GSTC CREATURE COMFORT AT THE GSTC As staff at the Georgia Sea Turtle Center can attest, it's been a busy summer at the turtle facility. As of early July, staff had successfully rehabilitated and released 21 sea turtles in the first seven months of 2013. Of those, Hugue, a sub-adult loggerhead sea turtle, was a major spotlight of success. Since coming to the center in December 2011, Hugue had become a popular creature for the facility, receiving 250 adoptive parents. Admitted to the hospital after being found stranded at Huguenot Park in Jacksonville, Hugue was released on the 4th of July. A true Independence Day! Now at the center, there are 20 sea turtles in the rehabilitation pavilion and an additional 30 non-sea turtle patients under the care of center staff. Certainly, staff have seen some very interesting cases recently. Among them is the case of a nesting female sea turtle found disoriented and stranded in a tidal creek at low tide. Luckily, an island guest heard the turtle struggling in the mud and called the center. Staff used a sling to pull her out of the mud pit, and treated her with electrolytes and fluids intravenously. Once she had recovered, staff released her to the ocean, noting that she was very happy to see the water and did not waste any time getting back to the ocean. Center staff also report that nesting diamondback terrapins have been frequenting the Jekyll Island causeway in record numbers, with more than 250 turtles saved from being struck by cars. Sixteen of these terrapins are currently being rehabilitated for injuries sustained after being hit, but "we use a variety of innovative techniques to repair broken shells including bra hooks, zip ties, vacuum assisted wound care, and a variety of honey products," said Steven Nelson, a Veterinary Hospital Technician at the center. "It's been a busy, and very interesting, year so far, for sure. Certainly there is never a dull moment at the Sea Turtle Center!" As executive chef and owner of both Halyard's and Tramici restaurants on St. Simons Island, Snyder is a genius when it comes to crafting fresh, innovative and seasonal fare, then matching a plate to a perfect drink partner. As much is readily apparent at Snyder's monthly wine and food pairing courses. Started in May of this year, these afternoon sessions bring together locals and guests to introduce them to not only gourmet cuisines, but to also showcase the magic of wine pairings. For a recent course, Snyder centered the three-hour course on meat, bringing together several distinctive red wines with a variety of hearty food options. On the menu of this Cooking Class with the Chef was everything from seafood to wild game. Starting the meal was a delicate salmon, which Snyder and his wine aficionado Brian Henderson paired the crisp Serpentieres Pinot Noir. Next up was a drastic change, switching to a braised pork shank served beside an earthy and balanced Chianti. The menu rolled on, with unique red wine options served beside equally unique meal options. But, Snyder notes, "the point, though, is not to perfectly pair each dish and each wine. The point is, simply, to drink what you like." The theme of the pairing class changes each month, depending on the season and Hendrick's preferred wine supply. This month, the class is centered on Maine Lobster. In July, it was a lighter Salads, Salads, Salads course. Throughout the sessions, guests are not only treated to gastronomic pleasures, but also plenty of tips, tricks, techniques and trivia tidbits to broaden their base of food and wine knowledge. With his monthly pairing courses, Snyder is hoping to introduce his guests to a wider variety of wine, stretch their palate and bring a few new menu items to the table. He's not there, he notes, to be a wine snob. In his book, that term doesn't even exist. "It's all about having fun," Snyder said. "I want people to walk away each monthly with more wine and food knowledge, and to just have a great Saturday afternoon. Jekyll Brewing, a new craft brewery based in Alpharetta, is launching a product line of new brews inspired, in part, by Jekyll Island's eventful past. In 1747, Horton ordered "a great copper pot" for the "Brewing of Beer at Jeekel" using barley, malt, and hops. Brewery Founder Mike Jeffries, found a brew muse in Jekyll Island beerlinked past, and named the company in honor of the island's legendary place in beer history. The name Jekyll Brewing resonated for the company's award-winning Brew Master and Co-Owner Josh Rachel. "It actually melded very well with my background and eagerness to portray a southern brewing establishment," he said. 2, 4, 6 Passenger Cars Two Jekyll Island Locations Jekyll Brewing follows in the footsteps of Major William Horton, who is credited with establishing the first brewery in Georgia some 275 years ago. Horton was Jekyll Island's first English inhabitant and a top military officer serving under General Oglethorpe. In addition to his military duties, Horton grew barley and made ale to supply the British regiment stationed at nearby Fort Frederica, with the beverages created near the current Horton House historic site. The company's first offerings include an IPA-style beer known as "Hop Dang Diggity," and a Kolsch-style beer called "Big Creek Kolsch." Jekyll Brewing hand-crafts its beer on site, packages it in kegs, and sells the kegs to distributors for delivery to stores, restaurants, and bars. This favorite island activity is a weekend to pay homage to one of coastal Georgia's greatest treasures: wild Georgia shrimp. But September 20 to 22, when this year's fest is scheduled, is still weeks away. So what's a hungry shrimp seeker to do until the festival arrives? Fill up on the next best thing: low country boil. This mix of fresh shrimp, sausage, corn and potatoes comes in several varieties and with alternating parts. Depending on where you live and what ingredients are around you, a low country boil can take on wholly different meanings. That's a philosophy not lost on C.J. Jefferies. As owner of SeaJay's restaurant at the Jekyll Island Marina, Jefferies has seen his share of boils, from frogmore stews to Beaufort stew and a variety of other low country cousins. But when it comes to the recipe he serves up nightly at his eatery, Jefferies keeps it simple, classic and coastal. "Every night, when we serve our low country boil buffet, we stick to the basics. I like to let our fresh food speak for itself," he said. It appears that his "simple is best" theory is certainly working. On a recent evening, SeaJay's was filled with guests, both island residents and tourists, looking to dive into the restaurant's famed low country boil buffet. With steam rising above the pile of ingredients, guests waited in line anxiously to fill their large plates. Mounds of shrimp, new potatoes, Recipe: 12 red new potatoes 6 (4-inch) smoked sausage link sausage 6 ears corn 3 lbs. fresh Wild Georgia Shrimp, unpeeled Crab boil, 2 teaspoons per quart of water SeaJay's chefs use a top-secret island seasoning recipe, and sorry, they aren't talking. But try mixing the standard crab boil with a few new spices and seasonings, such as garlic, lemon pepper and Cajun spice, to jazz up this customary recipe. Directions: Fill a large pot with enough water to cover all of the ingredients. Add the crab boil and bring to a boil. Adjust the crab boil to suit your taste. When the water boils, add the potatoes and sausage. Cook on medium heat for 20 minutes. Add corn and cook for an additional 10 minutes. Add shrimp and cook for no more than 3 minutes. When Jefferies and his wife, Megan, started SeaJay's nearly 21 years ago, they never anticipated they would become owners of the island's bestkept cuisine secret. After taking over the space, which was then a deli, they eventually expanded the menu from simple sandwiches, to add seafood, salads and entre options. One night more than a decade ago, Jefferies borrowed equipment from a friend to try his hand at a low country boil for his guests. The experiment was such a success, he tried the boil again a few nights later. As weeks went by, the boil became a more frequent menu item, until finally, Jefferies made the executive decision that the coastal delicacy would become a nightly feature. Today, the boil buffet is served daily starting at 5 p.m., with live music featured Thursdays to Saturday starting at 7 p.m. granted. They don't get this kind of cuisine at home.
