After the brine solution is injected, some processors "massage" or tumble the hams to distribute the solution. Tumbling several hams together in a saline solution also causes the myosin, a muscle protein, to migrate to the outside of the hams; thus preventing the loss of moisture and flavor during the smoking process. The type of processing technique used determines the labeling of the .. ham. For example, "Smoked" hams must be kept in the smoke chamber until they reach a temperature sufficient to kill the parasite, trichinae. Hams labeled "fully cooked" must stay in the smokehouse until they reach an internal temperature of 158 degrees, whereas "baked hams" must be heated to an internal temperature of 170 degrees Fahrenheit. Following the heating process, the hams are quickly cooled to 40 degrees Fahrenheit, according to approved procedures, to prevent bacterial growth. Labels must provide the following information about the ham in clear, concise form: 1) name of product; 2) qualifying statement; 3) ingredients; 4) handling statement; 5) signature line; 6) net weight; 7) inspection legend. These label components are described briefly below. "Ham" is identified as the product name. The qualifying statement identifies the type of product, such as "DryCured" or "Water Added." Unless the product is given a special designation, such as "Ham With Water Added," the weight of a ham should not exceed its original or "green" weight. For example, any weight added by injecting a curing solution is offset by weight lost in the smokehouse. Other terms often found on ham product labels are "Ham With Natural Juices," which weigh slightly more than the ham's green weight, and "Ham with Water Added," which also may be slightly more. Such designations must be prominently displayed contiguous to the product name in letters at least 1/3 the size of the product name. The signature line provides the name and address of the company that packed the ham. This information is needed to trace the ham to the original processor in the event there is a problem with the product. Net weights are included on the label so consumers will know the (inal weight of the ham after processing, and inspection legends are evidence that the product has been properly inspected and passed for consumption. The Department's sampling schedules are based on a formula which takes into account the volume of product produced and the number of past viol,.ations that have occurred at the processing facilities. Samples from plants that produce hams for sale within Georgia are sent to the Department's food lab in Atlanta for analysis and samples taken from plants which ship interstate are sent to federal labs. In 1994, the Department began a microbiological monitoring program for high-risk hams to detect the presence of possible Listeria or Salmonella bacteria. This program serves as an additional inspection tool to assure the consumer is receiving wholesome, unadulterated hams. "Our Meat Inspection Section works hard to keep unfit meat products from reaching customers," said Georgia Commissioner of Agriculture Tommy Irvin. "Consumers can rest assured that the hams they buy in Georgia .have been monitored by our Department and fully comply with federal standards." *** Does washing fresh produce eliminate pesticide residues from food? Washing fresh produce before eating is a healthful habit. You can reduce and often eliminate residues if they are present on fresh fruits and vegetables by following these simple tips: Wash produce with large amounts of cold or warm tap water, and scrub with a brush when appropriate; do not use soap. Throw away the outer leaves of leafy vegetables such as lettuce and cabbage. Trim the fat from meat, and fat and skin from poultry and fish. Residues of some pesticides concentrate in animal fat. Supermarkets, as a rule, don't wash produce before putting it out, but many stores mist it while it's on display. Misting keeps the produce from drying, but surface residues drain off also, in much the same way as from a light wash under the kitchen faucet. Georgia was one of the first states to adopt a cooperative meat inspection program with the U.S. Department of Agriculture under the Wholesome Meat Act of 1967. Since its inception, the number of serious violations have decreased steadily over the years as both producers and inspectors have become more efficient in their respective roles. Georgia adopted a Federal-State cooperative inspection program in 1969 under the Talmadge-Aiken Act, and began managing the inspection system in approximately 50 USDA federallylicensed establishments. These slaughter and processing plants utilize trained and certified state inspectors to perform federal inspections, as Cotton Workshop Planned at Tifton RDC Dec. 10-11 Cotton is big-time in Georgia again. At close to $700 million a year, it brings the state's farmers more income than any other row crop. But from the farms to the gins and other agribusinesses, everything about cotton is new. The "old cotton fields back home" are gone. Growers, dealers and others can learn more about cotton production by attending the University of Georgia's 1998 Georgia Cotton Production Workshop Dec. 10-11 in Tifton, Ga. The sixth annual event will open with a morning of concurrent sessions on cotton varieties, insects,_ diseases, strip tillage, economics, weeds, water and other topics. In the afternoon, noted experts will address markets, farm policy, economics and cotton genetics. Friday's speakers will deal with such topics as black root, harvesters, cotton on the Web and water issues. The day will end with more concurrent sessions. Additional establishments which sell their products solely within Georgia are also inspected by state meat inspectors who follow the state and federal regulations. Department inspectors monitor the curing, aging and smoking processes used for hams to assure safety and wholesomeness. Inspectors also assure that salt water activity and records are properly maintained on each lot of hams. The Department also determines if labeling requirements are being met. For example, hams designated as "country ham," "country-style ham," or "dry-cured ham" must be rubbed with curing agents and cannot be injected with or placed in curing solutions. For "quick-cure" or "moist-cure" hams, the majority of commercial producers use a pumping machine to injec( a curing solution evenly throughout the product. The cure usually consists of five main ingredients: water, salt, sodium phosphate, sodium erythorbate and sodium nitrite. These components work together to help prevent food-borne illness and to improve and preserve the ham's color, flavor and texture. When inspecting these hams, Department personnel verify the cure ingredients, ratios and amount of restricted ingredients injected into the meat. Complete records of the weight of each ham are kept at each stage of the process to verify product classification and label requirements. The "eyes have it" when you are trying to determine the freshness of fish. The fish's eyes should be clear and bulge a little. Only a few fish, such as walleye, have naturally cloudy eyes. Whole fish and fillets should have firm and shiny flesh. Dull flesh may mean the fish is old. Fresh whole fish also should have bright red gills free from slime. If the flesh doesn't spring back when pressed, the fish isn't fresh.. There should be no darkening around the edges of the fish or brown or yellowish discoloration. The fish should smell fresh and mild, not fishy or ammonia-like. *** Are "natural" additives safer than "artificial" or "man-made" additives? Some additives are manufactured from natural sources such as soybeans and corn, which provide lecithin to maintain product consistency, or beets, which provide beet powder used as food coloring. However, some other useful additives are not found in nature and must be man-made. Artificial additives can be produced more economically, with greater purity and more consistent quality than some of their natural counterparts. Whether an additive is natural or artificial has no bearing on its safety.
