Opportunities For Organics Organics are going mainstream. The organic foods once found only in food cooperatives and health food shops are stocked by major food retailers in Georgia. Chefs of top restaurants search out locally grown, organic_ farm products. Households are asking for community- supported organic farms and local farmers' markets. The Office of International Trade at the Georgia Department of Agriculture is searching for organics from Georgia due to robust demands in Europe and Japan. These market opportunities -and more create unprecedented opportunities for Georgia farmers. The prices are lucrative. Certified organic soybeans sell for double or triple that of conventionally grown soybeans. Certified organic fresh produce sell for five to 12 times that of Our guest columnist this week is Deirdre M. Birmingham, Ph.D., Acting Executive Director, Georgia Land Stewardship Association, 4505 Moon Station Lane, N. W., Acworth, Ga. 30101. their conventional counterparts. Indeed Georgia's 35 certified organic growers have more market outlets than they can utilize. In addition to the financial benefits of organics are social and environmental benefits. Increasing farm profits help keep farm families on the land and help strengthen rural communities. Through organic management, the health of Georgia's land and water resources improves; the risks to farm family and farm worker health are reduced. Georgia consumers enjoy safer and more nutritious foods. Organic agriculture requires management skills, skills that may -be new or may have rusted for many farmers. Organic growers work with rather than against biological and physical properties of soils, plants and insects. Farmers use a host of strategies to control and reduce pest damage, but do not use synthetic fertilizers, pesticides and herbicides. Rather than feeding the plant, organic farmers feed the soil. A soil rich in organic matter is crucial to developing a plant more capable of withstanding insect and disease pressure. Farmers who wish to sell organic products to the public become certified to . Anderson Buford 770-614-1914 Georgia C.Ooking BANANA CHOCOLATE CHIP POUND CAKE The results are a very moist cake. 1 box of Banana Supreme Cake Mix 1/2 cup sugar 1(3 oz.) box instant chocolate pudding 3/4 cup vegetable oil 3/4 cup water 4 large eggs 1/2 (8 oz.) cup sour cream 2 teaspoons vanilla flavoring 1 (6 oz.) package of semi-sweet chocolate morsels Sifted powdered sugar 1/2 cup pecans, chopped (optional) Preheat oven at 350 degrees F. In a large bowl, combine the first three ingredients stirring with a whisk to remove the lumps. Add the next four ingredients, stirring until smooth. Fold in vanilla and chocolate chips {add pecans, if desired). Pour batter into greased and floured 10-inch tube pan. Bake for1 hour or until toothpick comes out clean. Cool cake in pan for 15 minutes. Remove cake from pan and cool on a wire rack. Dust cool cake with powdered sugar. Makes 15 servings.
