This year's theme, "Help, Hope and Healing," can be inter- preted in a number of ways. We can say that the land needs our help in healing I the damages to I its topsoil, and ! that there is hope I for continued i bounty as long as i we care. And, as we heal the land from the ravages of yesterday, we also are healing ourselves. The week is not an observance confined to a single denomination, or is it confined to a single age group. Just as we all enjoy the beauty and bounty of our nation's land, we must remember that we are all responsible for its stewardship. My wish would be to see all denominations and all ages of people, with special attention to the young stewards, joining together during Soil and Water Stewardship Week to make their voices heard throughout the country. We would make our leaders know that people, bureaucracies, agencies and organizations come and go but the land is eternal and its need for care is eternal. At this time in the history of our country, the importance of that message is perhaps the greatest ever. Agriculture, our very foundation, is in dire need of help. The stewards who watch daily over the care of the land, the farmers, are too often going bankrupt...in money and in hope. When this happens, it is likewise too often that the very soil itself becomes bankrupt. Our frontline stewards do not have the resources to protect the soil as it is used. With its oblong shape and hard skin, the vegetable resembles other winter squash on the outside. But the interior flesh, made up of long thin spaghetti-like strings, gives the squash its name and sets the vege table apart from its relatives. Culture of the spaghetti squash is very similar to other gourds or cucumbers. The seeds can be planted five to six feet apart, after the danger of frost has passed. The plant's vines are similar to those of the butternut squash only the vines do not spread quite as much. The spaghetti squash has a mot tled, greenish-yellow skin when im mature. As it reaches maturity, the surface changes to a pale, solid yellow. The medium, oblong fruit requires about 100 days to mature. Once mature, it can be harvested and stored in a well-ventilated area for several weeks. An easy way to prepare spaghetti squash or "vegetable spaghetti," is to cut it in half, remove the seeds and fiber, and steam or bake until tender. Once cooked, the fibers will come out in long, pale yellow strands. The vegetable can be eaten as the pasta it resembles with but ter, salt and pepper or with your favorite spaghetti sauce.
