Let's look at some of the factors that have helped strengthen and stabilize iboth our nation's land our state's I farm economy dur| ing the past year. When the year I began, many farm- s still were sufferjing the effects of I the worst drought iin recorded history. I As if that were not enough, farm exports were lagging, commodity and land values were depressed, and farmers found themselves in a credit bind. Although the outlook was bleak, farmers kept the faith and the situation did improve. Lower production costs and participation in federal programs helped increase farm income, with USDA now forecasting a record $57 billion total farm net cash income for 1987. In addition, U.S. farm exports rose from $26.3 billion to $27.9 billion, an increase of six percent. Here at home, Georgia farmers continued to seek out profit opportunities through careful production techniques and marketing of their crops and livestock. Though the year brought the usual seesaws with the weather, from late spring freezes to periods of summer drought, many aspects of our farm economy have strengthened. Now, as we move into 1988, we must continue the careful planning that is the hallmark of any successful operation. As the saying goes, we cannot outsmart Mother Nature, but we can do our best to make the most of what she gives us and to capitalize on the opportunities. I urge our agricultural community to strive for the best of opportunities in 1988, and I give you my pledge that I and the staff at the Georgia Department of Agriculture will do all we can within our power to help make those opportunities a reality. Wednesday, December 30,1987 ag consumer line... Q: I want to serve ham during the holidays instead of my traditional turkey. What size ham should I buy to feed six people four adults and two teenagers? A: The following general guidelines can be used to determine the number of servings per pound of various types of ham: boneless or canned ham five servings; other lean, boneless cuts three to four servings; cuts with some bone two to three servings; cuts with a large amount of bone one to one and a half servings. When buying a ham, the best measurement of economy is not the cost per pound, but the cost per serving. A cheaper piece of ham may be of lower quality and yield less servings than a better cut that weighs the same, and probably costs more. To figure the cost per serving, divide the price per pound by the number of servings per pound. Q: My wife read in a magazine that it is not safe to burn wrapping paper, ribbons and cartons from Christmas presents in the fireplace. We have burned our wrapping paper for several years and have not experienced any problems. Is there really any danger in doing this? A: Yes, this could pose a safety hazard because some ribbons, decorations and wrapping paper, especially foil-type paper, contain plastics that release poisonous gases when burned. Wrappings ignite quickly and burn vigorously, and this also could result in a flash fire when burned indoors. Equine Seminar Planned For Performance Horsemen A seminar for performance horsemen and anyone actively engaged in riding will be held Jan. 23 at the University of Georgia in Athens. The program will take place at the UGA College of Veterinary Medicine. Meals and housing will be provided at the Georgia Center for Continuing Education. Pre-registration (before Jan. 10) is $45.
