Carroll's Sausage and Meats: An Old-Fashioned Butcher Shop

It all began in Sycamore, Ga. in 1988 for Carroll's Sausage and Meats, which quickly developed a reputation for being an old-fashioned butcher shop and store. Now located in Ashburn off I-75, Exit 82, the reputation still remains.
Carroll's blossomed from one location to three when Hugh Hardy purchased the company in 2001. Today, Carroll's can be found in Sylvester, Albany and Ashburn.

Carroll's Sausage and Meats joined the Georgia Grown Program in August of 2012. Hardy and his family are Georgia natives, and he grew up farming. He's passionate about Georgia agriculture and sees true value in the Georgia Grown Program and local agriculture.
Hardy said it's important to him to be involved in Georgia agriculture and for others to become involved as well.
"We try to carry as much locally-

grown produce as possible," he said. "Not many people realize how much of what they eat comes from Georgia, no matter where they are."

Horses Need Booster Shots in Hot Months

With the hot months of summer approaching, owners of equine in Georgia are reminded to obtain booster vaccinations for their horses to protect against such viruses as Eastern Equine Encephalitis (EEE), Western Equine Encephalitis (WEE) and West Nile Virus (WNV), according to State Veterinarian Dr. Robert Cobb. Horse owners should consult with their veterinarians to make sure these vaccinations are up to date.
The EEE virus, commonly called "sleeping sickness," is found today in the eastern part of the U.S., and is often associated with coastal plains. The virus is transmitted to horses and other mammals, birds, reptiles, and amphibians via

mosquitoes who have fed on the blood of birds. The virus found in nature increases during the summer months as more birds and mosquitoes become infected. In rare cases, humans become ill only through the bite of an infected mosquito.
"EEE is likely to be under reported in Georgia and other eastern states, as some animals die or are euthanized without testing," Cobb said. "It's always very important that horses receive these vaccinations." Annual vaccination is not adequate to prevent EEE in susceptible horses in endemic areas, such as south Georgia, so booster shots should be received every six months in these areas.

Ga. Department of Agriculture Welcomes New Summer Interns

The Georgia Department of Agriculture recently welcomed 11 interns to its summer program at a May 13 orientation. The new members of the GDA family met together to receive an overview of the Department's statewide responsibilities, engage with Department staff and participate in various team-building activities.
Applications for this summer's program exceeded any to date with over 50 applications. Applicants ranged in majors and degrees with several seeking masters from 20 colleges and universities, seven states, and three countries. Those selected represent some of the best from those interviewed and will serve until August 9.
Since Agriculture Commissioner Gary W. Black took office in 2011, the Georgia Department of Agriculture has hosted dozens of interns in various divisions and sections within the Department's oversight.

Advertising Guidelines Bulletin Publishes Every Other Week

All advertisements published in the Market Bulletin must relate to the farming/agricultural industry or be a part thereof; any and all item(s) submitted for sale through the BULLETIN must meet at least one of the following criteria: 1) must be produced by the advertiser on his/her own farming operation, 2) must be made by the advertiser from materials on his/her own farming operation, 3) must be owned and used by the advertiser on his/her own farming operation for a period of at least 90 days prior to offering for sale through the BULLETIN. Businesses, corporations, dealerships or other commercial enterprises are not allowed to place classified advertisements in the MARKET BULLETIN. Commercial is defined as intended for mass market; handling large quantities of product for distribution (i.e., more than normal household or farm quantities); supported by advertisement (I.e., advertisement in publications other than the BULLETIN; listed as "business" in telephone directories or "yellow pages", etc.). Other indicators include, but are not limited to, holding business licenses and holding regulatory licenses/permits/registrations. Georgia residents only may advertise in the Market Bulletin with the following exception: out-of-state residents may advertise only in the Out-of-State Wanted category. The editor has the authority to designate the length of ads and the number of ads that may be placed by a family unit in any issue of the BULLETIN. Currently, only one (1) notice may be placed by any family unit in any issue of the BULLETIN. Family unit refers to all individuals sharing the same residence, address or telephone number. Ads must be received no later than designated deadline in order to appear in the following issue. Ads submitted via our website will be scheduled automatically for the next available issue. Ads will be published only once each time submitted unless the advertiser specifies on the notice that the ad is to be published more than once. Ads may be published for two (2) consecutive issues. A new notice must be submitted if the advertiser wants the advertisement to continue more than two issues. Note: Some ad categories are published infrequently and are published only once per submission. Please check ad category headings for publication frequency prior to submitting notice. There is a 20-word limit for advertisements except as noted under category headings (special categories that are published only monthly, quarterly or bi-annually, have a 30word limit). Advertiser's name, town, phone number or name and complete address must be included within the word limit. The Market Bulletin reserves the right to edit notices. Most advertisers include a telephone number in their ads, but mailing address may be published in lieu of phone number. However, it is important that advertisers provide a phone number when submitting ads in the event Bulletin ad personnel need to contact them concerning their ads. They also use numbers with mathematics as a system of organization to effectively use their time and manage their businesses.
It would take many articles to cover dairy farm mathematics. So let's focus on a few key numbers tied to Georgia's dairy industry and dairy farming:
82,000 There are approximately 82,000 cows in Georgia. Dairymen treat animals with respect and compassion because their businesses cannot succeed without healthy and content cows. An average dairy cow's value is around $1,300. It's important to take care of their investment so they use cooling equipment and bedding materials that are cost efficient to provide cow comfort.
43,560 There are 43,560 square feet in an acre. All farmers know how long and wide their fields are so they can properly apply manure to those fields to grow nutrient-rich crops. Calculating nutrient application rates are vital to maintaining stable field growth to sustain their livestock throughout the year.
30,000 Around 30,000 seeds of corn are planted to the acre. Farmers analyze past data on weather and climate to determine the appropriate quantities of feed to plant. Many Georgia dairy farms grow and produce their own feed. They must calculate the size of the field, crop yields and storage needs for each planting to ensure adequate feed needs for their herd.
20,000 Farmers generally spread around 20,000 pounds or 20 tons of manure per acre for fertilizer. Georgia dairymen recycle cow manure as fertilizer for crops. This naturally improves soil fertility and crop yields, and replaces the need to buy chemical fertilizers. To determine the nutrient value of the manure, they collect a sample and have it analyzed in a lab. With this data, the farmer can see how much of each nutrient they are supplying the crop with during each manure application.

Georgia Blueberry Breakfast Cake

1 1/3 cups whole wheat flour (can substitute all purpose) 3/4 cup quick cooking oats 1/3 cup sugar 2 teaspoons baking powder 1/4 teaspoon salt 3/4 cup milk 1/4 cup vegetable oil 1 egg, beaten 1 cup chopped Georgia pecans 1 cup fresh Georgia blueberries 2 tablespoons blueberry syrup

Preheat oven to 400 degrees, grease an 8-inch round cake pan. Combine flour, oats, sugar, baking powder and salt. In a separate bowl, combine milk, oil and egg; stir into flour mixture just until moistened. The batter will be lumpy. Fold in blueberries and pecans, spoon batter into prepared pan. Bake at 400 degrees for 20 to 25 minutes, or until cake starts to pull away from pan.

Drizzle blueberry syrup over cake. Let cool for 5 minutes and serve warm.

Underground Dirt Cellar
A root cellar makes an excellent tornado shelter and requires little modification of the existing structure.
An adequate but inexpensive tornado cellar also can be built into an embankment or hill, or can be dug out of level ground. The cellar should be supported by a frame of treated split logs or two-inch planks. The cellar should be covered with three feet of well-packed dirt, sloped to divert surface water.
Concrete Cellar
A reinforced concrete shelter gives very good protection. Consider the following when constructing a concrete storm shelter:
The entrance should face east or northeast. Locate the shelter on the southwest side of the house.
Minimum size for a tornado shelter is six square feet per person. The ceiling should be at least seven feet high.
If possible, install an emergency exit to be used if the main exit becomes

jammed. A roof escape hatch two feet square will provide adequate ventilation and help equalize air pressure.
The door should be hinged to open inward and should have a secure latch. A poorly latched door could swing open when the low-pressure storm center passes overhead. The door could be removed by its hinges if it should become jammed or blocked.
Since tornadoes usually last only a short time, a tornado shelter need not be stocked with food and water. However, you may wish to keep a first-aid kit there, along with a flashlight or lantern, and tools such as a shovel, pick and crowbar.

Before canning, put water in the canner and bring it up to pressure to see if it is working properly. Do this well in advance to allow time for any needed repairs.
Pressure canners come in many sizes, with some tall enough for two layers of pint jars. The size chosen depends on the amount of low-acid foods to be canned and the size of the jars you plan to use.
A pressure canner also can double as a water bath canner. When using the canner this way, do not close the lid tightly. Also, be sure to leave the vent open. The taller models are appropriate for processing quart jars, since they provide enough head space for the needed one inch of water over the top of the jars, without water boiling over the top of the pot.
A pressure canner is a big investment, but an essential one for home-canned vegetables, meat, fish and poultry. If properly maintained, the canner can be a lifetime investment.

While food banks have long been a reliable source of shelf-stable staples and canned goods for families in need, it has always been a challenge to provide families with fresh fruits and vegetables, said Danah Craft, executive director of the Georgia Food Bank Association.
"The Farm to Food Bank program will fill that need for food banks and their clients," she said. "For farmers, it will help them quantify the amount of food they have donated and its value. "
Georgia's seven large regional food banks are networked through the Georgia Food Bank Association. Each regional food bank distributes groceries to dozens of small independent food pantries or agencies that serve their local communities. Both large and small vegetable producers who believe they'll have even a little excess produce to donate during the spring of 2013 are participating in the pilot. Farmers will provide feedback about how the technology and the Farm to Food Bank program is working.
Officially formed in 1985, the Georgia Food Bank Association (GFBA) currently is comprised of seven regional food banks, which collectively distribute more than 90 million pounds of food annually to more than 2,300 partner nonprofits with food assistance programs in all 159 counties throughout the state.
MarketMaker is a national partnership of land grant institutions and State Departments of Agriculture dedicated to the development of a comprehensive interactive database of food industry marketing and business data. It currently has one of the most extensive collections of searchable food industry-related data in the country. All the information can be mapped and queried by the user.

For Wildlife Camps
Registration is now open for the upcoming 2013 Future Farmers of America Wildlife Camps.
These camps, hosted by the Georgia FFA-FCCLA Center, are designed for youngsters who would enjoy learning about being a safe hunter, experience shooting sports, and making a lot of new friends.
Dates for the camps are as follows: Basic Wildlife Camps: June 23-28 and July 7-12; and Advanced Wildlife Camps: July 14-19.
All of the information on the camps, including registration and scholarship forms, is available online at www.wildlifecamp.com.
Also, participants in previous wildlife camps that are least 15 years old who would like to be a junior counselor volunteer at one of the camps are asked to contact the hosts as soon as possible. Volunteer application forms are available on the website.

While spring is generally regarded as the peak season for tornadoes, the fact is that lightning, hail, windstorms and tornadoes can occur -- and recur -- throughout the summer. It certainly doesn't hurt to prepare for storms now, if you weren't fully prepared the first time around.
Tips for Tornado Season
Tornadoes may strike anytime between March and September. Most tornadoes occur between midday and 9 p.m. Tornado weather is usually hot, humid, and oppressive, with southerly

winds. An hour or two before a tornado, thunderclouds may have a greenishblack color and may seem to bulge down instead of up. Rapidly moving lower clouds may be filled with frequent lightning.
The funnel of a tornado looks like a spinning, twisting rope at its bottom, and fans out into a rotating, funnel-shaped cloud extending from the base of a thundercloud. It is usually gray or black.
A nearby tornado usually sounds like the roar of a jet plane or a diesel freight train.
Tornadoes usually move from southwest to southeast. They may form in

In Georgia Season Kicks Off for Vidalia Onions

The wait is over for sweet onion lovers in Georgia, as the season for the worldfamous and home-grown Vidalia onions has now begun. The Vidalias can be purchased at farmers' markets, grocery stores, and roadside stands in the state.
Vidalias are sweet, yellow onions grown exclusively in a 20-county region in Georgia, but loved by consumers all across North America and elsewhere. Their mild, sweet taste makes Vidalia onions more versatile than onions with a stronger taste. Vidalia onions are available from late April through midJuly. The crop is planted from September through February each year, with 70,000 plants produced on each acre.
Similar onion hybrids are grown in other parts of the country, but the combination of sandy soil and mild climate provide the Vidalia onion with its distinct flavor. Vidalia onions are a good source of Vitamin C and dietary fiber, while low in calories and fat, and cholesterol free.

Vidalia onions are the state vegetable of Georgia.
Vidalia onions were first grown in Toombs County, Ga. by Mose Coleman. Coleman was surprised to find that the onions he planted were sweet, not hot.
When Coleman's sweet onions garnered a high price, other area farmers began planting onions.
Tourists who bought sweet onions at the Vidalia Farmers' Market coined the name "Vidalia onion."
By the mid-1970s, there were more than 600 total acres of Vidalia onions.
In 1986, Georgia's State Legislature gave the Vidalia onion legal status and defined the 20-county production area.

thunderstorm out of the southwest often follows the tornado. Heavy rain and hail may add to the damage of the tornado itself.
Preparing for Severe Winds
To help protect your home during a severe wind or rain storm, close doors and windows on the side facing the maximum wind force. Lock windows so wind vibrations won't open them.
Brace large windows on the inside, or cover them outside with boards or plywood. Nail all exterior covering to the reinforced part of the window frame. Improperly secured exterior covering can fly off and cause serious damage.
Pull curtains and drapes over unprotected glass areas to prevent injury from flying glass if the window is broken.
Make sure drains and rainspouts are open; clogged drains can cause basement flooding. If necessary, place extensions on downspouts to carry water away from foundations.
If your home is not equipped with stormproof door sills, place folded towels along the joint between the bottom of doors and the sill to prevent water from being blown under doors.
Anchor or tie down lawn furniture, bicycles and light-weight outdoor equipment; or if possible, bring these items inside temporarily.
Home Shelters Provide Safety
Many Market Bulletin readers have requested information regarding home shelters, and indeed, the safest place during a tornado is in an underground shelter. The next best alternative is the southwest corner of a basement.
Since Georgia is an area subject to frequent tornadoes, you may want to prepare some sort of separate shelter. Generally, two types of shelter are adequate: an underground dirt cellar or a concrete cellar. If building one of these, locate the shelter near the house but not so close that falling debris could block the entrance. Do not connect the shelter

A Buyer's Guide to Vidalia Onions
Vidalia onions should have a light, golden-brown bulb and a white interior. They should be rounded on the bottom and slightly flat on the top.
Vidalia onions bruise fairly easily, so handle them carefully.
To enjoy Vidalia onions longer than the 10-12 weeks they're available each year, buy in large quantities and store them properly.
Keep Vidalia onions cool, dry and separate to ensure they stay fresh.
Some folks like to store Vidalia onions in the legs of old, clean, sheer pantyhose by tying a knot between each onion, and cutting above the knot when you need an onion. Hang Vidalia onions in a cool, dry, well-ventilated area.
Vidalia onions also can be stored on racks or screens as long as they don't touch and are kept in a cool place.
To freeze chopped Vidalia onions, chop the onions and place on a cookie sheet in the freezer. When frozen, remove and place in freezer containers or bags, and seal.

On Buying, Using Home Canner

Proper canning procedures are essential for low-acid food. All meats, fish, poultry and vegetables except tomatoes must be processed in a home canner. By using a pressure canner at the correct pounds of pressure, you can obtain the temperature, usually 240 degrees F., needed to kill the bacteria that cause botulism. Because these bacteria are found in soil, they may be on your fresh vegetables. Unless they are destroyed by heat, they can grow in the food and produce a deadly poison.
Here, from the Georgia Extension Service, are some guidelines on selecting and using pressure canners to achieve the high canning temperatures needed for food safety.
There are two basic types of canners on the market. One has a dial gauge with a needle that registers the pressure. The other has a weighted gauge which jiggles when the desired pressure is reached. Each type of canner works well; it is a matter of

personal preference and availability as to which one to use.
Before using a pressure canner, it is important to read the directions. If the canner has a dial gauge, it should be tested once a year for accuracy. For information on testing a dial gauge, contact your local county Extension agent.
Auctions or garage sales may not be the best places to buy a pressure canner. Before purchasing one, make sure the pressure canner comes with an instruction book. Also, examine the rubber gasket. It should be flexible, not brittle or cracked. Make sure replacement parts are available for the canner you choose.
A canner that does not operate properly will not be safe for home canning. The canner must reach the right pressure and hold the pressure constant during the processing time to assure a safe canned product.

These horses are subject to periodic inspection by the Georgia Department of Agriculture for a period of 12 months. Purchaser agrees that he/she will not transfer ownership of equine purchased at this sale to anyone who has had equines impounded by the Department, or a case under investigation for a violation of the Humane Care for Equines Act, O.C.G.A. Sec.4-13-1, et seq. If the Georgia Department of Agriculture determines that this agreement is violated, the equine may be subject to immediate impoundment.
