Section 21 of the Georgia Food and Drug Act August 21 i Gluten Products and Diabetic Pood Ground gluten is the clean sound product made from wheat flour by the almost complete removal of starch and contains not more than ten per cent 10 of moisture and calculated on the waterfree basis not less than fourteen and twotenths per cent 142 of nitrogen not more than fifteen per cent 15 of nitrogenfree extract using the protein factor 57 and not more than five and fivetenths per cent 55 of starch as determined by the diastase method Gluten flour is the clean sound product made from wheat flour by the removal of a large part of the starch and contains not more than ten per cent 10 of moisture and calculated on the waterfree basis not less than seven and onetenth per cent 71 of nitrogen not more than fiftysix per cent 56 of nitrogenfree extract using the protein factor 57 and not more than fortyfour per cent 44 of starch as determined by the diastase method Gluten flour selfraising is a gluten flour containing not more than ten per cent 10 of moisture and leavening agents with or without salt Diabetic food Although most foods may be suitable under certain conditions for the use of persons suffering from diabetes the term diabetic as applied to food indicates a considerable lessening of the carbohydrates found in ordinary products of the same class and this belief is fostered by many manufacturers on their labels and in their advertising litera tureMONTHLY BULLETIN A diabetic food contains not more than half as much gly cogenic carbohydrates as the normal food of the same class Any statement on the label which gives the impression that any single food in unlimited quantity is suitable for the dia betic patient is false and misleadingLABORATORY REPORT In the following pages will be found the results of analysis of a large number of samples of foods of miscellaneous char acter which the inspectors have secured throughout the State This bulletin also contains the Products a milk I Milk is the fresh clean lacteal secretion obtained by the complete milking of one or more healthy cows properly fed and kept excluding that obtained within fifteen days before and ten days after calving and contains not less than eight and onehalf 85 per cent of solids not fat and not less than three and onequarter 325 per cent of milk fat Interpretation op Bacterial Count Since the bacterial count varies with conditions and with seasons it is difficult to set any reliable bacteriological stand ard The following will give a general idea of how such num bers should be interpretedmmmmmmm 12 MONTHLY BULLETIN Bacteria Per Cubic Centimeter Below 10000 indicates very good milk Between 10000 and 50000 indicates good milk 50000 100000 fair milk 100000 500000 unsatisfactory milk 500000 1000000 bad milk 1000000 Very bad milk Over The bacterial count will vary with the season being higher in summer than in winter The cause of this is the greater difficulty of keeping milk cool in summer If care is taken to keep it sufficiently cool the count should be no greater in sum mer than in winter b Cream I Cream is that portion of milk rich in milk fat which rises to the surface of milk on standing or is separated from it by centrifugal force is fresh and clean and contains not less than eighteen 18 per cent of milk fat c Ice Creams 1 Ice cream is a frozen product made from cream and sugar with or without a natural flavoring and contains not less than eight 8 per cent of milk fat 2 Fruit or chocolate ice cream is a frozen product made from cream sugar and sound clean mature fruits and con tains not less than eight 8 per cent of milk fat 3 Nut ice cream is a frozen product made from cream sugar and sound nonrancid nuts and contains not less than eight 8 per cent of milk fat The Presence of Organisms of the B Coli Aerogenes Group of Bacteria in Milk Cream and Ice Cream One or several members of a group of organisms known as the B coli aerogenes group may occur in milk more or lessGEORGIA DEPARTMENT OF AGRICULTURE 13 frequently according to the care used in its production These organisms occur normally in the feces of all animals and can only get into the milk through careless methods of production and handling The chief ways in which these organisms enter the milk are First by brushing dirt particles from the flanks of the cow into the pail during the process of milking second the pres ence of much dust in the stable during milking as this dust is made up to a great extent of particles of manure third the use of sewage polluted stream or well water to wash the utensils lastly the unclean hands of those who handle the milk The presence of any of these organisms in any quantity is then undesirable in milk During the past month some one hundred and five samples have been tested for the presence of some member of this group The results are as follows 18 were positive in iiooo c c of sample ffo were positive in iioo
