Cutting horse enthusiasts from all across the U.S. will converge on this Savannah River city to compete in the 10th annual Au- gusta Futurity, the largest Cutting horse show east of the Mississippi. It is a privilege for me to have had the opportunity for the past five years to work for an organization dedicated to staging a firstclass Cutting horse event. From its first show in 1980, when 103 horses competed for a purse of $64,489, the show has grown tremendously. This year nearly 400 competitors will vie for purse and awards that approach $400,000. Under the guidance of the Atlantic Coast Cutting Horse Association's executive board, show chairman Our guest columnist this week is Skip Peterspn, promotions director for the Atlantic Coast Cutting Horse Association, PO Box 936, Augusta, 30913, 404-724-0851. W.S. Morris III, and show manager Pete May, the event has increased from a three-day cutting to an eight-day western extravaganza. There really is something for everyone at the Augusta Futurity. More than 70 exhibitors will display western wear, saddles and tack. For the first time we will have a celebrity cutting event, with member of the Augusta Champions Club and local media personalities that will benefit the local Alzheimer's Disease Association. We'll have a Jack Russell Terrier dog race, not to mention the numerous Cutting competitions. For those who catch horse fever, we'll have a sale of quality cutting horses. The sport of cutting is growing exponentially. It is the richest arena competition for horses in the U.S. already, with more than $19,000,000 in purses and awards offered at National Cutting Horse Association sanctioned events annually. In terms of payoff, it ranks (Continued on page 16) Wednesday, January 18, 1989 High Forage Diet Produces Low-fat, Tender Lamb Meat Two Georgians Named to Cotton Board U.S. Department of Agriculture deputy secretary Peter Myers recently reappointed two Georgians to the Cotton Board, which administers a national cotton and promotion program. C. Lynn Newman of Cochran was reappointed as a member of the board and S. Louie Perry Jr. of Moultrie was reappointed as an alternate. The appointees will serve terms ending Dec. 31, 1991. The Cotton Board is composed of 20 producer-members and their alternates, plus one public member who serves without an alternate. Board members serve staggered three-year terms. Under regulations of the 1966 Cotton Research and Promotion Act, which authorizes the board, producer membership on the board reflects cotton production in the cotton-producing states. Designed to advance the position of cotton in the marketplace, the research and promotion program is funded by assessments on producers (Continued on page 16) Low-fat, tender meat can be produced by raising ram lambs on a high forage diet, according to results of a five-year study by U.S. Department of Agriculture researchers. The study indicates that farmers, as well as consumers, could benefit from the marketing of lamb meat from these young rams, rather than from castrated rams called wethers, said food technologist Morse B. Solomon of the USDA's Agricultural Research Service. Young rams fed a test diet of mostly alfalfa were 54 percent leaner and produced rib eye chops with 45 percent more polyunsaturated fats to saturated fats than wethers on the same diet, reported Solomon. A ratio high in polyunsaturated fats is desirable in the human diet. Meat from wethers, the customary type of lamb marketed in this country, is more tender than meat from rams, but higher in total fats. Meat cuts from rams on the forage-based diet also were 18 percent easier to slice than meat from rams fed a standard high-grain diet. Further research is being conducted at the agency's Beltsville, Md., Agricultural Research Center to improve tenderness of the high-lean, low-fat rams. To the farmer's benefit, the young rams grew about 15 percent faster than wethers and used feed up to 15 percent more efficiently, according to ARS animal nutritionist G. Paul Lynch. Ram lambs were fed nearly 80 percent forage, instead of conventional high grain, high energy feed. The scientists also said that production of young, lean lamb could strengthen markets for domestic lamb. This would give a competitive edge, they said, over imported lamb. Solomon and Lynch said the intent of the study was to test a high forage, low grain diet for lambs in response to consumer demand for lean meat and dishes lower in cholesterol. Cholesterol content, not usually high in lamb, remained low in the test meats, Solomon said. (Continued on page 16) Interest in Health & Fitness Has Changed Beverage Industry What comes imported in a bottle, has a fancy name, and is cold, fizzy and wet with bubbles that tickle your nose? Champagne, maybe? Nope, guess again water. The growing interest in developing and maintaining a healthy, fit lifestyle has affected consumers in a variety of ways during the past decade. Leaner cuts of meat on grocers' shelves and a wider availability and selection of fresh vegetables to build a low-fat, low-cholesterol diet has been an indirect extension of the popularity of athletic training and new preventive health care techniques and research advances (like limiting cholesterol in- take.) Perhaps a more subtle change on grocers' shelves has been the introduction of a variety of new beverages for consumers to choose from. Where there used to be a few rows of soft drinks, fruit punches and juices there are now entire aisles of everything from seltzer and mineral water to sparkling juices and flavored club sodas. Bottled water is one of the biggest "new entrants" in the beverage industry's race to claim consumers' taste buds. Water with "taste" bottled (and paid for) like a soda? Well, the jingling of cash register receipts mixes harmoniously with the kerplunk of bottled water poured into an empty glass to those who bottle the stuff. According to a 1987 study, Americans drank more than 300 million gallons of bottled water. In a large mixing bowl, stir together the pecans and the dry cake mix. Add pineapple, rum and oil; stir until well-mixed. Beat egg whites until stiff and fold into cake batter. Pour the mixture into prepared pan. Place in cold oven and bake at 250 degrees for 2 hours. Cover with heavy-duty plastic wrap and microwave at high for 12-14 minutes, or until crisp-tender, stirring after 6 minutes. Let stand covered 2 minutes; drain.
