No. 38 ~ Farm Safety Week Observed Sept. 19-25 "Protecting Agriculture into the Next Century," is the goal and theme of National Farm Safety and Health Week which is being observed September 19-25. This is the 56th anniversary of this observance presented by the National Safety Council. The council encourages all Americans ( to become more aware of the significance that agriculture plays in all our lives and the importance of safety equipment and systems, proper maintenance, and preventing injuries and illnesses on farms and ranches. Agriculture is the second most hazardous industry in the U.S. with a rate of over 22 deaths per 100,000 workers compared to mining with a death rate of 24.3 per 100,000 workers, according to the 1999 Edition of "Injury Facts" published by the National Safety Council. The all- industry average is 3.8 deaths per 100,000. These statistics also show an estimated 780 deaths and 140,000 disabling injuries in agriculture during 1998. "Agriculture has long been one of the most hazardous American industries," said Terry Wilkinson, manager of NSC's Agricultural Division. Through the decades of the National Farm Safety and Health Week observance, progress has been made in reducing injuries and illnesses to those involved in agricultural activities. Yet there are still (Continued on Page 12) Fall Equine Edition Scheduled for Oct. 20 The Farmers and Consumers Market Bulletin special fall equine edition is scheduled for Oct. 20. This issue will include notices for horse shows and events in October, November, and December, as well as listings of horses at stud, boarding facilities and ads for miscellaneous equine equipment and supplies. A 30-word limit will be observed for these notices. Deadline for the edition is September 29. Notices included in the "Equine for Sale" category and "At Stud" column must be accompanied by a copy of a valid, negative Coggins test (made within the past 12 months); otherwise, they will not be published. In addition, the Georgia Animal Protection Act requires boarding and breeding facilities to be licensed. Current license number must be submitted with notices for "At Stud" and "Boarding Facilities." Notices submitted without this information will not be published. For licensing information and applications, call (404) 656-3713. Wednesday September 22, 1999 Copyright 1999 Hurricane Floyd Tests Georgia Counties Animal Evacuation Plans The arrival of Hurricane Floyd on the coast of Georgia last week proved to be the first real test for animal evacuation plans in counties on and near the state's coastline. In preparation for disaster situations, the Georgia Department of Agriculture's Animal Industry Division has been proactive in assisting with the development of "pet friendly" shelters to be utilized in such emergencies. Deptartment personnel have worked hard over the past 18 months to help establish these shelters, which were activated in preparation of last week's hurricane. "Our department serves as liaison to connect those in need with those willing to help," said Georgia Commissioner of Agriculture Tommy Irvin, "and we would like to thank all the agencies and volunteers .who assisted us in our efforts." Irvin added, " Our personnel actively recruited space for livestock and pets, and we especially appreciate the entire animal industry in Georgia pulling together to assist us in this situation." Once the Georgia Emergency Management Agency activated the state's emergency plan, the department began its efforts to assist in the evacuation of people and animals from the risk area, which included Georgia, Florida and South Carolina. This proved to be the largest peacetime evacuation in Georgia history with approximately one-half million Georgians involved, as well as 1.7 million evacuees from Florida and 800,000 from South Carolina. Apple Harvest Underway in Georgia In Georgia, fall can mean several things: footbail, cooler weather, leaves to rake. It also is . the time of year for delicious apples grown in the state. In the north Georgia mountains, harvest usually begins about the first of August with the picking of Ginger Gold, and continues into November when growers finish up with Arkansas Black, Granny Smith and Yates. The variety determines shape, size and color. Sandwiched between the early- and late-season varieties are many other apples of superb quality. These apples can be used in a multitUde of ways: from pies to salads to muffins to fresh eating. And they come in a taste ranging from sweet to tart. Apples are grown mainly in the northern and middle parts of the state and " can be purchased at roadside stands and farmers' markets. What do you look for in a Georgia apple? They should be firm, free of bruises and their coloring should have eye appeal. The rewards of cooking with fresh Georgia apples are tremendous as they accent snacks, meals, beverages or desserts with their naturally refreshing taste and nutrition. Georgia apples are rich in dietary fiber, low in sodium and fat and contain no cholesterol. A medium-sized apple contains only 80 calories. Some apple varieties are best for cooking or baking, while others are ideal for snacks or salads. It's best to consider Georgia's colorful variety of apples and choose an apple based on its intended use. Georgia apples will keep for several months if kept at cool temperatures. Storing in vented polybags will assure better flavor. A large number of evacuees also had pets and livestock, mainly horses, accompanying them, and department personnel supplied these evacuees with a list of accommodations that accepted people as well as animals. Horses were taken to facilities throughout the state, such as the Georgia International Horse Park, the Hawkinsville Harness Racing (Continued on Page 12) Visit Sunbelt Expo October 19-21 Known as North America's Premier Farm Show, the Sunbelt Expo provides an opportunity for visitors to see first-hand the products and services of local, state, national and international exhibitors. Paul Bourff Juniper 912- Swine moving from farm to farm must 649-9932 706-568-4887 have a negative brucellosis and The Basics of Canning To prevent any type of contamination, it is important to have 1) Clean jars that are free of chips, cracks or any blemishes. 2) Flats and bands that are new and clean. 3) A large, sturdy pot with a lid, jar lifter, hot pads or mitts, and paper towels. 4) A clean, cooling towel - a thick dishtowel that will absorb the heat from the jars. In addition to having the right equipment for successful canning, it is important to know the types of canning methods. 1) WATER BATH canning- Uses a large pot with a lid with rapidly boiling water. The water level should cover the jar lids when submerged. At least one inch should be left at the top of the pot. This processing method is recommended for tomatoes, tomato sauce, salsa, catsup, and spaghetti sauce. 2) DIAL Gauge Pressure Canning or WEIGHTED gauge pressure canning This processing method is used to seal the jars with steam. This method is recommended for beans, squash, tomatoes, canning meats, potatoes, carrots, and hominy. The following is a brief outline to canning Georgia Vegetables: Tomatoes Wash tomatoes. Dip in boiling water for 30-60 seconds or until skins are split. Thin dip in cold water, slip off skins and remove cores. Leave whole or halve. Add 1 tablespoon lemon juice or 1/4 teaspoon citric acid to each pint of tomatoes to hot jars. Fill jars with raw tomatoes, pressing until spaces between them fill with juice. Leave 1/2-inch headspace. Remove the air bubbles, wipe jar rims, add the lids and bands and process. WATER BATH: process pints and quarts for 85 minutes. DIAL-gauge pressure canner 11 pounds pressure and WEIGHTED gauge pressure canner 10 pounds pressure, process pints and quarts 25 minutes.
