FARMERS & CONSUMERS Tommy Irvin, Commissioner Georgia Deparfmenf of Agriculture Market Bulletin Vol. 73, No. 34 College Expands Paravet Programs The Fort Valley State College (FVSC) has expanded its paraveterinary programs by adding a fouryear (BS) program in veterinary technology to its existing two-year (AS) degree in veterinary tech nology and the pre-veterinary medicine pro grams. The two-year degree in veteri nary technology is an excellent vo cational program for persons desiring jobs after spending a minimum number of years in the college. The program was designed essentially to meet the veterinary profession's need for well-trained assistants. The curricu lum covers a total of seven quarters; Our guest columnist this week is Dr. K.L. Arora, director, Veterinary Science Department, Fort Valley State College, Fort Valley 31030. five quarters of course work on the FVSC campus, one quarter of clini cal rotations at the University of Georgia Teaching Hospital in Ath ens and one quarter of practicum with a practicing veterinarian. The students receive training with farm animals, companion ani mals, and laboratory animals. The program is fully accredited by the American Veterinary Medical Asso ciation (AVMA). Graduates have excellent job opportunities with ani mal research labs, diagnostic labs, animal wards, food and feed compa nies, pharmaceutical firms, micro biology labs, zoos, research and teaching labs in colleges and uni versities, various city, state and federal welfare and regulatory agencies in addition to working with practicing veterinarians. Jobs are plentiful and the gradu ates can potentially start at $10,000-$12,500 per year along with fringe benefits. Students have the option to continue their studies towards a four year degree program and/or preveterinary medicine pro gram. A recent addition to the veteri nary program is the four-year (BS) degree in veterinary technology. This advanced degree is designed to (Continued on page 12) Wednesday, August 26,1987 Aquaculture Offers Potential As Alternative Farm Enterprise Aquaculture can be defined as the farming of aquatic plants or animals for consumption or recrea tion. Aquaculture has received con siderable public attention in the past few years. Yearly U.S. per capita consumption of fish and fish products from 1967 to 1985 in creased 42.8 percent (10.5 Ibs. to 14.5 Ibs.). With increasing public concerns about diet and health, we expect this trend to continue. Until recently almost all of the fish we consumed were caught from the wild. Over the past 15 years, world catches of wild fishes have stabi lized and in some instances de clined. With the exception of a few species, biologists believe we cannot biologically or economically in crease significantly our catches of wild fish. The increasing demand for fish will be supplied by the farmer. Considering our mild climate and water resources, we believe many areas of our state have an opportun ity to develop successful aquaculture enterprises. Unfortunately, it will not happen overnight. Many individuals think that aquaculture is the simple formula of fish plus water equals profits. Most aquacul ture enterprises are capital and management intensive. Excluding the price of land, production ponds can cost as much as $3,000 per acre to construct. A farmer who is not willing to provide daily attention to the health and environment of his fish can loose an entire crop over night. Farmers will not produce unless they have a market and processors will not locate in an area unless they have a steady and con sistent supply of fish. Before any ponds are built or renovated or fish stocked in them, you should be able to answer yes to most, if not all, of the following questions. Do you know of an established market for your fish? Is there a profitable mar ket for your fish at the time of year you plan to sell them? Do you have a suitable arrangement for harvest ing your fish? Can you be flexible and harvest fish during the off (Continued on page 12) Farm Land Edition Planned in September The farm land edition of the Market Bulletin will be pub lished September 23. Watermelon Varieties Appeal To Consumers Many people have trouble eating an entire 30 or 40 pound water melon before it spoils in their refrig erator. But researchers have devel oped two new watermelon varieties which weigh less than 20 pounds and are two thirds the size of larger melons. Minilee and Mickylee, which weigh around five pounds, can be grown in the southern cli mate and were developed by the Florida Institute of Food and Agri cultural Sciences. Due to factors such as smaller families, two person households, and an increase in the elderly popu lation, watermelon sales have been decreasing over the years. Although some merchants have cut waterme lons to display their ripeness, many more are selling less than whole portions to promote sales. The Mickeylee and Minilee are unlike some of the other icebox melons grown because their quality is as good or better than the larger melons. According to Melvin R. Hall of the Georgia Experiment Station in Tifton, "The earlier ice box melons did not have as good of quality as the larger melons but these varieties are very good." Page 12 August garden Chores August is the time to plant cool weather crops such as beets, broccoli, cabbage, cauliflower, collards, kale, mustard and turnips. Consult your local county Extension agent for recommended varieties for your area. Plant garlic this month for harvest next summer. Choose a sunny location and plant cloves three inches deep, four to six inches apart. Early August is considered the last date for light pruning most shrubs. This gives new growth time to emerge and mature sufficiently before the arrival of freezing temperatures. Remove faded blooms from roses to prevent the plants from producing hips (the fruit which contains the seed). Also, remove any hips already formed to encourage the plant's energy to go into producing new flowers instead of seed. Aquaculture (Continue from page 1) season? Do you have an alternative marketing strategy to fall back on? Georgia's aquaculture industry today consists primarily of channel catfish and rainbow trout. For the immediate future, these animals offer us the best potential. Other aquatic species will also be cultured in Georgia. For many, the culture methods are still in the research and development phase, and for others, reliable markets have not been established or defined. We are optimistic about the fu ture of aquaculture in Georgia. As in any new and developing crops, there are more uncertainties than facts and it is, thus, more difficult for a farmer to identify his market ing opportunities. THE MARKET BULLETIN Agrirama Displays Old Fashioned Cakes Mouth-watering memories of the cakes Grandma used to bake need be memories no longer. The cakes will all be on display at the Georgia Agrirama's Labor Day "County Fair of 1896" along with exhibits of other Georgia grown fruits and veg etables. Recipes, known as "receipts" a century ago, were all taken from 100 year-old-cookbooks in the Geor gia Agrirama collection. Recipes from other books in the collection will be prepared on the woodburning stove and over the open hearth in the museum's farmhouses throughout the year, with work shops held during the winter to teach the art of 1890's cooking. Included on the agenda for the Labor Day Fair will be century-old tests of skill such as greased pole climbing, wagon driving, pie eating, horseshoe pitching, hog calling, plowing and checkers. Visitors will be invited to enter each contest to vie for colorful first, second and third place ribbons. "Production is similar to larger melons but more plants per acre are required." The melons can be grown just like cantaloupes and usually produce more fruit per acre. Seeds for the melons are now becoming available in Florida and researchers hope the new varieties will supplement the large melon industry. Because of these smaller watermelons, growers hope consum ers will begin purchasing whole watermelons on a more regular basis. Some of the old fashioned recipes are fea tured below: Pound Cake 1 Ib. flour 8 eggs 1 Ib. sugar 1 tsp. nutmeg 1 Ib. butter skin of 1 lemon Cream butter and sugar. Separate eggs and add yolks, beating well. Add flour, nutmeg, and grated lemon skin gradually. Beat egg whites and fold in. Bake in a greased loaf pan at 325 F. for 1 -1 1/4 hours. Buttermilk Cake One cupful of butter Two cupsful of buttermilk Three cupsful of sugar Five cupsful of flour Four eggs Soda enough to sweeten the buttermilk Cream 1 cup butter with 3 cups sugar. Add 4 eggs, one at a time, and beat well. Dissolve 1 teaspoon soda in 2 cups of buttermilk. Alternate additions of 5 cups sifted flour with buttermilk. One teaspoon of vanilla or lemon extract may be added to enhance flavor. Bake in well greased tube pan at 300" F for 1 hour and 15 minutes. Caramel Frosting 3 cups sugar 1/2 I b. butter 1 cup milk 1 tsp. vanilla Mix all ingredients and cook until mixture begins to thicken, stirring frequently.
