"I put them out...let them graze, take care of them, feed them...then I harvest them and sell," he explained. "They're just like a water cow." But instead of gazing out over green pastures and cows chewing cud as he speaks, Stephens is surveying 300 acres of picturesque marshland and canals nestled along the great Satilla River on Georgia's historic coast near Woodbine. The property Stephens bought and renamed Marshlands Plantation, forged its history in the 1850s as a rice plantation. Rice is still grown there, but now is used for crawfish bait. During World War II the property was used on occasion to grow vegetables for the war effort. Stephens bought Marshlands in 1983 converted it to a crawfish farm and began producing commercially three years ago. It is the only commercial crawfish operation in Georgia. Will live crawfish "bite?" Take a look at those pinchers and ask yourself again! Cooked ones are another matter, however, then only you do the biting. Although there are other commercial crawfish farms in Texas, South Carolina and Florida, the lion's share of the market is held by Louisiana and its Bayou Country, which has popularized and "gourmet-ized" the once lowly "crayfish." "We are a small operation by Cajun standards," Stephens said. "Louisiana leads the U.S. in production with about 150,000 to 180,000 acres in commercial production. In 1985, (that area) shipped 100 million pounds of crawfish." Louisiana produces over 95 percent of the annual U.S. crawfish harvest and consumes 85 percent. Stephens, who jokes about the "foolishness" of starting a crawfish operation in Georgia, noted the similarities between the climate of Louisiana's bayous and the southeastern coastal region of Georgia, but recognizes the vast difference in the types of food people enjoy in each region. "There seemed to be no market for our crawfish when we began, but our market has doubled (For an up-close look at Georgia's only commerical crawfish operation, see the Bulletin's photo spread on pages 8 & 9.) each year," he explained, though ever the gentleman "farmer" he declined to name specific market amounts. He sells his crawfish for $1.50 a pound. That is a 20 percent mark-up over Louisiana's average price (65 cents a pound), but Stephens claims the higher price attached to the Georgia-produced crawfish is because they are cleaner, and by many standards, better-tasting, than Louisiana crawfish. Most Louisiana companies, mainly because the crawfish is Beekeepers Short Course Offered At UGA June 11 The annual beekeepers short course, for beginners and more experienced beekeepers, will be held June 11, at the University of Georgia in Athens. The meeting, which is sponsored by the UGA Department of Entomology, and the Georgia Beekeepers Association, will be held from 8:30 a.m. until 5 p.m. Registration will start at 7:30 a.m., in the Chemistry building auditorium. The teaching staff will consist of several honey bee specialists, including well-known commercial honey, queen and package bee pro- Continued on page 16) USDA Lifts Recent Horseshoe Limits The U.S. Department of Agriculture has lifted a recently-imposed 16-ounce weight restriction on horseshoes used on show horses; removed prohibitions on the use of certain weights and protective boots; and reinstated restrictions on the placement of weights, according to a USDA report. "It has become obvious that some of the limitations contained in re- cent amendments to horse protection regulations were not appropriate for all breeds and all horses," said James W. Glosser, administrator of the USDA Animal and Plant Health Inspection Service. "Therefore, we are reinstating certain parts of previous rules that limited shoes to 16 ounces for yearling (Continued on page 16) so common there, do not provide the purging process, but rather expect consumers to do it themselves. Purging cleans the crawfish and leaves it with a better taste by allowing the crustacean to purge itself in the clean flowing water. "We started our wholesale market in the fall of 1983. Most of our market is now in New York, though we hope to establish a market for them in Atlanta. We ship from Jacksonville (Florida, about 45 miles south of Woodbine) to New York," Stephens said. "We have individuals who buy as well, and we have a crawfish festival each year (in Woodbine in April.)" The crawfish are shipped live in mesh bags, which must be handled "like a dozen eggs." Stephens said he bought Marshlands Plantation with the intention of raising vegetables and cattle, but because of the ever-present danger of hurricane devastation, and a lack of experience in growing row crops below sea level, he began studying the possibility of a catfish operation in the fresh water tidal marsh. CRAWFISH ETOUFFEE 2 pounds peeled crawfish tails g 1/4 pound oleo or 1/4 cup oil 1/2 cup chopped celery 1 cup chopped onions g 1/2 cup chopped bell pepper Salt, black pepper and Cayenne 4 cloves garlic (minced) 2 tablespoons crawfish fat 2 cups cold water 2 teaspoons corn starch 1/4 cup green onion tops Season crawfish tails with salt and pepper and set aside. Melt oleo or oil in heavy pot. Add onions, bell pepper, garlic and celery and cook until onions are wilted, stirring constantly. Add crawfish fat, 1 1/2 cups water and crawfish tails. Bring to boil and cook over slow heat for 30 minutes, stirring occasionally. Dissolve corn starch in 1/2 cup water and add to mixture. Add onion tops and parsley. Cook another 10 minutes. Let set for a few minutes. Serve over cooked rice. Serves 4 to 6. VIDALIA ONION DEEP DISH 1 1/8 cup regular rice 1/2 cup butter 3 1/3 pounds Vidalia onions, chopped g 1 1/8 cup shredded Swiss cheese 1 cup whipping cream g 2 tablespoons minced parsley Salt and white pepper to taste Paprika Cook rice in a large pot of boiling water for 5 minutes. Drain well. Melt butter in a heavy saucepan over medium heat. Add onions and cook until tender (approximately 20 minutes), stirring occasionally.
