And let me [tell you, I've never seen anything that comes [ close to America. As we prepare I to celebrate the j 214th anniverj sary of our precious Declaration of Independence, * we find that millions of people in a dozen or more nations across Eastern Europe, the Middle East, Asia, Africa and Latin America are, for the first time, also breathing the fresh air of freedom. Our guest columnist this week is Aubrey Morris, editorial writer for WSB Radio, Atlanta, and veteran journalist. Our own Fourth of July represents one of the basic yearnings of all mankind...the desire to live, work and play unfettered by rules and regulations, and unencumbered by a dictator's might, whether to the left or the right of the political spectrum. Such freedom, however, has its price. Although I served in the U.S. Navy during a part of World War II, I was never in a battle. But I lost many friends and relatives in that and subsequent conflicts. As you and I participate in the observance of our Declaration of Independence this year, we find a feeling of euphoria sweeping our land. We like to think that the "Cold War" is over and that the peace we have all been waiting for will be a permanent blessing. 'Tain't necessarily so. Our so-called national holidays, such as Armed Forces Day, Memorial Day, Independence Day and Veterans Day all focus on the role of our several military branches in keeping the light of freedom burning. We must not forget that the (Continued on page 12) Wednesday, June 27, 1990 Farm Front Crops Decline Furtlier Under Hot, Dry Weather Low Soil moisture supplies and above normal temperatures caused the condition of most Georgia crops to decline further since early June, according to the Georgia Agricultural Statistics Service. Some farmers have suspended planting because of the dry conditions. However, planting progress for cotton,.sorghum and soybeans has continued on schedule. Crop development for corn and peanuts has been normal or above normal for thisitime of year; and the weather has been (Continued on page 12) Irvin Advocates Uniform Standards For Organically Grown Commodities With the growing demand for organically-produced food, a certification program for producers is among the many 1990 Farm Bill proposals presently under review. In response to growing interest in this issue, Georgia Commissioner of Agriculture Tommy Irvin prepared testimony on organic certification which was presented to the U.S. House of Representatives Subcommittee on Domestic Marketing, Consumer Relations and Nutrition, and the Subcommittee on Department Operations, Research and Foreign Agriculture, June 19, 1990. "I strongly support the concerted efforts of those involved in developing standards for organically- produced commodities," said Irvin. "Organic certification guidelines are mandatory to establish a single national standard for organic production. Otherwise, we will continue to face a hodgepodge of standards which vary from state to state and hinder interstate commerce." Irvin also stated that the absence of a uniform definition for "organic" has resulted in confusion for producers, consumers and agencies involved in the regulatory process. "Our challenge is to adopt standards which can be both technically and economically applied and scientifically monitored," concluded Irvin. "These guidelines are imperative in order to maintain the integrity of the certification program and the confidence of consumers who choose to purchase organicallygrown products." ag consumer line... Q: I have seen a lot of little worm-like creatures on our porch and driveway since warm weather arrived. Can you tell me how to control these pests? Some have even gotten into the house. A: Our entomologist believes the creatures you described are millipedes. They have come out in droves this spring and summer because of our mild winter and wet spring. They are particularly numerous around creeks and streams and in mulched areas. Apply diazinon or dursban granules in a 15-foot-wide band around the outside of the house. Apply these products on grass or dirt only, not on paved areas. Be sure to read all label directions and precautions carefully before using these products. There is no need to use any insecticide indoors. Since millipedes prefer to stay outdoors, the granules should be the only control measure necessary. Q: I am thinking about getting a shrimp boat and selling the shrimp I catch directly from the boat. Do I need a license from your agency to do this? A. You will need a commercial fisherman's license from the Georgia Department of Natural Resources, Coastal Fisheries Section, to operate a shrimp boat. This license also will allow you to sell your catch wholesale to seafood businesses. (Continued on page 12) Special Recipe Edition Precautions Help Protect Poultry from Hot Weather Summer did not start officially until June 21, but you couldn't prove it by Georgia chickens. They have been feeling summer-like temperatures for the past few weeks. Thus far, however, the birds have handled the heat well overall, according to state agricultural officials. "Although temperatures have reached in excess of 100 degrees in some areas of Georgia, they have resulted in only slight increases in bird mortality," said Georgia Commissioner of Agriculture Tommy Irvin, "but more significantly, there have been some reductions in market weights of broilers in Georgia and much of the Southeast." "The majority of our poultry growers have invested in sophisticated types of evaporative cooling equipment which have helped to keep our houses cooler and our losses to a minimum so far," Irvin said. Georgia Farm ucrs Recipe Edition page 2 SESAME BEEF & BROCCOLI SALAD 1 bunch fresh broccoli (approximately 1 1/2 Ibs.) 1 clove garlic, chopped 1/2 cup vegetable oil 12 ounces mushrooms, sliced 1/4 cup vinegar 1/4 cup soy sauce 1 pound dell roast or leftover beef, sliced into 1/2" slices 1 tablespoon sesame seed, toasted Chop broccoli flowerets from stems, cut stems diagonally into 1/2" lengths. Stir-fry stems and garlic in wok or frying pan using 1/4 cup oil for three to four minutes. Add flowerets and fry two minutes; stir in mushrooms until tender. Combine vinegar and soy sauce and pour over vegetables. Add beef and sesame seeds and stir until warm. Can be served hot or cold. Serves 5. COUNTRY SKILLET SALAD 4 pounds green peppers, cut into strips 10 Vldalia onions, peeled and sliced into rings 6-8 tablespoons vegetable oil 12 ripe tomatoes, sliced 1 7-ounce jar chopped pimiento, drained Salt and coarsely ground pepper In a large frying pan or wok, saute peppers and onions in oil for approximately eight minutes or until crisp-tender. Add pimiento and spread tomato slices over top. Salt and pepper to taste. Cover and reduce heat to warm for five minutes. Can be served warm or cold. Ideal for cookouts. Serves 12. FRESH PEAR SALAD 1/2 cup plain, low-fat yogurt 2 teaspoons grated fresh ginger or 1/2 teaspoon powdered ginger 1 1/2 teaspoons garlic, finely chopped 3/4 teaspoon salt (optional) 1/4 teaspoon pepper 3/4 teaspoon Dijon-style mustard 3 tablespoons mayonnaise plus 2 tablespoons plain, low-fat yogurt 6 large, firm fresh Bartlett pears, diced 1 cup each of green onion and celery, sliced 1/2 cup peanuts, chopped Combine yogurt with next 5 ingredients; stir into mayonnaise/yogurt mixture until smooth. Gently toss dressing with pears, onion and celery; chill. Fold in peanuts. Serves 8. TURKEY APPLE SALAD WITH CURRY DRESSING 2 cups diced apples 2 cups cubed turkey or chicken (cooked) 1 cup chopped celery 1 cup chopped pecans 3/4 cup raisins 2 tablespoons minced Vidalia onion 1/3 cup whipping cream 2 teaspoons curry powder 1/2 cup salad dressing or mayonnaise 1/2 cup flaked coconut (toasted) lemon or pineapple juice salt pepper lettuce leaves Sprinkle apples with lemon or pineapple juice to prevent apples from discoloring. Combine turkey and apples. Mix with celery, pecans, raisins and onions. Salt and pepper to taste. Set aside. To prepare curry dressing, combine cream and curry powder. Beat at medium speed using an electric mixer until soft peaks form. Gently mix in mayonnaise or salad dressing. Fold dressing mixture into turkey and apple mixture and chill. Serve over beds of lettuce; sprinkle with toasted coconut. Serves 6. KIDNEY BEAN SALAD 2 15-ounce cans kidney beans, drained 1/4 cup chopped onion 3 tablespoons mayonnaise 1/2 cup chopped celery 1/4 teaspoon salt 1 medium-sized apple, diced 1/2 cup diced Cheddar cheese Combine first 5 ingredients in a large bowl, cover and chill for 2 hours. When ready to serve, stir in diced apple and cheese. Serve on lettuce leaves. Serves 4. CORN SALAD 2 20-ounce cans whole kernel corn, drained 1 medium onion, chopped 1 bell pepper 1/4 cup mayonnaise salt & pepper to taste Combine all ingredients in large bowl. Refrigerate until ready to serve. Serves 4-6. ENGLISH PEA SALAD 3 large cans English peas, drained 3 paper thin slices of onion, diced 2 hard-cooked eggs, diced 2 tablespoons mayonnaise Combine all ingredients in a large bowl and chill before serving. FROZEN CRANBERRY SALAD 1 8-ounce package cream cheese, softened 1 teaspoon lemon juice 12 ounces whipped topping 1 8-ounce can crushed pineapple, drained 1 16-ounce can whole cranberry sauce 1/2 cup chopped pecans Combine cream cheese, lemon juice and whipped topping, beat until smooth. Add remaining ingredients; stir to combine. Pour into mold and freeze until set. Serves 12. FROZEN CABBAGE VINAIGRETTE 1 large head cabbage, Shredded 1 green pepper, chopped 1 large carrot, shredded 1 teaspoon salt 1 cup vinegar 1 cup sugar 1/4 cup water 1 teaspoon dry mustard 1 teaspoon celery seeds Combine vegetables; sprinkle with salt, and let stand 1 hour. Drain mixture if water accumulates. Combine remaining ingredients in a saucepan. Bring to boil; boil 1 minute. Cool. Pour over cabbage mixture; stir well. Freeze, leaving 1/2 inch of head space, in plastic freezer bags or containers. Before serving, thaw in refrigerator. Serves 8-10. GEORGIA FRUIT SALAD 1/2 cantaloupe 1/2 honeydew melon 1 cup strawberries 1 cup sliced peaches 1 cup apple chunks 1 cup banana lettuce leaves and parsley (garnish) Peachy Dip 2 peaches 1/2 cup sour cream or plain non-fat yogurt 2 tablespoons packed brown sugar 1 1/2 teaspoon lemon juice Mix all ingredients listed in the Peachy Dip in a blender; cover and blend until smooth (12-15 seconds). Refrigerate one hour before serving. Display fruit on serving platter around the Peachy Dip. Garnish if desired. SPINACH SALAD 1 pound spinach, washed and drained 6 slices cooked and crumbled bacon 1 sliced red onion 2 hard-boiled eggs, chopped 1/2 cup vegetable oil 2 tablespoons cider vinegar 1/2 teaspoon salt 1/4 cup sugar 1 teaspoon grated onion 1/4 teaspoon mustard Combine spinach, bacon, sliced onion and chopped eggs. Refrigerate. Whisk together remaining ingredients for salad dressing. When ready to serve add dressing to salad and toss. Serves 8. VIDALIA ONION RELISH 1 1/2 gallons ground Vidalia onions (14-16 medium onions) 1/2 cup salt 1 quart apple cider vinegar 1 teaspoon turmeric 1 teaspoon pickling spice 1 teaspoon pimiento, chopped 4 1/2 cups of sugar Grind enough Vidalia onions to yield 1 1/2 aliens, add 1/2 cup salt and let stand 30 minutes, queeze juice from onion/salt mixture and discard juice. To onions add vinegar, sugar, spices and pimiento. Bring to a boil and cook for 30 minutes, stirring often. Pack both onions and cooking liquid to cover in hot jars, leaving 1/2-inch head space. Remove air bubbles. Wipe jar rims. Adjust lids. Process 10 minutes in a boiling water bath. Makes about 8 pint jars. page3 BRAN MUFFINS 3 cups bran cereal, divided 1 cup boiling water 1/2 cup salad oil 2 1/2 cups all-purpose flour 1 teaspoon salt 1 1/2 cups sugar 2 1/2 teaspoons soda 2 eggs, beaten 2 cups buttermilk 1 cup seedless raisins Combine one cup cereal, boiling water and salad oil, mixing well. Set aside. Combine flour, salt, sugar, soda and remaining cereal. Add eggs and buttermilk; mix well. Stir in cereal/oil mixture; add raisins. Spoon batter into wellgreased muffin tins and bake at 400 for 15-20 minutes. (Can make ahead and freeze.) Makes 3-4 dozen muffins. INDIAN CORN MEAL 1 cup cream style corn 1 cup self-rising white corn meal 1/3 cup vegetable oil 2 eggs, beaten 1/2 cup chopped onion 1/2 cup milk 1/2 cup grated Cheddar cheese 1 small pod sweet banana pepper salt & pepper (optional) Mix all ingredients together and pour into 9-inch loaf pan. Bake at 375 for 35-40 minutes or until lightly browned. Can be wrapped and frozen for later use. GOOD MORNING MUFFINS 1/2 pound sausage butter, melted 2 cups all-purpose flour 1 tablespoon baking powder 1/4 teaspoon salt 2 tablespoons sugar 1 egg, slightly beaten 1 cup milk 1/2 cup grated cheese Brown sausage, stirring to crumble; drain and reserve drippings. Add enough butter to drippings to equal 1/4 cup. Set aside. Combine flour and next three ingredients in medium bowl. In separate bowl, stir together egg, milk and drippings. Add to dry ingredients; stir to moisten. Fold in cheese and sausage. Spoon into greased muffin tin, filling 3/4 full. Bake at 375 for 20 minutes. Makes 1 dozen muffins. APPLE NUT CINNAMON MUFFINS 1 3/4 cups raisin bran cereal 1 1/4 cups all-purpose flour 3/4 cup sugar 1 1/4 teaspoons baking soda 3/4 cup buttermilk 1/4 cup peanut oil 1 large egg 1/2 cup peeled, finely-chopped apple 1/2 cup chopped, roasted peanuts 2 tablespoons butter, melted 1 1/2 tablespoons sugar 1/2 teaspoon cinnamon Preheat oven to 400. Grease 12 half-cup muffin cups. Mix first 7 ingredients together until well blended. Let stand 15 minutes at room temperature. Mix remaining ingredients in small bowl. Spoon 1 tablespoon batter into bottom of each prepared cup. Cover evenly with apple mixture. Spoon remaining batter over the apple mixture. Bake about 23 minutes or until tester comes out clean. Cool muffins in cups on rack 3 minutes. Serve hot. Makes 12 muffins. CHEW BREAD 1/2 cup butter, softened 1 box (2 cups, packed) light brown sugar 2 eggs 2 cups self-rising flour 1 teaspoon vanilla 1 cup chopped pecans In a large mixing bowl, combine butter and brown sugar; add eggs and beat well. Blend in remaining ingredients. Pour into 9 x 13-inch baking pan. Bake at 300 for 35-45 minutes, until set. GARDEN VEGETABLE CROISSANTS 1 8-ounce package cream cheese, softened 3 tablespoons chopped carrot 1 teaspoon each: chopped parsley, celery, red pepper, green pepper 1/2 teaspoon seasoned salt 4 large croissants thinly sliced cucumber alfalfa sprouts Beat cream cheese, vegetables and salt in small mixer bowl or food processor until light and fluffy. Refrigerate, covered, 3-4 hours to allow flavors to blend. To serve, slice croissants from side to side. Place 3-4 slices cucumber on bottom half. Top with cream cheese mixture; sprinkle with alfalfa sprouts. Cover with top of croissant. Serves 4. SUMMER VEGETABLE CHOWDER 1/4 cup margarine 1 cup chopped onion 1 clove garlic, minced 1 cup chopped celery 4 cups beef bouillon 3 cups cubed potatoes 1 cup tomato chunks 2 cups fresh corn kernels 2 cups sliced carrots 1/2 teaspoon salt 1/2 teaspoon ground thyme 1/2 teaspoon celery seed 2 tablespoons cornstarch 1/2 cup water Melt margarine in 5-quart stock pot over medium heat. Add onion and garlic and cook until transparent. Add celery, bouillon, potatoes, tomatoes, corn, carrots, salt, thyme and celery seed. Bring to a boil over medium heat. Cover and simmer 30 minutes or until vegetables are tender. Stir together cornstarch and water until smooth. Add to soup. Stirring constantly, bring to boil over medium heat and boil 1 minute. Makes 3 1/2 quarts or enough for 8 to 10 servings. BEEF STEW STROGANOFF 1 1/2 pounds beef stew meat 1/2 package onion soup mix 1 can mushroom soup 1/2 pound fresh mushrooms 1/4 cup burgundy wine 1/2-1 cup sour cream Cut meat into bite size cubes and place in the bottom of a greased baking dish. Top with next 4 ingredients. Bake uncovered in a 300 oven for 2 1/23 hours. Stir in desired amount of sour cream and serve over rice or pasta. Serves 6-8. CREOLE CHICKEN STEW vegetable cooking spray 2/3 cup chopped onion 1/2 cup chopped green bell pepper 1/2 cup thinly sliced celery 1 14 1/2-ounce can tomatoes, undrained & coarsely chopped 110 3/4-ounce can tomato soup, undiluted 2/3 cup chablis or white cooking wine 3/4 teaspoon dried whole thyme 1/4 teaspoon garlic powder 1/8 to 1/4 teaspoon ground red pepper 2 5-ounce cans chunk white chicken in water, drained 1/2 cup uncooked instant rice Coat a large saucepan with cooking spray; place over medium hjgh heat until hot. More Soups and Stews on page 4 page 4 BURGUNDY BEEF STEW 1 cup burgundy wine 1 clove garlic, finely minced 1 bay leaf 2 whole cloves 1 teaspoon salt 1/2 teaspoon pepper 1/4 teaspoon thyme 2 pounds stewing beef, extra lean, cut into 1-inch cubes 1/4 cup olive oil 2 10 1/2-ounce cans beef broth 12 small onions, whole 12 fresh mushroom caps 3 large carrots, cut into 1-inch slices Hot cooked rice or hot buttered noodles Combine burgundy, garlic, bay leaf, cloves, salt, pepper, and thyme. Blend well. Pour over beef in a shallow baking dish; lightly cover and refrigerate overnight. Drain meat, reserving marinade. Remove cloves and bay leaf and discard. Heat oil in heavy dutch oven over medium heat, add beef and brown on both sides. Add beef broth and reserved marinade. Bring to a boil. Cover; reduce heat and simmer for one and a half (1 1/2) hours. Add onions, mushrooms and carrots. Cover and cook for an additional thirty (30) minutes. Serve on a bed of hot rice or noodles. Serves 6. HUNGARIAN GOULASH 1/2 pound lean veal cut in 1-inch cubes 1 1/2 pounds lean beef cut in 1-inch cubes 1 cup flour 1 tablespoon shortening 1 large onion, diced 1 teaspoon paprika 1 teaspoon salt 1 14-ounce can whole tomatoes, undrained 5 small potatoes, peeled 1 cup water, optional 1/2 can tomato soup, optional Roll meat cubes in flour, brown in shortening. Add onions, paprika, salt. Add tomatoes and potatoes. Simmer 1 hour or until potatoes are tender. Add additional water and tomato soup if mixture appears too dry. Serves 6. OLD FASHIONED LENTIL SOUP 1 pound dried lentils 2 large onions, diced 2 large carrots, diced 2 large potatoes, diced 2 ham hocks salt and pepper to taste 2 tablespoons shortening 1 large onion, diced 2 tablespoons flour Wash lentils. Place in large saucepan with one onion, carrots, potatoes, ham hocks and enough water to cover. Salt and pepper as desired. Bring to a boil and reduce heat, simmer for 1 to 1 1/2 hours. In a medium-sized skillet, melt shortening and saute remaining onion. Over medium heat, stir in flour and a small amount of liquid from soup. Stir until thickened. Remove ham hocks from soup and add flour mixture stiring to blend. Add more water if needed. Serves 10-12. STUFFED TURKEY BREAST 1 6-ounce package seasoned stuffing mix 1/4 cup butter or margarine, divided 1/2 cup chopped celery 1/4 cup chopped onion 3-pound boneless turkey breast, skinned 2 tablespoons honey Prepare stuffing mix according to package directions. Saute celery and onion in 2 tablespoons butter or margarine until celery is tender and onio is transparent. Mix celery and onion with stuffing mix. Lay turkey breast flat on wax paper, skin side down. Remove any tendons, skin or fat. Pound the breast to flatten and form a more even thickness. Spoon stuffing mixture into center of turkey breast leaving a 2-inch border at sides. Starting at bottom, fold in sides of turkey breast over filling. Tie turkey breast roll securely in several places with string. Place, seam side down, on a rack in a roasting pan. Mix honey and remaining butter or margarine together. Pour 1/2 of honey mixture over roll. Insert meat thermometer making sure bulb rests in meat of turkey. Bake, covered, at 325 for 30 minutes. Uncover and continue baking for 1 1/2 hours or until meat thermometer registers 185. Transfer turkey to cutting board; remove string and let stand 10 minutes before slicing. Serves 8. MACARONI CASSEROLE 1 pound ground beef 2 medium onions, chopped 1 bell pepper, chopped salt and pepper to taste 2 cups macaroni, uncooked 2 15-ounce cans tomato sauce 1 cup grated Cheddar cheese In large skillet, brown ground beef. Stir in onions and pepper. Drain and set aside. Cook macaroni until slightly tender; drain. Combine ground beef mixture, macaroni and tomato sauce. Pour into a 9x12-inch casserole and bake at 350 F. for 20 minutes. Remove from oven and top with cheese. Bake 10 minutes longer. Serves 6. SWEET AND PUNGENT PORK MEDALLIONS 1 pound well-trimmed pork tenderloin 1/2 cup water 1/3 cup distilled vinegar 1/4 cup strained apricot preserves 1 tablespoon each cornstarch, sugar, dry sherry, lite soy sauce 1 clove garlic, minced 2 cups hot cooked rice 2 cups steamed broccoli flowerets Cut pork tenderloin crosswise into 12 pieces, each approximately 1-inch thick. Place each piece, cut side down, between waxed paper on flat surface and flatten with mallet or flat side of frying pan to 1/4-inch thick. Meanwhile combine water, vinegar, preserves, cornstarch, sugar, sherry, soy sauce and garlic in small bowl; reserve. Brown pork medallions in large nonstick frying pan, 6 at a time, over medium-high heat, 2 to 3 minutes on each side. Remove to platter, keep warm. Add preserves mixture to frying pan and cook for 3 to 5 minutes or until thickened, scraping up browned bits from pan. Add pork medallions, turning over to coat. Combine rice and broccoli; place on serving platter. Arrange pork medallions over rice mixture. Serves 4. MARINATED PORK ROAST 1 cup low-sodium soy sauce 2 tablespoons lemon juice 1 tablespoon finely chopped garlic 2 tablespoons tarragon 2 tablespoons basil 3-4 pound boneless pork loin roast In small bowl combine all ingredients except pork; mix well. Place pork roast in plastic bag. Pour marinade mixture over pork. Marinate in refrigerator overnight, or at least five hours. Preheat oven to 325. Remove pork from marinade; reserve marinade. Place pork in shallow roasting pan. Insert meat thermometer into center of thickest part of pork. The bulb of the thermometer should not rest on fat. Roast for 2-3 hours until meat thermometer reaches 160 for medium well or 170 for well done. Bast with reserve marinade every 30 minutes. To make slicing easy let stand 15 minutes. With dull side of a heavy knife, pound chicken breast to flatten to about 1/2inch thick. Over medium-high heat, heat butter in a large skillet, Saute chicken about 3 minutes on each side until golden. Add apple juice, onion, garlic and thyme. Cover and cook 10-12 minutes, or until chicken is tender. Remove chicken; keep warm. Heat liquid to boiling. Add mustard to skillet. Stir until well-blended. Add apples slices. Pour sauce over chicken. Serves 4. HONEY BAKED HAM 1 ready-to-eat 10-12 pound ham with the bone 3 tablespoons Dijon mustard 1 cup brown sugar 1/2 cup honey 1 teaspoon cinnamon 1 1/2 cups apple juice Using a sharp knife, remove the layer of skin from ham, leaving a thin layer of fat to keep the meat juicy while baking. Score the surface of the ham in a diamond pattern, without cutting into the meat. Place a whole clove in the center of half of the diamonds. Brush top of ham with Dijon mustard and place ham in a roasting pan. Stir in flour and cook 2-3 minutes. Add milk and stir until a thick, smooth cream sauce develops. Add paprika, lemon juice and ham. Allow to cool slightly. Add beaten egg yolks, then fold in beaten egg whites. Pour into buttered 1 1/2-quart souffle dish and bake at 400 for 40-45 mintues. Serves 6. Stir in taco seasoning and 1 cup water; simmer for 3-4 minutes, set aside. Place crushed chips in an ungreased 2-quart casserole dish. ANYTIME PIZZA 1 8-ounce can refrigerated crescent rolls 5 eggs 1/2 teaspoon oregano 1 6-ounce package Canadian bacon, diced 1 6-ounce can mushrooms, well-drained 1/4 cup chopped green pepper 2 cups shredded mozzarella cheese 1/4 cup grated Parmesan cheese Preheat oven to 350. Separate dough; press into bottom and 2 inches up side of 9x13 baking dish. Set aside. In small bowl, beat eggs and oregano until well-blended. Pour eggs over crust. On hard surface with meat mallet or similar flattening utensil, pound chicken to 1/4-inch thickness. Dredge chicken, one piece at a time, in flour mixture, coating evenly. In large frypan, place oil and heat over medium temperature. Add chicken and saute' about 6 minutes or until light brown on each side and fork can be inserted with ease. Remove chicken to platter and keep warm. Spoon 2 tablespoons of Blue Cheese Pecan Sauce over each chicken breast and sprinkle with 1/4 teaspoon reserved crumbled blue cheese. Top with chopped parsley and white pepper and garnish with parsley sprigs. Serve remaining sauce in a sauce boat. Serves 4. Blue Cheese Pecan Sauce In saucepan, place 3 tablespoons margarine and melt over medium heat; add 3 tablespoons flour and stir until smooth. Stirring constantly, add 1 1/2 cups milk, 1 teaspoon dry sherry, 1/4 teaspoon minced garlic and 1/2 cup chopped pecans, cook until sauce thickens. From 4 oz. package blue cheese, reserve 2 teaspoons for topping on chicken. Add remaining cheese to sauce and remove from heat. CHICKEN WITH WINE AND ARTICHOKE HEARTS 5 chicken breasts 2 tablespoons butter 2 tablespoons flour 1 8-ounce jar sliced mushrooms 1/2 cup white wine 1 can cream of chicken soup 1/2 cup half and half salt and pepper to taste 1/4 teaspoon tarragon 1 4 1/2-ounce jar artichoke hearts, drained 2 tablespoons chopped green onion cooked rice In a large skillet or electric frying pan, brown chicken in butter; set chicken aside. Add flour, mushrooms, wine, soup, half and half and spices; stir well. Return chicken to skillet, cover and simmer one hour, basting occasionally. Top chicken with artichoke hearts and green onion; simmer 5 minutes more. Serve over rice. Serves 4-5. SPIRITED STEAK 1 thick flank steak or London broil, (about 1 1/2-pounds) 2/3 cup dry red wine 2 teaspoons sherry 1 teaspoon soy sauce a few drops of hot sesame oil dash freshly ground ginger 1/8 teaspoon oregano, crumbled 1/8 teaspoon marjoram, crumbled freshly ground black pepper Mix together wine, sherry, soy sauce and seasonings. Place steak in a long glass baking dish and pour marinade over meat. Cover and chill at least 12 to 18 hours, turning meat once or twice. Preheat broiler. Remove steak from marinade. Pat dry and broil 4 inches from heat for about 5 minutes on each side. To serve, cut thin slices diagonally across grain. Can be served with rice. Serves 6. 'RED PLUM SAUCE 1 cup red plum jam 3 tablespoons lemon juice 1/2 cup orange juice 1 tablespoon cornstarch 1 clove garlic, finely chopped Combine all ingredients in a saucepan. Cook over medium heat, stirring constantly. Bring to a boil. Serve hot with Quail in Wine. Makes about 1 1/2 cups or 4 (3-ounce) servings; each serving contains 241 calories. SESAME STEAK AND MUSHROOMS 2-2 1/2 pounds boneless sirloin steak 8 ounces fresh mushrooms, sliced thin 3-4 green onions, sliced thin, with some green leaf lettuce green onions carrot curls for garnish Dressing: 1/4 cup low sodium soy sauce 1/4 cup wine vinegar 2 tablespoons Dijon mustard 3 tablespoons dry sherry 2 tablespoons honey 1 teaspoon finely minced fresh ginger root 1 large garlic clove, finely minced 1/4 cup corn oil 3 tablespoons oriental sesame oil Broil steak to desired doneness. (Rare to medium-rare is best). Let cool and slice into bitesize pieces. Combine all ingredients for dressing except oil and mix well. Add oils and shake in a tightly capped jar. (Dressing can be made several days ahead and refrigerated.) Pour dressing over steak and mushrooms. Toss gently, cover and let marinate in refrigerator 1-2 hours, stirring several times. To serve: drain excess dressing and spoon onto lettuce-lined platter. Sprinkle with chopped onions and carrot curls, if desired. Can be served hot or cold. Serves 5-6. Cook's Note: This is an oriental recipe which combines a family favorite combination of steak and mushrooms. The dressing has an oriental spicy flavor without being overly salty. GRILLED POTATO/ONION BAKE 2 tablespoons butter, softened 4 large baking potatoes, peeled 2 medium onions 1/4 cup grated Parmesan cheese salt and pepper, to taste 2 tablespoons butter Spread 2 tablespoons softened butter on a 24x16-inch sheet of heavy duty foil. Slice potatoes and onions and place on foil. Sprinkle with cheese, salt and pepper. Dot with 2 tablespoons butter and seal foil with a double fold. Place on an outdoor grill over low coals (or bake at 350") for 50 minutes. SCALLOPED CORN 1/2 pound bacon 2 cups creamed style corn (17-ounce can) 3 eggs, beaten 1/2 cup milk 1/2 cup chopped onion 2 tablespoons butter, melted 1/2 cup herb-seasoned stuffing mix salt and pepper to taste Cook bacon until crisp and drain well. Break crisp bacon into small pieces. Combine all ingredients in a medium mixing bowl, mixing thoroughly. Pour mixture into a lightly greased casserole or loaf pan. Bake in a preheated oven at 350 for approximately 45 minutes or until center of mixture is firm. Serves 6. BACON STUFFED SWEET POTATOES 8 large sweet potatoes 1/4 cup butter or margarine 1 cup sour cream 1 egg 2 teaspoons sugar 1 teaspoon salt 9 crisp bacon slices, crumbled paprika Wash potatoes. Grease skins of potatoes and bake at 375 for 1 hour or until soft to touch. Cut a long oval slice from top of potato and scoop out potato pulp into a bowl, add butter, sour cream, egg, salt and sugar to potatoes. Beat well, stir in crisp crumbled bacon. Place mixture back into potato shells, stuffing them high. Sprinkle with paprika. Bake at 400 for 10-15 minutes or until heated through. Serves 8. MARINATED VEGETABLES 1 cauliflower head, sectioned 6 carrots, sliced 1/2 pound mushrooms, sliced 4 stalks celery, sliced 2 red onions, sliced 1 14-ounce can artichoke hearts, drained and quartered 1 9-ounce jar stuffed green olives, drained 1 6-ounce can ripe pitted olives, drained 2 cloves garlic 3/4 cup vegetable oil 1 teaspoon black pepper 1/2 cup red wine vinegar 2 teaspoons dry mustard 2 teaspoons salt 1 tablespoon oregano leaves Combine first 9 ingredients in large bowl. Mix the remaining indredients well and pour over vegetables. Cover and let marinate in refrigerator 24 hours. Stir in cooking sherry and garlic. Bake at 400 for 15 minutes, stirring occasionally. Remove chicken from oven. Reduce heat to 350. Spoon spinach over chicken. Combine butter and sherry. Pour over spinach and top with bread crumbs. Bake at 350 for 20 minutes or until bubbly. Serves 4. MARINATED ITALIAN BEANS 1-1/2 pounds fresh green beans 3/4 cup water 16 ounces commercial Italian salad dressing 1/2 cup lemon juice 2 tablespoons tarragon vinegar 1/2 teaspoon dried whole basil 1/4 teaspoon pepper 1/8 teaspoon dried whole oregano 2 cloves garlic, crushed 1 2-ounce jar pimiento lemon slices (optional) Wash beans. Trim ends and remove strings. Place beans in a 12x8x2-inch baking dish; add water. Cover with heavy-duty plastic wrap and microwave at high for 12-14 minutes, or until crisp-tender, stirring after 6 minutes. Let stand covered 2 minutes; drain. BLACKEYED PEAS WITH ITALIAN SAUSAGE 1 Ib. lean Italian sausage 2 15-ounce cans blackeyed peas, undrained 1/2 cup chopped onion 1/2 teaspoon garlic powder 1/4 teaspoon black pepper 4 tablespoons cornstarch 1/4 cup water Cook sausage in large skillet, drain off fat. Add onion, garlic powder and pepper. Continue to cook until onions are transparent. Add blackeyed peas to sausage mixture. Fill one of the empty cans with water, add to peas and sausage. Bring to a boil. Reduce heat and simmer for 25 minutes, stirring often. Mix together cornstarch and water, add this to peas and sausage and stir until thickened. Serve over rice. Serves 6-8. APPLE AND PECAN-FILLED SQUASH 2 medium acorn squash 1/4 cup brown sugar 1/4 cup butter or margarine, melted 1 cup chopped, unpeeled apple 1/4 cup chopped, toasted pecans Slice acorn squash in quarters. Remove seeds. Scoop a teaspoon of squash pulp out of each quarter to make extra space for apple mixture. Place in microwave-safe dish and add 3 tablespoons water. Combine brown sugar, butter or margarine and chopped apple, mix well. Spoon into squash shells. Cover (leaving a vent for steam to escape) and microwave at 50% power for 5 minutes. Turn dish 1/ 4 of a turn and microwave at full power for 7 minutes. Sprinkle with pecans. Squash should be tender and moist. Serves 8. PICANTE BLACKEYED PEAS 2 15-ounce cans blackeyed peas 1 large bell pepper, chopped 1 large onion, chopped 2 tablespoons butter 2 tablespoons Picante sauce (Picante sauce found in grocer's Mexican food section.) Cook peas in a large saucepan. Saute pepper and onion in butter for 2 minutes. Add sauce. Stir into peas and simmer until thick. Serve hot. Serves 4. SMOKY BARBECUE BEAN BAKE 2 one-pound cans great northern or navy beans, drained 1 1/3 cups mild barbecue sauce 3/4 cup plain bread crumbs 1/2 pound cooked ham, pork, or smoked turkey, diced 1/2 large green pepper, chopped 1/2 large onion, chopped 1/4 teaspoon liquid smoke 1/2 cup shredded Cheddar cheese 1 1/2 tablespoons cooked crumbled bacon (optional) In a bowl, combine beans, barbecue sauce, bread crumbs, ham, green pepper, onion and liquid smoke. Place mixture in a greased glass baking dish. Top with cheese and bacon. Bake at 375 for 35-40 minutes. Serve warm. Recipe can be doubled for a large crowd. VIDALIA ONION DEEP DISH 1 1/8 cup regular rice, uncooked 1/2 cup butter 3 1/3 pounds Vidalia onions, chopped 1 1/8 cup shredded Swiss cheese 1 cup whipping cream 2 tablespoons minced parsley salt and white pepper to taste paprika Cook rice in a large pot of boiling water for 5 minutes. Drain well. Melt butter in a heavy saucepan over medium heat. Add onions and cook until tender (approximately 20 minutes, stirring occasionally. Mix cheese and cream; add rice, parsley, and salt and pepper. Place in a generously buttered 13x9inch casserole dish. Sprinkle with paprika. Bake at 325 for one hour. Serves 10-12. Note: this dish is great as a side dish for meat. It can be prepared a day ahead and refrigerated. Bake when ready to serve. SPRING CASSEROLE 1 1/2 pounds zucchini 4 green onions 2 cups crushed saltine crackers 6 mushrooms, sliced 1 *99> beaten 2 tablespoons butter 1/4 teaspoon fresh ground pepper 1/4 teaspoon salt 1/4 teaspoon oregano, optional 1/2 cup grated Cheddar cheese Wash and cut zucchini and onions in 1/4" slices. In a medium sized sauce pan boil zucchini and onions until tender. Drain. Combine remaining ingredients, except cheese, and add to zucchini. Place in a greased 8-inch casserole and top with cheese. Bake at 350 for 30 minutes. Serves 4. VEGETABLE TREE 6 cups assorted fresh vegetables for dipping choosing from: broccoli or cauliflower radishes bell pepper strips celery carrots square-shaped crackers Arrange vegetables on platter to resemble a Christmas tree. Place broccoli florets first to form a dark green background for the tree. Decorate with other vegetables. Place crackers at the base of tree to resemble holiday presents. Serve with your favorite dipping sauce or with Lemon Curry Dip (recipe above). Makes 12 servings; each serving contains approximately 39 calories. SQUASH AND RICE BAKE 2 medium yellow summer squash, diced 1 medium zucchini, diced 1 small onion, chopped 1 1/2 cups shredded Monterey Jack cheese 1 cup grated Parmesan cheese 11/2 cups milk 2 eggs, beaten 1 cup instant rice, uncooked 1/2 teaspoon garlic salt 1/2 teaspoon Italian seasoning 1/8 teaspoon pepper Combine all ingredients in large bowl: mix well. Pour into greased 9-inch square baking dish. Bake at 375 for 35 minutes or until liquid is absorbed. TOMATO PIE 1 9-Inch deep dish pie shell 3 medium tomatoes, sliced 6 strips bacon, fried and crumbled 1 cup grated sharp Cheddar cheese 1 cup mayonnaise Bake frozen pie shell 5-7 minutes. Place tomatoes in bottom of pie shell; top with crumbled bacon. Combine cheese and mayonnaise; pour over tomatoes. Bake at 350 for 35-40 minutes. Serves 4. EGGPLANT LASAGNE ROLL-UPS 4 cups peeled, diced eggplant 1/2 cup chopped onion 2 tablespoons vegetable oil 1 clove garlic, minced 1 26-ounce jar spaghetti sauce 2 tablespoons water 1/2 cup sliced black olives 15 ounces ricotta cheese 2 cups shredded mozzarella cheese 1/2 cup shredded Parmesan cheese, divided 2 tablespoons minced parlsey, divided 8 lasagne noodles, cooked In a large skillet combine eggplant, onion, vegetable oil and garlic. Saute' until onions are transparent and eggplant is tender. Pour spaghetti sauce and water into skillet. Add black olives and simmer for 10-15 minutes. Combine rocotta, mozzarella, 1/4 cup Parmesan cheese and 1 tablespoon parlsey; mix well. Spread 3 tablespoons of cheese mixture over each lasagne noodle and roll-up. Spread 1 cup of eggplant sauce in bottom of large baking dish. Place lasagne noodles, seam side down into dish. Pour remaining sauce over roll-ups and top with remaining Parmesan cheese and parsley. Bake at 350 for 45-50 minutes. Serves 8. page8 DATE-FILLED OATMEAL BARS 2 cups all-purpose flour 2 cups quick-cooking oats, uncooked 1 teaspoon baking soda 1/4 teaspoon salt 1 cup firmly-packed brown sugar 3/4 cup butter or margarine 1 8-ounce package pitted dates, chopped 1 cup sugar 1 cup water Combine flour, oats, soda, salt and brown sugar. Cut in butter with a pastry blender until mixture resembles coarse meal. Press half of mixture into an ungreased 12x8x2-inch baking pan. Combine dates, sugar and water in a medium saucepan; cook over low heat until sugar dissolves and dates are soft. (Mixture should be thick and mushy.) Spread mixture evenly over dough in pan; cover with remaining oats mixture. Bake at 325 for 40 minutes or until lightly browned. Cut into 2x1-inch bars while warm. Remove to wire racks to cool. Makes 4 dozen bars. CRUNCHY APPLE PIE 2 cups chopped cooking apples 1/2 cup firmly packed brown sugar 1/2 cup granulated sugar 1/2 cup all-purpose flour 1 egg yolk, beaten 1/2 teaspoon vanilla extract 1/2 teaspoon freshly squeezed lemon juice 1/2 cup chopped pecans 1 egg white, beaten until foamy 1 9-Inch unbaked pie shell Put chopped apples in a large bowl. Add sugar, flour, egg yolk, vanilla, lemon juice and pecans; mix well. Add egg white. Stir well and pour mixture into unbaked pie shell. Bake at 350 for 30-45 minutes or until apples are tender and brown. Makes one 9-inch pie. SWEET POTATO PIE WITH CARAMEL NUT TOPPING 2 cups cooked, pureed sweet potatoes 1 egg, slightly beaten 1/4 cup milk 1 teaspoon vanilla 1/8 teaspoon salt 3/4 cup sugar 1/4 cup butter or margarine, melted 1/4 teaspoon nutmeg Caramel Nut Topping: recipe follows Cream Cheese Crust: recipe follows Mix all ingredients together until mixture is smooth. Pour into unbaked Cream Cheese Crust (if desired) and bake for 35 minutes in a preheated 350 oven. Remove from oven and top with Caramel Nut Topping and bake for an additional 15 minutes. Cream Cheese Crust 1 3-ounce package cream cheese, softened 1/4 cup butter or margarine, softened 1 cup all-purpose flour Combine cream cheese and margarine; blend well, then stir in flour. Shape dough into a ball. Place ball between two sheets of waxed paper. Roll out into a circle to fit a deep dish pie plate. Remove one sheet of waxed paper and position Cream Cheese Crust into pie plate. Remove top sheet of waxed paper and flute the edge of crust. Fill with sweet potato mixture and bake as directed above. Makes 1 deep dish pie. Caramel Nut Topping 1 cup chopped pecans 1/4 cup butter or margarine, melted 1/4 cup light brown sugar Combine all ingredients and mix well. Distribute evenly over Sweet Potato Pie. SOUR CREAM PECANS 1 cup sour cream 2 cups sugar 1 teaspoon vanilla 1/4 teaspoon baking soda 2 tablespoons butter or margarine 4 cups pecan halves Combine sour cream and sugar. Cook over medium heat (240) to almost hard ball stage. Turn off heat. Add vanilla, baking soda and butter (or margarine). Beat for 2-3 minutes. Add pecans, stirring to coat. Turn onto lightly buttered baking sheet. Cool and separate pecan halves. WORLD'S MOST DELICIOUS COOKIES 1 cup margarine or butter 1 cup sugar 1 cup light brown sugar 1 egg 1 cup vegetable oil 1 cup regular oats 1 cup crushed corn flakes 31/2 cups all-purpose flour 2 teaspoons vanilla 1 teaspoon salt 1 teaspoon baking soda 1/2 cup flaked coconut 1/2 cup chopped pecans Preheat oven to 325. BLUEBERRY PEACH COBBLER 1/3 cup sugar 1 tablespoon cornstarch 3/4 cup unsweetened orange juice 2 cups fresh blueberries 2 cups fresh peaches, sliced 1 teaspoon grated lemon peel Biscuits 1 cup all-purpose flour 1 tablespoon sugar 1 teaspoon baking powder 1/4 teaspoon baking soda 1/2 cup lowfat milk 3 tablespoons vegetable oil 1 tablespoon sugar vegetable spray In medium saucepan, combine 1/3 cup sugar and cornstarch. Gradually stir in orange juice. Cook over medium heat until mixture comes to a boil and is slightly thickened and clear, stirring constantly. Stir in bjueberries and peaches; cook until fruit is hot. Stir in lemon peel; set aside. Heat oven to 375. Lightly spoon flour into measuring cup; level off. In medium bowl, combine flour, 1 tablespoon sugar, baking powder and baking soda. Stir in milk and oil just until dry ingredients are moistened. Spray baking dish with vegetable spray and pour hot fruit mixture into 1 1/2 quart casserole. PUMPKIN CHEESECAKE CRUST 1 cup graham cracker crumbs (about 20 two-inch squares) 1/2 cup finely chopped pecans 1/3 cup butter or margarine, melted 1/4 cup sugar Filling 3 8-ounce packages cream cheese at room temperature 8 ounces low-fat ricotta cheese 6 eggs, at room temperature 2 cups pumpkin puree 1 3/4 cups sugar 1/2 teaspoon ground cinnamon 1/2 teaspoon ground ginger 1/2 teaspoon ground nutmeg 1/4 teaspoon ground cloves Heat oven to 325. In a bowl, mix crumbs and remaining crust ingredients with a fork until wellblended. Pour into an 8x3-inch or a 9x2-inch springform pan. Using the back of a spoon, press crumbs onto bottom and up side of pan to within one inch of top of pan. Set aside. In a large mixing bowl, with mixer at medium speed, beat cream cheese until smooth. Add remaining ingredients and beat just until blended. Pour into a crumb-lined pan. Bake 1 hour and 30 minutes (or 1 hour and 15 minutes for a 9-inch pan) or until lightly golden on top.
