Christmas is just around the corner, and families searching for that ideal Christmas tree will have plenty of quality Georgia-grown Christmas trees to choose from this year. H.E. Ruark, owner of Jack's Creek Farms in Bostwick, Ga., and past president of the Georgia Christmas Tree Association, urged parents to take their children to a choose-and-cut operation and let them participate in the time-honored ritual of finding that special tree. "I started this business because I wanted to recapture a family tradition," Ruark said. "Our typical customers are families, and we encourage people to come out and share this experience." Select and Preserve Tree For Safety, Enjoyment Choosing a Christmas tree can be a pleasant outing for the entire family, but it can produce disappointing results if you make a poor selection. By following a few simple guidelines, you can make the experience a much more satisfying one. First, decide where the tree will be displayed and measure the space available. This will help determine what height tree is needed and whether all sides of the tree need to be suitable for display. Choose a tree that is the correct height for the display area. If a large portion must be cut off either end to make it fit the space, the natural taper of the tree will be altered. Select a tree that is as fresh as possible. Check for freshness by pulling lightly on some of the needles. They should be resilient but net brittle, and should adhere to each twig. Shake or bounce the tree lightly on the ground. If the tree is fresh, only a few needles should drop off. The tree should have a strong fragrance and a fresh green color. The newly popular Leyland cypress tree does not have as strong an aroma as pine or cedar trees. Make sure branches are sturdy enough to hold ornaments and strings of electric lights. Investigate the bark closely for insect egg cases. Although they may be dormant on the tree in its natural state, the insect eggs can hatch under the warm lights in Like many choose-and-cut Christmas tree operations, Jack's Creek Farms caters to children. Georgia growers will have more than 500,000 trees to market this year, about the same quantity as last year. I have always wondered what sugarplums are. Can you tell me? A: Sugarplums are extremely sweet preserved fruits, such as plums and figs, which were boiled in sugar syrup for several days until they becamed glaceed (glazed). They were usually wrapped in glittery silver foil and not only tasted good, but were decorative, as well. These treats were popular in England in the 1800's. Similar recipes are used today, but they are modified and do not require nearly as much time to prepare. *** Q: Is it safe to use wood treated with pesticides in the fireplace? A: No, it is not safe to burn treated wood in the fireplace, stove or heater. Treated wood products contain poisonous chemicals, such as arsenic, copper and chromium, all of which get into the air when the wood is burned. The USDA Soil Conservation Service (SCS) and Fort Valley State College, School of Agriculture in Fort Valley, Georgia have jointly announced the naming and release of "Flageo" marshhay cordgrass, Spartina patens (Ait.) Muhl. * 'Fl ageo'' marsh hay cordgrass was developed at the SCS Plant MaterialsCenter in AiiieriettS, Georgia and Brboksville, Florida. It was first tested at the Americus Plant Materials Center, beginning in 1972. Many Georgia Foods Suitable For Shipping Overseas As the holiday season approaches, many Georgians are interested in sending gift packages of food products to loved ones in the Middle East. Fortunately, many of our state's trademark commodities are suitable for this use when prop- erly prepared and packaged. Follow the guidelines below to help your package arrive safely. With temperatures in Saudi Arabia currently hovering around 75 degrees F, the potential for food spoilage is always a problem. The best items to send are those that are not highly perishable and which can tolerate rough handling and high temperatures. Food items recommended for shipment include dried fruits such as apples, peaches or apricots, dryroasted nuts such as peanuts or pecans, bar cookies or other dense cookies, dry breads such as banana or cranberry bread, pound cakes, commercially prepared trail mixes, instant soup and dry beverage mixes. Peanut butter in plastic jars may also be sent. Do not send perishable items requiring refrigeration, since these can spoil easily. Some examples are fresh meats, or cookies or cakes that have fillings or frostings, since these can spoil easily. Also avoid pork products and alcoholic beverages, which are forbidden by Muslim laws. When baking foods, it is best to use recipes that call for vegetable shortening. Peanut butter is a suitable ingredient as long as the food product will be eaten within two to three weeks. You may want to buy an inexpensive, disposable baking pan for use in baking. After the food is baked and cooled, the pan can be used as a shipping container for the cooked food. After cooling the food thoroughly, wrap it in plastic wrap or foil so that, no moisture or air can reach the product or escape from it. Individual cookies or candies should be thoroughly wrapped. Geoyrmgia ^m Cooking EGG NOG ELEGANTE 4 eggs 1/2 cup sugar 1/4 teaspoon salt 2 cups milk 1/3 cup peach liqueur 2 tablespoons frozen orange juice concentrate In medium saucepan, heat together eggs, sugar and salt. Stir in milk. Cook over low heat, stirring constantly, until mixture thickens and just coats a metal spoon. Cool quickly by setting pan in a bowl of ice or cold water and stirring for a few minutes. Cover and refrigerate until thoroughly chilled, several hours or overnight. Stir in liqueur and orange concentrate. Pour into bowl or pitcher. Serve immediately. Makes about six (1/2 cup) serving. Calories: 212 per serving of 1/6 recipe. STUFFED TURKEY BREAST 6-ounce package seasoned stuffing mix 1/4 cup butter or margarine, divided 1/2 cup chopped celery 1/4 cup chopped onion 3-pound boneless turkey breast, skinned 2 tablespoons honey Prepare stuffing mix according to package directions. Saute celery and onion in 2 tablespoons butter or margarine until celery is tender and onion is transparent. Mix celery and onion with stuffing mix. Lay turkey breast flat on wax paper, skin side down. Remove any tendons, skin or fat. Pound the breast to flatten and form a more even thickness. Spoon stuffing mixture into center of turkey leaving a 2inch border at sides. Starting at bottom, fold in sides of turkey breast over filling. Tie turkey breast roll securely in several places with string. Place, seam side down, on a rack in a roasting pan. Mix honey and remaining butter or margarine together. Pour 1/2 of honey mixture over rolf. Insert meat thermometer making sure bulb rests in meat of turkey. Bake, covered, at 325 for 30 minutes. Uncover and continue baking for 1 1/2 hours or until meat thermometer registers 185. Transfer turkey to cutting board; remove string and let stand 10 minutes before slicing. Makes 8 servings; each serving contains approximately 371 calories. fc i ;i_i* *^< *i :A2f Country folks had to become amateur chemists by necessity because many cleaners, polishes, etc. were either not readily available to them or else too expensive. Some concoctions were the result of experimentation, but many were handed down for generations. In either case, these recipes were indicative of the ingenuity of farm families in adapting items they produced on the farm or they could find nearby. Many of these old farm and homestead formulas are still useful, and they can be made out of common household products. In addition, these substances provide a practical and inexpensive alternative to those folks who are interested in reducing the amount of commercial chemical products used around the home. A few of these old timey formulas are listed below. Stain Removers To remove wax, oil and grease spots, place paper towels or absorbent material on either side of the spot and apply a hot iron. As soon as some of the stain has been absorbed, replace the absorbent material and repeat the process until all the substance has been removed. For stubborn spots, apply some slightly diluted ammonia and iron again using the procedure above. Potato starch can also be used to remove grease spots. Put some finely grated raw potatoes into a pot of water and let stand for 15 minutes. Strain off the potatoes, allowing any remaining particles to settle, and pour the liquid into a bottle. Make certain you apply the liquid only to the grease stain; otherwise it may alter the color of the surrounding fabric. Metal Cleaners Aluminum tends to stain and darken easily due to its relatively porous surface. To restore a stained pot, immerse the discolored portions in several inches of water. Then add a few tomatoes or stalks of rhubarb and bring to a boil. Wipe the pot dry with a soft cloth. As an alternative, try boiling the discolored portions in a solution of equal parts water and vinegar and wipe dry. Forestry Commission Holds Seedling Sale The Georgia Forestry Commis sion has pine and hardwood seed lings available to Georgians at low cost. All seedlings are grown from certified seed that is developed for growing conditions in Georgia. The pine species offered are Slash, High-Gum Slash, Loblolly, Livingston Parrish Loblolly, Longleaf and White. Hardwood species available are Dogwood, Sawtooth Oak, Northern and Southern Red Oak, Yellow Poplar, Green Ash, Catalpa, Redbud, Water and Willow Oak. No More Farm Workers to be Admitted Under INA There should be an adequate sup ply of farmworkers to produce and harvest the nation's fruits, vegeta bles and certain other perishable commodities for fiscal year 1991, according to a report released by the national Secretaries of Agricul ture and Labor. Make certain to select a variety that grows well in your area. If you have evergreens such as holly, boxwood, magnolia, yew or mistletoe, cut boughs for use in Christmas decorations. After you cut the stems, plunge them in water and allow them to remain overnight in a cool, dark place. This will help to keep the greenery fresh and bright. Hardy vegetables, such as tur nips, radishes, rutabagas and other root crops, can overwinter in your garden if mulch is added to the soil. To insulate the soil from freezing temperatures, add a six to eight inch layer of pine needles or hay. You can then harvest as needed. Marking the rows will help you to distinguish the various crops since they will be covered by the mulch. Christmas Tree Quality, Selections Increase in Ga. (Continued from page 1) are sold outside the state, mostly in Florida. Georgia's Christmas tree indus try has changed tremendously over the past 40 years. Beginning with a few small part-time operations, the industry has grown to one in which some 300 growers produce annual sales of more than $8 million. According to Dr. David Moorhead, forester, University of Geor gia Extension Service, this success can be attributed to a core of top growers. Commercial Christmas tree grow ers have decreased from around 500 to their current level of around 300, Moorhead said. This reduction is due to many factors including poor management practices, or growers who established tree plantations without fully understanding the costs and labor required to produce a premium tree. Georgia-grown Christmas trees are a better buy than ever this year. According to Moorhead, prices have remained stable over the past sev eral years. Retail prices are ex pected to range from $2.50 - $3.50 per foot, with the average cost of a tree around $21.00. Varieties grown in Georgia in clude the Virginia Pine, White Pine, Sand Pine, Red Cedar and the Leyland/Arizona Cypress. Several varieties of firs and spruces also are grown in north Georgia. Select, Preserve Tree (Continued from page 1) your home. Even cut and bagged trees need to be shaken out at home. For an extra precaution against insects, hose the tree down lightly. Once the Christmas tree is se lected and brought home, cut the base at a slant one inch above the original cut. Bore or drill a hole about four inches deep into the end of the stem and pack the hole with cotton. Then place the tree in the stand with water or preservative solution. The cotton will act as a wick to help the tree absorb more water and stay fresh longer. There are a number of commercial preparations available to prolong the life of your Christmas tree, or you can make your own preserva tive solution. One household for mula calls for placing the tree in a bucket filled with one gallon of boiling water with the following ingredients added: two teaspoons of chlorine bleach, two cups of light corn syrup and four teaspoons of powdered (or chelated) iron. Let your tree soak in the solution for 12 hours before placing it in the stand. Whether you add anything to it or not, water is essential to keep the tree green and to help prevent fires. Check the water level daily. Also, never leave the lighted Christmas tree unattended. Make sure you unplug the tree before leaving home or going to bed. Pruning of Pecan Trees Made Easier With Reduced Foliage The dormant months of Decem ber, January and February are the best times to prune pecan trees, since the task is made easier by the lack of foliage. Also, the trees' sap is concentrated in the roots, making the limbs much lighter and easier to handle. Pruning large trees is a big chore for most homeowners. Care should be taken to avoid accidents and to prevent limbs from falling on other trees and adjacent structures. When making pruning cuts, the homeowner should use the right tools, such as a good bow saw, and work with a partner. The shape of the tree is impor tant in home pruning, to preserve the beauty of the tree while improv ing its productive function. Skirting up the tree, or removing low-hanging limbs so that air can circulate, is important to control diseases and encourage foliage and nut production later in the year. When making pruning cuts, first make an undercut, so that when the limb falls, it will not bark the tree. After the undercut is made, make the cut on top and let the limb fall. Then come back and make an addi tional flush cut with the trunk or a large limb so that the wound will close properly and the wounded area will not rot Winter can be hard on young pecan trees. One of the most harm ful effects is cold damage at the base of the trees. Cold injury occurs from the ground line to about six inches up the trunk. This condition is called southwest winter injury, because the south west-facing part of the trunk warms up with the low winter sun, and moisture is drawn up in the trunk area. Freezing temperatures at night form ice crystals which dam age the trunk of the tree. One way to prevent this problem is to paint the lower 18 inches of the trunk with white latex paint, which reflects the sunlight and keeps the trunk from warming up. The paint also protects the tree from squirrels and rats, who do not like the bright color of the paint. Some growers use water pipe in sulation to protect the tree from winter injury. Commercial tree protectants are also available through local plant nurseries. If trying to protect just a few trees, wrap aluminum foil around the bottom 12 to 18 inches of the tree. This also gives some protection against rabbits, squirrels and rats. While pecans are an important commercial crop in Georgia, they make for enjoyable backyard growing as well.
