Since opening in 1968 its charge has been to conduct research designed to understand the functioning of our marine environ- ment and to iden- tify marine resources in Georgia's coastal N. waters which are under-utilized. Funds to support the Institute's pro- grams have averaged about 30 per- cent from state and 70 percent from federal sources. Our guest columnist this week is David W. Menzel, director, Skidaway Institute of Oceanography, P.O. Box 13687, Savannah 31416. __________________ To accomplish its purposes, the Institute's resident senior scientific faculty of 12, and professional support staff of 20, are involved in a variety of research programs. In addition. the Institute provides facilities and support for students and faculty from other units of the University System and from out-ofstate institutions, whose research interests require access to the sea. The Institute does not offer degrees. Many of our faculty members serve as advisors to students, from our degree granting institutions involved in marine research. The marine programs of the University System of Georgia, in addition to the Skidaway Institute, include the Marine Institute at Sapelo Island and the Marine Extension Center at Skidaway Island. These centers were among the first in the nation to provide a direct interface between basic research and application, by the user, of the knowledge gained. This interface, first applied to the marine situation in the late 1960's, was copied directly from the scientist-experiment station worker -county agent structure so successfully applied for many years by the agricultural community. Most of the effort and the central (Continued on Page 16) Enjoy Fresh, Georgia-Grown Fruits Tobacco Advisory Board During Bountiful Harvest Season Discusses Market Dates Watermelons and peaches have long been known as trademarks of the South, particularly in Georgia. Harvest of these popular fruits currently is underway in the state with plenfiful supplies expected for consumers to enjoy. "There already are watermelons at the markets, despite fears that the drought had severly reduced the crop," noted Georgia Commissioner of Agriculture Tommy Irvin. "Watermelon sales are traditionally higher for the Fourth of July holiday, and I am glad to see a strong supply on the way to cover the extra demand." Most Georgia watermelons are produced in the southwestern portion of the state, an area particularly affected by the spring drought. Fortunately, at least half of this year's crop has been under irrigation, and the area received rain in time to save most of the remaining acreage. Statistics on watermelon acreage were discontinued in 1982 when there were 26,400 acres grown in Georgia. The state's producers sell approximately $20 million in watermelons through the state farmers' markets each year. Half of the crop is sold through the Cordele State Farmer's Market, one of the largest watermelon sales points in the country. The Cordele market also handles most of the Georgia canteloupe sales at least $3 million worth of the annual $4.5 million crop. The lack of rain this spring also caused concern among many of the state's peach growers who already had suffered through a freeze in early March. Although the drought did not cause severe damage to most Georgia orchards, farmers report that overall their fruit is smaller as a result of the dry weather. "Our peach growers are harvesting 50 percent of a normal crop, compared with 35 percent of a normal (Continued on Page 13) In the annual meeting of his Tobacco Advisory Board last week, Commissioner of Agriculture Tommy Irvin said he expects flue-cured tobacco markets in the GeorgiaFlorida belt to open the latter part of July'. Despite some delay in progress from the dry weather, he noted that the tobacco crop looks good. Irvin heard reports on tobacco conditions from all areas of the Georgia-Florida belt, including tobacco company representatives, the U.S. Department of Agriculture as well as the Flue-Cured Tobacco Stabilization Corporation. "We feel optimistic about the season," said Charlie Finch of the Flue-Cured Stabilization Corporation. "If we have a good crop, I feel certain the companies will come in ready to buy. Overseas companies have asked me to tell growers to let the crop ripen well this season." Growing concerns about competition in tobacco exports from other countries were softened by a report from Universal Leaf Tobacco Company Representative James Starkey. He said Brazil's tobacco crop will be (Continued on Page 16) Pest Control Problems Multiply During Hot Summer Months While summer is vacation time for most folks, unfortunately insect and rodent pests never seem to take a day off. For this reason June has been designated as National Pest Control Month to remind homeowners to be on the alert for the resurgence of household pests during milder weather. For instance, according to the Georgia Pest Control Association, there are 20 common varieties of house-infesting ants in the United States. They can enter buildings in a number of different ways because of their ability to pass through tiny crevices and cracks, and along wires and pipes. Control of ants in a home depends on the species encountered since their behavioral patterns differ. Spraying is the most effective method of residential ant control used by professionals. The use of dusting and various baits also is effective. To minimize the likelihood of ant infestation, make certain no food scraps are left around. Good sanitation is the key to controlling may insect and rodent pests. For example, cockroaches will return to an area after treatment unless good sanitary practices are continued. Adult cockroaches can live for a month without food if they have access to water. Uncovered garbage and the presence of food scraps is an open invitation to roach infestation. PEACH CUSTARD ICE CREAM 1 quart whole milk s 1 cup cream or evaporated milk s 3 eggs 1 cup sugar 1 tablespoon all-purpose flour 1/8 teaspoon salt 2 quarts mashed Georgia Peaches s 1 tablespoon vanilla
Scald milk and cream. Beat eggs and combine with half of the sugar. Mix flour and salt with remainder of sugar. Blend all with hot milk and cream. Cook until it thickens. Add mashed peaches, 1 tablespoon of vanilla, and freeze in commercial ice cream freezer.
Makes 1 1/2 gallons.
COOKIE PEACH COBBLER
2 1/2 Ibs. Georgia peaches, peeled and sliced (5 cups) 1/4 cup sugar 2 tablespoons corn starch 1/2 teaspoon ground cinnamon 1/2 cup light corn syrup 1 package (17 ounce) refrigerator sugar cookie dough
Place peaches in 8 x 8 x 2 inch baking dish. In small bowl, stir together sugar, corn starch and cinnamon. Gradually stir in corn syrup until smooth. Pour over peaches; toss to coat well. Slice cookie dough into 1/4 inch slices. Arrange slices in rows on top of peach mixture. Bake at 350 for 1 hour or until golden brown. Cool. If desired, serve with ice cream. Makes 8 servings.
