In fact, they already are making rapid progress toward their goal of making pork the meat of choice by the year 2000. But the next decade also will present many serious challenges. Pork producers now have in place a Quality Assurance Program that effectively addresses food ^safety, a subject which is certain to be of concern to consumers in the near future. Pork and pork products must compete with other meats in Our guest columnist this week is Roger Bernard, executive vice-president, Georgia Pork Producers Association, P.O. Box 7985, Macon, Ga. 31209-7985.____________ the refrigerated cases at grocery stores and supermarkets. If producers expect to continue to be competitive for their market share of the consumers' food dollar, they must make a commitment to quality now. Consumers will demand quality the evidence is clear. Marketing is essential to producers' success. Farmers must do a better job of marketing live hogs as well as the products presented in the meat case. The producers' program promoting "Pork - The Other White Meat" has been a tremendous success, and this fact has been openly recognized by producers and others involved in promotions for competing products. The introduction of other products, such as America's Cut, Chefs Prime and McRib also have proved successful. New, creative promotions and product development ideas must be developed to maintian the tremendous momentum our promotion program has generated. Production efficiencies must be increased if we are to remain competitive. Fortunately, new technology is near that will permit producers to make progress in this area. Be sure to put it in a pill bottle or some other crush-proof container (preferably not made of glass) and write on the envelope "do not crush." *** Q: What does "pH" means on the labels of products, such as shampoo? A: Scientists use "pH" to define the acidity or alkalinity of a solution. On a scale of 0 to 14, neutral is 7. Non-alkaline or acidic is below 7 and alkaline or basic is above 7. Applied to shampoos, the term "pH balanced" means the shampoo has a pH value in the same range as hair (4.5 - 5.5). "Low pH" means the shampoo is non-alkaline, with a pH below 7. A shampoo that is highly alkaline or highly acidic might irritate your scalp and that is why most products are in the pH range of 4.5 - 8.5. *** Q: Is honey more nutritious than brown sugar? A: A tablespoon of honey contains more calories and carbohydrates than either brown, granulated or powdered sugar. It has less calcium, iron and phosphorous than brown sugar, but does contain minimal amounts of thiamine, riboflavin and ascorbic acid, which brown sugar does not have. Dark honey is slightly more nutritious than light colored honey, but the vitamins and minerals in both sugar and honey are minimal, and neither should be considered a source for adequate intake of necessary nutrients. *** (Continued on page 16) Comprehensive Testing Program Protects Consumers When it comes to gasoline quantity and quality, Georgia motorists get their money's worth. Out of thousands of gasoline samples tested each year, only a marginal number of samples are found to contain levels lower than figures posted on the pump. Georgia Department of Agriculture Commissioner Tommy Irvin attributes the low violation rate of state and federal standards to the State Oil Laboratory, a comprehensive testing program and the department's fuel inspectors. "Our ability to maintain such high standards is a direct result of the comprehensive testing made possible by our laboratory facility, which has been modernized with the addition of automated equipment," Irvin said. "With the existence of an extensive testing program and the cooperation of the petroleum industry, Georgia has been able to compete as a leading state in motor fuel quality." Less than half of the nation's states can boast of similar efforts to protect the pocketbooks of consumers. Georgia is one of 20 states with a fuel testing program in place. Page 2 THE MARKET BULLETIN Wednesday, May 30,1990 we Dear Editor: I enjoyed your earlier article on purple martin birds; however, you omitted some information which I think would be of interest to your readers. When gourds are used for martin houses, the hole for the mounting wire should not be drilled as you indicated. If the gourd is hung as shown, baby martins could fall out of the nest if the wind blew against the gourd too strongly. The mounting wire should be prepared as shown in the drawing at right to prevent this problem from occurring. Incorrect Correct Also, it is not a good idea to paint the inside of plastic gourds white. When a martin hatches from its egg, it does not have downy feathers as does a duckling or young chick and the inside paint could get on the newborn. Martins also prefer a dark cavity for their nesting. Although some people believe they will deter starlings from the gourd by painting the inside a light color, these birds are discouraged more by the small size of the opening (2 1/4 inches) in a martin gourd than they are by a brightly-colored cavity. I do not mean to appear too critical of your earlier article, but I felt your readers should have this information. I have made and sold plastic gourds for a number of years and gathered a wealth of information from my correspondence with martin enthusiasts throughout the country.
