And like you, I am aware of the need for good nutrition and a healthy lifestyle. It seems that I am constantly faced with an overload of information about diet and health. And, like you, I begin wondering what's left that's still good to eat and yet good for you. Many people have mistakenly eliminated many of their favorite foods, such as red meat, dairy products, and yes eggs because they are concerned about cholesterol; yet, they don't even know what their blood cholesterol level is. Elevated blood cholesterol levels (generally above 200mg/dl) are related to heart disease and everyone should know their own level. Our guest columnist this week is Edward L. Houston, chairman of the Georgia Egg Commission's board of directors, Atlanta State Farmers' Market, Forest Park, 300502082,404-363-7661. It's time that we consumers realize that there is a place in a healthy diet for eggs, red meat and dairy products. Nutrition experts agree that singling out and avoiding any one food will do little in lowering the risk of heart disease. For egg lovers in particular, now is the time to re-discover eggs because there is good news from our industry. Because of changes in analytic testing methods and production practices, it has been determined that there is less cholesterol in eggs than previously thought. Researchers at the University of Georgia and Hazelton labs in Madison, Wis., followed a protocol developed in cooperation with the U.S. Department of Agriculture Research Service and Human Nutrition Information Service. The results have shown that cholesterol in an egg (found only in the yolk) averages only 210 mg cholesterol for a large egg, rather than 275 mg as listed in most references. (Continued on page 12) An insufficient number of chill hours and a forecast for a warmer than normal February have been a cause of concern for Georgia peach growers this winter. "This is the mildest winter I can remember our growers experiencing since 1974 when the crop was substantially reduced because of a lack of cold weather," said Commissioner of Agriculture Tommy Irvin. While there has been no damage as yet to the 1989 crop, peach trees need a certain number of hours of 32-45 degree temperatures without frost in order to develop and bloom properly. Thus far, most trees are about 200 hours short of that requirement. However, some early va- rieties in South Georgia have received sufficient cold weather and currently are in bloom, making them susceptible to damage by a late frost. "As always, spring is a nervous time for peach growers. It just seems the warm weather is here a little earlier this year," said Al Pearson, chairman of the Georgia Agricultural Commodity Commission for Peaches. "Even though we have lost none of our crop at this time, the next two weeks will be crucial for Georgia peach growers. Our department will continue' monitoring the progress of the crop throughout this uncertain period," said Irvin. Crisis Exemption Announced for Elgetol Georgia Commissioner of Agriculture Tommy Irvin has declared a crisis exemption for use of the compound dinitro-o-cresol, known commonly by the trade name Elgetol, as a dormancy break for Georgia peach trees. Irvin authorized the exemption after it was determined that the state's peach crop may not receive adequate chill hours to develop fruit. Peach trees need a certain number of hours of temperatures below 45 degrees F. without frost to support fruit set and development. Due to the unusually warm weather, many varieties are 200 or more hours short of their chilling requirement. These trees could abort almost all their fruit, resulting in a near complete crop failure. "Because of the potential seriousness of this situation, I feel that it is necessary to initiate a crisis exemption for this chemical," said Irvin. "Last year the peach crop generated $26.5 million to Georgia's economy and a severe reduction in the crop could be devastating to our producers," Irvin added. Since dinitro-o-cresol is not currently used in Georgia, stocks should begin arriving in the state within the next few days. The FMC Corporation is the registrant for this compound. USDA Assures Prompt Attention To Vidalia Onion Marketing Order Vidalia onion growers are one step closer to a federal marketing order as a result of a meeting with top USDA officials in Washington, D.C., last week. Members of the group, Farmers Allied for a Vidalia Onion Referendum (FAVOR) met with Peter Myers, deputy secretary of agriculture, Patrick Boyle, administrator for the Agricultural Marketing Service, and key leadership from Georgia's congressional delegation including Senators Sam Nunn and Wyche Fowler and Congressmen Lindsay Thomas and Roy Rowland. The purpose of the meeting was to discuss the status of the proposed federal marketing order for Vidalia onions. Speaking on behalf of the producers, Sen. Fowler pointed out that the Vidalia onion season was just around the corner and that it was crucial to take the necessary steps to deal with the marketing order immediately. The group was assured by Myers that USDA would make every effort possible to expedite the process and make the order effective this year. "This is very encouraging for the Vidalia onion industry in this state," said Commissioner of Agriculture Tommy Irvin. "A federal marketing order for this commodity is desperately needed." A hearing on the proposed marketing order was conducted last September at the Toombs County Courthouse in Lyons. Since that time, growers have been waiting for (Continued on page 12) Feb. Is Ga. Egg Month February has been designated "Egg Month in Georgia" by Gov. Joe Frank Harris, who signed the month-long1 observance into effect as a salute to the state's egg producers. "Now is the time for the 'Good Egg From Georgia' to be properly recognized for its economic importance and outstanding food quality," said Gov. Harris. There are approximately 12.5 million commercial layers in Georgia, producing more than 3 billion table eggs annually. Egg production is the fourth largest cash farm product in Georgia, with 1987 income (the latest figures available) totaling $255 million. SCALLOPED CORN 1/2 pound bacon g 2 cups creamed style corn (17-ounce can) g 3 eggs, beaten g 1/2 cup milkg 1/2 cup chopped onion g 2 tablespoons butter, melted g 1/2 cup herb-seasoned stuffing mix salt and pepper to taste Cook bacon until crisp and drain well. Break crisp bacon into small pieces. Combine all ingredients in a medium mixing bowl, mixing thoroughly. Pour mixture into a lightly-greased casserole or loaf pan. Bake in a preheated oven at 350 degrees for approximately 45 minutues or until center of mixture is firm. Yield: 6 servings.
