MARKET BULLETIN GEORGIA DEPARTMENT OF AGRICULTURE TOMMY IRVIN,COMMISSIONER Vol. 77, No. 30 Wednesday, August 8, 1990 Home Economists Meet Challenges of the 90s The Georgia Association of Extension Home Economists will identify changes for the 1990s and how to effectively offer educational opportunities for clientele at its 1990 Annual meeting in Warner Robins, Sept. 6-7. Since the inception of the Extension Service, home economists have provided research-based information to families. The family has changed mothers have gone to work (from 12% in 1950 to 57% in 1990), and single parents now include fathers and teenagers, as well as mothers who are struggling to balance jobs and family. Our guest columnist this week is Carolyn Ainslie, president, Georgia Association of Extension Home Economists, P.O. Box 413, Madison, Ga. 30650. _____ Families are faced with the stresses of divorce, inadequate income, aging parents, substance abuse and child abuse. Extension home economists are working throughout the state teaching basic life skills that help families cope. Limited resource families also remain a high priority as we strive to address issues such as infant mortality and nutrition. Nutrition, food safety, and food quality were the foundations that Extension Home Economics was built upon, and they continue to be in the forefront. County Extension Agents-Home Economists strive to be continually on the cutting edge of the latest research that affects a major part of every Georgian's daily life food and water. Adequate and affordable housing will become increasingly harder for families, young and old, to obtain. Home economists will be challenged to expand their outreach to those seeking to improve their lifestyle through financial management, "do-it-yourself renovations, and community development dedicated to improving housing conditions. Mr. Herron now goes on to compete as Georgia's representative in the National Beef Cook-Off in September in Seattle, Washington. Prize awards in the competition range up to $5,000 for first place and $10,000 for the Best of Beef Award. As state winner, Mr. Herron received $2,500 plus hotel and travel expenses for the national competition. Mr. Herron's recipe was one of five recipes selected from Georgia's 172 entrants by the National Beef Industry Council for final state competition in Atlanta. The other state finalists were: second place, Bonnie Cooper of Carrollton, $1,500; third place, Catherine Meisner of Atlanta, $1,000; and honorable mentions, Mary Louise Lever of Rome and Deborah Puette of Lilburn, $500 each. STEAK WITH HOT PEPPERCORN-MUSTARD SAUCE 4 1-1Vz Inch-thick 4 ounce beef filets 2 cups beef broth 2 Tablespoons butter 2 Tablespoons peanut oil Vi teaspoon salt Vx teaspoon black pepper, freshly ground 1 1/2 Tablespoons butter 2 Tablespoons shallots, chopped 1 Tablespoon dried green peppercorns, crushed 2 Tablespoons brandy Vi cup whipping cream 1 Tablespoon Dijon mustard 2 Tablespoons prepared horseradish Garnishes: red peppers, yellow peppers, green peppers, cilantro sprigs. Place beef broth in a heavy medium saucepan over medium-high and cook until liquid is reduced to 1/2 cup, about 15 minutes. Set aside. Melt 2 Tablespoons butter in heavy large skillet over medium-high. Add peanut oil. Season with salt and pepper. Add to skillet and cook 2 minutes per side to sear, heat to medium and cook to desired degree of doneness. Transfer slices to heated platter. Cover and keep warm. Clean skillet with paper towel. Add 1 1/2 Tablespoons butter and melt over medium heat. Add shallots and peppercorns, saute 1 minute. Remove from heat. Add brandy. Ignite with match. When flames subside, add reduced broth and whipping cream. Boil until reduced to a thick sauce consistency stirring frequently, and scraping bits that cling to skillet, about 14 minutes. Georgia Hog Inventory Hogs and pigs on Georgia farms on June 1, 1990 were estimated at 1,200,000 head, unchanged from last year but two percent below March 1, 1990, according to the Georgia Agricultural Statistics Service. Breeding inventory, at 175,000 head was five per cent below last year, but three percent above March 1, 1990. Market hog inven tory at 1,025,000 head in creased one percent from a year ago, but two percent below March 1, 1990. Horse Groups Authorized To Conduct DQP Training The U.S. Department of Agriculture announced re cently a list of horse indus try organizations that are certified to carry out desig nated qualified person (DQP) training under the Horse Protection Act. To be licensed as a DQP, a person must have experi ence in the horse business on the level expected from stewards, judges and other show officials and have com pleted the training provided by USDA-certified organiza tions. DQP's may be veteri narians, farriers, horse trainers or have similar oc cupations. A DQP serves as the representative of a show or sale manager who is re sponsible for keeping sore horses from being shown or sold. The Horse Protection Act explicitly forbids the show ing or sale of horses that are sore or that have been sored intentionally by the use of cruel methods, devices or irritants on a horse's legs to accentuate its gait. DQP's are charged with examining horses to ensure enforce ment of this act. While USDA will see that DQP's are present at horse shows or sales, the Georgia. Department of Agriculture will be checking at similar events within the state, as well as rodeos, group trail rides and other functions to make sure each animal has a current negative Coggins test for Equine Infectious Anemia. Any horse without a current negative Coggins test will not be allowed to participate in the event.
