Georgia Dairies Enjoy Success of Diversification Since the end of World War II , the agriculture industry has seen farm numbers decline while the size and efficiency of farms has increased. However, this trend has led to more specialization and concentration of production in certain areas o f the country. As a result, some farm products are shipped long distances from the production site to consumers. Georgia's dairy industry has been a part of this change in agriculture. Increased competition from other parts o( the country, rising fuel costs, extended droughts, higher feed costs, and increasing costs assoc.iated with the transportation of milk from the farm to the processor all have contributed 10 the decl ine in the number of dairies in Georgia. The state currently has 27 1 dairy farms in the state, down from 408 in 2000. However. as farm numbers have declined. another trend has developed: there has been an increasing demand by consumers for more locally grown and processed food products. Some farmers have found a new market niche by responding to this consumer demand. These producers have begun providing locally grown and processed products to consumers in their areas, and many consumers have been willing to pay more for food that they consider to be fresher and tastier than from other conventional retail and wholesale sources. Sparkman's Cream Valley, located in Colquitt County, is one Georgia dairy that has found its own market niche. Like most dairies, it sold the raw milk it pioduced to . processors. However, owner Ricky Sparkman and his family have diversified the operation and are 111arketing not only a full line of fluid milk products packaged in biodegradable containers, but also their own gourmet butler and ice cream. AJJ of Sparkman's milk is produced free of artificial hormones . They also plan to introduce Cream Valley cheeses on the market in near future. Commissioner Oscar Garrison on September 12. Irvin noted that much of the milk consumed in Georgia is now imported into the state. "That milk has to travel a greater djstance to reach our consumers, and although it is a wholesome product, it just can 't be as fresh as locally produced milk." he said.
