Black History Month (Continued from Page 1) died Jan. 5, 1943), an agricultural chemist who discovered hundreds of new uses for peanuts, and developed crop-rotation methods for conserving nutrients in the soil. In 1897, as director of agriculture for Tuskegee Normal and Industrial Institute for Negroes, Carver developed his crop rotation method, which alternated peanuts and peas - nitrate-producing legumes - with cotton, which depletes soil of its nutrients. Southern farmers began to plant peanuts one year and cotton the next, using peanuts to feed the livestock. However, large peanut surpluses became available so Carver developed 325 uses for the crop- cooking oil, printers ink, bleach, washing powder, paper, plastics, shaving cream, and axle grease, to name just a few. In addition, Carver also found a number of uses for the sweet potato and the pecan, including synthetic rubber and material for paving highways. Also, he developed many new products from waste materials, including recycled oil, and paints and stains from clay. The U.S. Postal Service since 1978 has honored Black History Month by issuing black heritage stamps featuring such black Americans as Harriet Tubman, who helped slaves travel the ''underground railroad" to freedom; Mary McLeod Bethune, educator and scholar; A. Philip Randolph, the civil rights leader and organizer. of the 1963 March on Washington; and research scientist Ernest Just. Jack and Bessie Ott of Rome, Ga., had a bountiful harvest of 60 tomatoes on their volunteer vine last year. To highlight the vital contributions farmers and agribusinesses make to our state and nation, the Georgia Department of Agriculture and the Georgia Agriculture in the Classroom Council Inc. are sponsoring an essay and photo/art contest for Georgia students. The theme, "My Hometown and its Contributions to Georgia's Agricultural Industry," has been adopted to honor the farmers and agribusinesses in your community. The contest has two primary categories - written and visual art. The written category is open to students in grades 4-8 and 912, while the visual art category is open to all age groups and includes both photos and artwork. First, second and third place winners in ail three categories will be awarded $100, $50 and $25 cash prizes, respectively. Honorable Mentions also will be named. All winners, honorable mentions and their guests will be invited to Atlanta for a special awards presentation by Commissioner Irvin. The recent results of a survey of greenhouse growers in Georgia sponsored by our association, the Georgia Commercial Flower Growers Association, reveals that over 65 percent of the growers in Georgia intend to hire additional persons this year. Fifty-nine percent of the businesses said they plan to expand production and facilities this year. A whopping 91 percent indicated that previous experience was not a require7 ment for employment, and over 72 percent said they allow working mothers to work part-time from 9 a.m. to 3:30 p.m. to fit their schedules. On average, newly hired greenhouse employees stay longer than two years, usually moving on to better jobs or starting their own business. Our guest columnist this week is Doug Smith, President, Georgia Commercial Flower Growers Association, Inc., P.O. Box 2945, LaGrange, Ga. 30241. The 1997 survey confirms the results of the National Agricultural Statistics Service agriculture commodity survey, which documented the greenhouse industry as one of the fastest growing segments of agriculture over the las.t five years. It has a sustained growth rate of 13 percent, with increases in gross sales estimated at 14 percent this year. Spring bedding plants make. up over 44 percent of the flower industry's crops grown in the state, with hanging baskets (11 percent) and perennials (17 percent) increasing in popularity. Eighty-one percent of the greenhouse operations in Georgia grow spring baskets and bedding plants, as well as fall pansies. Seventy-six percent of the state's growers also are now producing perennials. However, perennials is only one area of consumer interest that will keep our industry growing and our sales strong. Interest in geraniums, garden vegetables and garden mums are increasing, too. As greenhouse owners and growers we will have a strong need for persons interested in working in our industry for the foreseeable future. It's good work and employees increase their -value to .their employers as they learn more about plants! Given the market opportunity, and the need for more workers, you would think job ads would be filling local newspapers and bulletin boards. The surprising truth revealed by the survey is that less than 56 percent advertise their open positions. Shoppers here expect to find wholesome food, sanitary conditions and certain conveniences whether they do business at neighborhood stores or larger supermarket chains. These conditions are largely a result of comprehensive efforts by the Georgia Department of Agriculture, which regulates grocery stores in the state. But what about salvage foods that, because of accidents, mishandling or other factors, are sold outside normal retail channels? Consumers also can be .Black History Month Observed in February Black History Month, a tradition since 1926, is celebrated in Georgia and across the U.S. during February. The Georgia Department of Agriculture recognizes the works and efforts of African-American farmers during this time of celebration, as well as honors the contributions that African-Americans have made to all walks of American life. According to the Martin Luther King, Jr. Memorial Library in Washington, D.C., Dr. Carter G. Woodson, a noted Afric;m-American author and scholar, started what was then called Negro History Week in 1926 to educate nonblack Americans about black American culture and history, and to engender pride among African-Americans. Woodson, a son of former slaves, founded the Association for the Study of AfroAmerican Life and History (ASALH) in 1915. ASALH still promotes Black History Month by distributing information to school, colleges, libraries and other institutions. Why was February chosen for the celebration? This month marks the birthdays of President Abraham Lincoln, signer. of the Emancipation Proclamation; Frederick Douglass, African-American abolitionist; and Hiram Revels, the first black American U.S. senator. In addition, the National Association for the Advancement of Colored People (NAACP) was founded in February, 1909. Negro History Week became Black History Week in 1972, and in 1976, Black History Week became Black History Month. When the meat is exposed to the air, a natural pigment in the meat combines with oxygen to produce the red color, which is referred to as the "bloom." The interior - is dull in color because it does not have enough oxygen to cause the bloom to appear. *** Is it safe to.can vegetables without adding salt to the recipe? Yes, it is, because salt is used for flavor only and is not necessary to prevent spoilage. *** Is it safe to boil peanuts in a galvanized wash tub? This practice is not recommended because the metals and finishes on galvanized wash tubs may be toxic. Peanuts should only be boiled in food-grade containers, such as certain grades of stainless steel and aluminum. Cast iron utensils approved for food use also may be used.
