This year's theme "Farm-City Activities Promoting a Better Georgia Environment," probably never has been more appropriate. Georgia truly has a great environment. However, the leaders of this state are faced with making serious decisions to ensure that this environment is preserved and improved. Farm-City Week is a national program celebrated each year to bring about a better understanding and relationship between rural and urban people. Farm-City Week activities help foster this relationship and provide opportunities for both segments to discuss and solve mutual problems. Many environmental concerns are present in our state and must be addressed. Our guest columnist this week is Dr. Horace E. Hudson, Community Development Department head and chairman of the Georgia Farm-City Week Committee, Cooperative Extension Service, University of Georgia, Athens, GA 30602. Quality water in sufficient quantities to meet future needs is of major concern. There is but one water, and this water must be protected by everyone both rural and urban. Agricultural practices involved in the production of food and fiber and their potential threat to quality water have received much attention by the press. However, urban runoff may be just as great a threat to preserving a quality water. Proposed environmental planning criteria will require joint planning to preserve Georgia's water. Input by both rural and urban citizens is needed and finger pointing will not solve the issue. Proper management and disposal of solid waste is another issue that has to be addressed. Citizens in the past have allowed local governments to worry about disposal problems and as a society we have become the world's greatest waste generators. The philosophy of "make a mess and move on west" was learned very well from our forefathers. "NIMBY" (not in my (continued on page 12) ag consumer line... Farmers Urged to Avoid Northern Rye Seed Q: I would like to know how long sweetened, condensed milk will keep and the best way to store it. A: Unopened cans of sweetened condensed milk can be stored in a cool, dry place for up to six months. Preferably, the temperature should be kept at 70 degrees F or lower. After opening, the milk can be stored in its original container in the refrigerator for about 10 days. Q: Which bird contains more fat, a duck or a goose? How long can I keep them in the freezer? A: A goose has a higher fat content than a duck, and both contain more fat than a chicken or a turkey. A whole, uncooked duck or goose may be kept frozen for up to six months and a whole, uncooked chicken or turkey may be frozen for a year. Home economists with the Georgia Extension Service recommend cooking frozen poultry within two days of thawing. The Georgia Department of Agriculture advises Georgia farmers and ranchers not to purchase northern-grown rye this planting season. The department recently placed a stop-sale order on a shipment of rye seed originating from South Dakota because the seed was not labeled for variety. All seed sold in Georgia must be labeled to identify the variety and origin of the seed. Since there is a shortage of rye seed this year, farmers and ranchers may be tempted to purchase northern-grown rye; however, this seed is not adapted for Georgia and growers who plant the seed may find themselves dissatisfied with the results. Agribusiness Council An entry submitted by Kathy Dasher of Glennville has been selected as the winner of the Georgia Agribusiness Council's bumper sticker contest. Whether you're an oldtimer or a first-timer, and whether your compost pile is cheap and easy or big and fancy, your lawn and garden will reward you next spring for the efforts you put forth this fall. Compost is partially decomposed organic matter, whereas humus is simply the product of the final stage of this breakdown. Some types of composting take little or no effort such as when leaves fall in the forest and break down and enrich the soil. Some people take advantage of this process and simply till autumn leaves into the ground, where they break down and slowly add their minerals to the soil. Others may put a wire fence around a tree to keep leaves from blowing away and allowing them to decompose directly over the root zone. This is called "composting in place," and can be quite effective. Most veteran gardeners, however, take a certain amount of pride in their compost pile or compost bin. Again, this can be as plain or fancy as your time and temperament allow. A compost pile is just that, a pile of organic material soil, leaves, plant stalks, grass clippings, vegetable scraps, moisture and some animal manure or fertilizer to kick off the process. Don't add meat scraps to the compost pile they will attract vermin. The pile is usually arranged in alternating layers of soil, vegetative material and fertilizer to allow for aeration and a slow, even "burn." A compost bin is just some kind of structure to give form and improve the function of the compost pile. Four corner posts and outdoor plywood will do but you'll need to be able to remove one of the sides for turning the compost. Using fence wire for the sides improves aeration, which keeps the pile from smelling like garbage.
