Many insects and diseases can survive the winter months in plant debris so remove spent plants from your garden. It's also a good idea to mow turf surrounding the garden to prevent weed seeds from blowing into cultivated areas. If you have fruit trees, be sure to remove any rotted fruit from underneath the trees as well as any rotted fruit remaining on the branches. Although it's good to 'add spent plant materials to your compost pile, do not add any that contain insects, diseases or mature weed seeds. If you want to enjoy pansies before frost, set them out . now. When temperatures begin to rise in late winter, the plants should put on new growth and provide you with another showing of flowers in the spring. Carrots, radishes and other root crops will not be productive if they are too crowded, so thin young plants according to the spacing recommendations on your seed packets. Now is the time to set out transplants of cabbage and to sow seeds of beets, carrots, collards, kale, lettuce, onions, radishes, spinach and turnips, as well as sets of garlic and onion. If there are areas of your garden that you don't plan to use for growing crops this fall, consider planting a cover crop, .such as annual rye grass or crimson clover. Cover crops help to hold the soil in place and they will add organic matter when tilled into the soil next spring. Most fruits are now available nearly year-round because they're grown somewhere in the Southern Hemisphere during Georgia's winter season- but not muscadines. These grapes are grown commercially only in the southern U.S. They mature during late July, August and September. Southerners have been eating wild muscadines since first setting foot in this land. At orie time muscadines could only be found in the wild. But in the early 1800s, a number of superior wild varieties were selected for cultivation. One of these was "Scuppemong." Found on the Scuppemong River in North Carolina in 1810, it has become the common name for all bronze muscadines. The University of Georgia College of Agricultural and Environmental Sciences has bred muscadines for more than 70 ,years. This work has led to a series of varieties well adapted to the state. A breakthrough occurred about 25 years ago with the release of "Fry" muscadines. These grapes paved the way for the modem fresh-market muscadine industry. Fry is well known for its large size and rich, sweet flavor. Georgia now has about 1,200 acres of muscadines. Other varieties of note are the bronze "Summit" and "Tara," a fairly new, self-fertile muscadine. The most recent release form the UGA breeding program is "Scarlett," a largefruited, red grape. .It used io be that people thought muscadines just tasted good. That's reason enough to grow them and get excited about the seasqn, but in recent years, work at Mississippi State University has shown them to be powerhouses of healthful eating. Muscadines are among the world's richest sources of ellagic acid (thought to help prevent cancer) and resveratrol, which helps reduce heart disease in the so-called "French paradox." (Frenchmen with rich diets who drink red wine have much less heart disease than people in the rest of the world.) Muscadines are a great source of dietary fiber, too. Fall is a good time to order plants for your own backyard. A number of Georgia nurseries propagate muscadine plants, and many garden centers have them in stock. When planting, be sure to plant self- fertile varieties with female-flowered types for cross-pollination. Mountains In Georgia, fall can mean several things: football, cooler weather, leaves to rake. It also is the time of year for delicious apples grown in the state. In the north Georgia mountains, harvest usually begins about the first of August with the picking of Ginger Gold, and continues into November when growers finish up with Arkansas Black, Granny Smith and Yates. The variety determines shape, size and color. According to the August forecast report from the Georgia Agricultural Statistics Service, total production of Georgia apples in 1998 is estimated to be 24 million pounds. This is down from last year's total of 26 million pounds. In 1996, total production was 22 million pounds. Sandwiched between the_ early- and late-season varieties are many other apples of superb quality. These apples can be used in a multitude of ways: from pies to salads to muffins to fresh eating. And they come in a taste range froi: sweet to tart. Apples are grown mainly in the northern and middle parts of ihe state and can be purchased at roadside stands and farmers' markets. What do you look for in a Georgia apple? They should be firm, free of bruises and their coloring should have eye appeal. With such a good variety and selection, the rewards of cooking with fresh Georgia apples are tremendous as they accent snacks, meals, beverages or desserts with their na~urally refreshing taste and nutrition. Georgia apples are rich in dietary fiber, low in sodium and fat and contain no cholesterol. A mediumsized apple contains only 80 calories. Some apple varieties are best for cooking or baking, while others are ideal for snacks or salads. It's best to consider Georgia's colorful variety of apples and choose an apple based on its intended use: Georgia apples will keep for several months if kept at cool temperatures. Storing in vented polybags will assure better flavor. The high sugar and acid content of fruits make them saf~ to dry outdoors under certain conditions. Usually, it takes several dry and breezfdays with a temperature of 85 degrees F or higher and humidity below 60 percent to dry fruit. However, even with ideal weather conditions, fruit dried outdoors must be covered or brought under shelter at night, which can add moisture back and slow the process. Efforts to improve this process have led .consumers to try solar drying. Solar dryers use the sun as the heat source, but a specially designed dehydrator increases the temperature and air current to speed up the drying time. There are several types of solar dehydrators. To obtain directions for making them at home contact your local county extension agent. TIP: Vegetables that are low in sugar and acid (vine dried beans are the exception) are not recomme_nded for outdoor drying. Firewood Sellers, Consumers Protected By Georgia Department o.f Agriculture As fall approaches, Georgians begin to think about leisurely winter evenings spent in front of a nice fire. Residents interested in purchasing wood for those fires are reminded that the Georgia Department of Agriculture regulates firewood sales within the state. Uniform standards benefit consumers as well as vendors by ensuring consistency, equity and good will in the marketplace. Wood of any type, when advertised as fuel for fireplaces or stoves, must be designated by the cord, or fraction of a cord, according t.o regulations administered by .the department's Weights and Measures Division. A cord is defined as 128 cubic feet of wood, .stacked in a line or row, with individual pieces touching and stacked in a compact manner. The cord is usually stacked four feet high, four feet wide and eight feet long, but may be any combination of measurements that convert to 128 cubic feet. There are no defined measurements for such terms as face cord, rack, pile or truckload, which is why these terms are prohibited when advertising or offering wood for sale. With fireplaces a common feature in urban as well as rural homes, many supermarkets and convenience stores now offer firewood for sale in quantities much smaller than a cord. The department also regulates these sales and requires firewood to be bundled by cubic measure, or by weight and count. .The measurements are required to be clearly labeled on the packaging so 'that the customer knows the exact amount of wood he or she is buying. Besides regulating measurements, department rules require that, when designated by species, firewood must be within IO percent accuracy as to the type or species. For instance, a cord may be advertised as 50 percent hickory, 30 percent pine and 20 percent .assorted softwoods, as long as each of the figures is not off by more than 10 percent. When buying firewood, always get a receipt indicating the seller's name, address and telephone number. The invoice also should include the . price, amount and kind of wood purchased. When delivered, stack and measure the wood. If the cubic mea.surement indicates that you did not receive the correct volume, contact the seller to correct the problem. If the matter cannot be resolved with the seller, notify the Department's Weights and Measures Office. National Honey Month Celebrated in September The U.S. Department of Agriculture has proclaimed September as National Honey Month, a time to celebrate the pure, wholesome goodness of honey and to honor the work of the honey bee and the beekeepers around the nation. Over a decade ago, a group of honey producers and other industry representatives got together to discuss a powerful new idea: What would happen if they pooled their resources to work to spread the word about honey? By working together, they theorized, .the industry could advertise; conduct research and promote honey in ways that were simply too costly and timeconsuming without a cooperative effort. In 1986, the Honey Research, Promotion and Consumer Information Order was approved by a referendum ,of honey producers and importers, thus establishing a program for generic honey research, advertising and promotion. The national Honey Board was subsequently created by the U.S. Secretary of Agriculture to administer the order. Honey is "manufactured" in one of the world's most efficient factories - the beehive. Bees may travel as far as 55,000 miles and visit more than two million flowers to gather enough nectar to make just a pound of honey. The color and flavor of honey differ depending on the bees' nectar source (blossoms).
