A steady supply of safe, inexpensive, and nutritious food is vital, but so is the knowledge that we are leaving clean soil, air, and water to future generations. That close relationship has become even more interrelated in recent years, and that's why we're proud that the University of Georgia College of Agriculture has a new name: the College of Agricultural and Environmental Sciences.__________ Our guest columnist this week is Dr. Chris Smit, associate dean and director of academic programs, University of Georgia College of Agricultural and Environmental Sciences, 102 Conner Hall, Athens, GA 30602.______________________ The University System Board of Regents approved the name change in June. It reflects a new day for research and extension, but it's particularly appropriate for our academic programs. A recent report by the U.S. Department of Health and Human Services said there is a need for an additional 121,000 graduates a year to fill positions in environmental specialties nationwide. Many of those jobs have important links with agriculture. In a sense, the name change simply explains more clearly what we are doing. Our programs in the environmental field have been vital and growing for years. Barely two years ago, our Environmental Health Science program had only about 25 students enrolled as majors. Now, the program boasts more than 100. Two other units of the College got new names in June as well, reflecting their own progress and change. The Department of Agricultural Economics in Athens changed its name to the Department of Agricultural and Applied Economics. And the Division of Agricultural Engineering became the Division of Biological and Agricultural Engineering. (Continued on page 12) Wednesday, July 17,1991 fllong tfie&nlumet Vine lf>s ^ ^*r% S ^-^^^ ^==^=^--^~T^^ /^ eading Between the Labels: How to Spot Hidden Ingredients Consumers interested in controlling their salt, sugar and fat intake often read ingredient labels carefully yet still select products containing large amounts of these ingredients. According to nutritionists, while the labels on many packaged foods provide information about their ingredients and nutritional value, sometimes ingredients are "hidden" in these labels because fat, sodium and sugar take different forms and can be listed under several names. For example, the ingredient label on a box of gravy mix includes salt, monosodium glutamate, sodium caseinate, and disodium inonsinate. Many consumers would be unaware that this product contains four different ingredients that are basically salt. The clue is the word sodium as part of the ingredient name. Label reading has become increasingly difficult for consumers in the past decade as food manufacturers' use of fancy terms and low fat, salt and sugar claims on their labels has increased. But, while it may take some sifting through eyecatching nutritional claims to get to the fine print, ingredient labels do provide enough information to help consumers make wise food choices. Ingredient labels are required on all processed foods by the federal government, with the exception of foods such as ice cream, mayonnaise and ketchup which must, by law, use the same basic ingredients. Only those ingredients contained in these products that are optional must be listed. However, the Nutritional Labeling Education Act passed by Congress in November, 1991, will eliminate this exception. Coordinators Aid Farmers In Marketing Their Crops Now that Georgia's produce season is in full swing, farmers are busy harvesting and delivering their fruits and vegetables to grocery stores, farmers' markets and other sales outlets. This also is a busy time for the Georgia Department of Agriculture's area marketing coordinators who play an important part in assisting farmers with the marketing of their products. These coordinators provide person-to-person contact with local producers and assist them in the marketing process, which includes grading, packaging and promoting their products. The coordinators also work closely with individual farmers' market managers in licensing and bonding produce buyers. Throughout the year, coordinators work to establish relationships between farmers and wholesale buyers, but it often is not until the harvest season that the coordinators are able to see the fruits of their labor and farmers are able to (Continued on page 12) Now that the 1991 tobacco market season is underway, buyers from tobacco companies will be traveling to warehouses throughout Georgia to buy the state's quality golden leaf. Time Management Essential in Handicraft Business Managing a handicraft business means successfully organizing your time into a well-planned daily routine. While much of the work to be done has to do with making craft items, the real skill often lies in developing the discipline to manage your time. Here are some pointers to help you stay on track. Set goals. Decide exactly what you want to have accomplished by the end of each day. Avoid generalities such as making more money or locating a less expensive supplier. Set specific, measurable goals such as: Contact four potential suppliers to compare price, credit, quality and delivery costs. These daily goals are actually part of your business's monthly and quarterly goals. Even the largest goal can be accomplished by breaking it down into a number of small goals. Change goals into tasks. If goals are the results you seek, then tasks are the things you must do in order to realize those results. In order to reach your desired destination, map out each task between your present situation and your goal. As you work on one task, make sure you have everything you need for the beginning of the next task in the sequence. You don't have to handle every detail or solve every problem by yourself. A little delegation or consultation can help you devote more of your time to what you do best. Prioritize. Along with the freedom of being your own boss comes the responsibility for deciding what must be done first each day, and what can wait. Take your list of daily tasks and arrange them in order of importance. As you work through this list, your energy will be devoted to the things that matter most, and your time as a manager will be well spent. OLD-FASHIONED PEACH PRESERVES (about 7 half-pint jars) 2 quarts sliced, peeled, hard, ripe peaches (about 10 large) 6 cups sugar Combine fruit and sugar; let stand 12 to 18 hours in cool place. Sterilize canning jars. Bring slowly to boiling, stirring frequently. Boil gently until fruit becomes clear and syrup thick, about 40 minutes. As mixture thickens, stir frequently to prevent sticking. Skim, if necessary. Pour hot preserve into hot jars, leaving 1/4-inch head space. Wipe jar rims and adjust lids. Process 5 minutes in a boiling water bath. PEACH BUTTER (about 8 half-pint jars) 2 quarts peach pulp (about 1% dozen medium, fully ripe peaches) 4 cups sugar TO PREPARE PULP Wash, scald, pit, peel, and chop peaches; cook until soft, adding only enough water to prevent sticking.
