stars and dust off the carving knives, the last thing anyone wants family and friends to remember about that perfect turkey and the tasty leftovers is a nasty foodborne illness it left behind. Even celebrity culinary masterminds are susceptible to foodborne illnesses just ask Martha Stewart, who reportedly came down with salmonellosis after handling raw turkey during TV appearances. It's important to include food safety as part of the recipe for a successful holiday meal.
The turkey is the centerpiece of most Thanksgiving meals, so it's important to prepare it in a safe manner. Fresh turkeys should be picked up one to two days before cooking kept refrigerated until time to

go in the oven. One of the biggest safety hurdles for frozen birds is thawing them. The best way is to thaw in the fridge. It will take about 24 hours thawing time per four to five pounds for example, a 15-pound turkey will take four days' thaw time. Fridges should be kept at about 40 degrees Fahrenheit, and thawing turkeys need to be in a pan or the bottom of the fridge so none of the meat's juices leak or drip onto other foods.
Because the holidays mean full refrigerators, if there is not enough room to thaw there, the next best option is to use the clean kitchen sink. Submerge the bird under cold running water. It will take about 30 minutes per pound to defrost. Feel inside the bird to make sure it's not still frozen in any places, and once thawing is complete, the turkey should immediately go into the oven for cooking. Raw meat should never be thawed on kitchen counters at room temperature.
Special attention should be given to handling the thawed turkey so as not to

cross-contaminate other foods being prepared at the same time. All it takes is one slip-up and voil, a side dish of Salmonella for everyone. It is recommended to use one cutting board for raw meat and a separate cutting board for fresh vegetables, fruits or other ingredients you will be preparing. Wash each cutting board and utensils with warm, soapy water in between food products.
Preheat the oven to at least 325 degrees Fahrenheit for the turkey. If sides will be cooked simultaneously, the temperature can be increased to 350 degrees.
Before putting the turkey on, remove the neck and giblets from inside the turkey cavity. For best food safety practices, do not cook the dressing or stuffing dish inside the turkey. Rather, cook the stuffing as a separate side dish to an inner temperature of 165 degrees. The finished stuffing can be stuffed inside the turkey after both are cooked.
The turkey is done when it reaches an internal temperature of 165 degrees. This temperature should be checked with a meat thermometer in the following locations: between the bones in the innermost part of the thigh, the wing joint and the thickest part of the breast.
Not all holiday dishes require cooking, but even fresh sides require food safety practices. A knife blade can transfer pathogens from the exterior to the interior flesh of fruits and vegetables, so rinse these under cold running water before cutting. Lightly scrub thick-skinned produce using hands or a veggie brush. To prevent cross-contamination, switch out or wash utensils and cutting boards between produce.
After the chopping and cooking is done and the family is bundled and ready to go, make sure the food is packed safely as well. Hot foods should be kept at 135 degrees or higher and cold foods must remain at 41 degrees or below. If the end destination is far away, have a cooler or insulated container on hand to keep food the proper temperatures. Otherwise the food temperature hits the "danger zone," where harmful bacteria growth can occur. Reheat all hot foods to 165 degrees before serving.
Thanksgiving leftovers can be one of the best parts of the holiday. To make sure they're safe to eat, refrigerate them within two hours of serving. Leftovers should be reduced to smaller portions and refrigerated in multiple shallow containers, which allow for a quicker cooling process. Each container should have its own item. If leftovers are not frozen, they should be eaten within three days.
And one last tip: Nov. 15 was National Clean Out Your Refrigerator Day. A clean, shiny fridge is great to show off to holiday guests, plus there will be room to thaw the turkey and hold all those leftovers ... until it's time to clean it out again in preparation for Christmas cooking.

In March 2013, I received a request from Georgia Milk Producers, Inc. to conduct a review of Georgia's Whole Herd Tuberculosis Testing Program. This request was made because of several reasons: it has become increasingly difficult to locate veterinarians who will conduct whole-herd tuberculosis testing; the amount of labor involved; the veterinary fees for the testing; and the considerable financial loss for the dairy owner due to the disruption of the cattle's daily routine.
In an effort to work with our dairy industry, I consulted with other state veterinarians concerning their state regulations for dairy tuberculosis testing, considered the Bovine Tuberculosis Free status of all 50 states; and determined that most states rely upon import testing and slaughter surveillance. The greatest risk of introduction of bovine tuberculosis comes from imports from Mexico, commingling of cattle with Mexican-origin animals and specific areas in the country where tuberculosis is endemic in the wildlife.
After careful review of slaughter surveillance records, tuberculosis import testing requirements and the fact that Georgia has been Bovine Tuberculosis Free since 1986, I wish to announce the elimination of the required six-year Whole Herd Tuberculosis Test for Georgia dairy producers. The effective date of the change to Georgia Department of Agriculture Rule 40-13-4-.04 Bovine Tuberculosis Eradication Requirements is Oct. 7, 2013.
I wish to emphasize that by eliminating the six-year tuberculosis test, our state and the dairy industry will depend wholly upon import tuberculosis testing and slaughter surveillance as a means of detecting tuberculosis in dairy animals. Individual official identification will greatly aid in disease control and prevention. I encourage all dairy producers to utilize official identification in all their dairy animals. Official metal ear tags can be obtained from the Department. Official electronic tags are encouraged and available at your vendor of choice.
Although the required six-year tuberculosis herd test has been eliminated, the Department shall conduct tuberculosis tests on any dairy herd suspected of being infected with or exposed to Mycobacterium bovis at such times as deemed necessary by state or federal animal health officials. The Department's animal health officials reserve the right to supervise and monitor any tuberculosis testing and the associated control and eradication activities.
