Agriculture, just as any other business, is constantly changing, but many of the obstacles stay the same. Obstacles like too much or too little rain, high input costs, low commodity prices and government interference. While there is nothing we jean do to change the weather, we I can have a positive influence on the other factors. At the same time the Georgia Soybean Association has worked to gain freer access to markets. Checkoff dollars invested in production research allow us to improve our efficiency through increased yields and reduced costs. At the same time we fund educational efforts through Extension soybean specialists. Utilization research helps us identify new uses for soy products, thus creating new markets for soybeans. Our association, along with other state checkoff programs, funds 384 Market Expansion Projects in 84 countries. These projects, as well as the USDA's Foreign Ag Service and third party cooperators, help increase the demand for U.S. soybeans, ultimately resulting in increased prices. Checkoff dollars really do work. I'd hate to see where we would be today if we had not put forth this effort. At the same time we must work through our Association to have a positive influence in Washington. With the stroke of a pen it could all be taken away. (Continued on Page 16) Pick-your-own fruit and vegetable operations are gaining popularity in Georgia with growers as well as consumers. Growers are attracted to the pick-your-own marketing method because it reduces harvest labor and eliminates the need for grading, packing and storage facilities. Likewise, these operations appeal to consumers who desire fresh, quality produce and who enjoy harvesting their own fruits and vegetables as a nostalgic recreational activity. Pick-your-own farms, such as the blueberry operation featured above, are beginning to bustle with activity throughout the state. Turn to pages 8 and 9 for a list of pick your own operations. Dry Weather Prompts Herbicide Exemption An emergency exemption allowing Georgia peanut farmers to immediately use the herbicide FUSILADE 2000 IE for controlling Texas panicum grass weeds was issued last week by Georgia Commissioner of Agriculture Tommy Irvin. Without the use of the herbicide, $77.6 million worth of the crop would be lost, Irvin emphasized. Extremely dry conditions during the April and May peanut planting season rendered ineffective herbicides that were applied prior to the emergence of the young peanut plants and weeds. The two commonly used herbicides, Balan and Prowl, rely on moisture for activation. Nearly 80 percent of Georgia's 560,000 acres of peanuts were treated between April 1 and May 15, a period the National Weather Service projects to be the driest on record. "Serious control problems with this stubborn grass have been (Continued on Page 16) Certification Required I For Wood Treatment I Treated timber applicators who use the pesticides penta and creosote, or inorganic arsenicals must be certified as restricted use pesticide applicators beginning November 10, 1986. To receive training, the applicators must contact the Entomology and Pesticides Division of the Georgia Department of Agriculture as soon as possible. The Environmental Protection Agency (EPA) recently added these pesticides to their restricted use classification. The chemicals may only be applied by certified applicators or persons directly under their supervision, and only for uses included in an applicator's certification. A special, two-day training course and exam for certification in wood treatment is scheduled for October 6 and October 7, 1986, at the Rural Development Center in Tifton. A separate one-day course will be held at the center October 6 for licensed applicators needing recertification in the wood treatment category. All known treated wood ap- plicators have received information on the changes and the training program. Any persons who apply restricted pesticides to timber and (Continued on Page 16) Crop Scouts Help Win Battle Against Invading Insect Pests Traditionally, before an army ventured into battle, scouts were sent ahead to evaluate the strength of the enemy. Today's insect scouts perform much the same function by helping farmers prepare for battle against crop-destroying insects. According to Bill Lambert, entomologist and pest management coordinator with the Georgia Extension Service, the idea of insect scouting was initiated in Dooly County during the 1950s by C. R. Jordan, the state's first Extension entomologist. Although the Extension Service continued to encourage insect scouting, the practice did not catch on until the 1970s. Until that time cotton was basically the only crop scouted. The program really picked up in 1978 when scouts began tracking insects in soybeans and peanuts in addition to cotton. A number of Georgia's larger agricultural counties have County Pest Management Associations to hire their scouts. The associations are made up of farmer-members who decide which scouts to hire and how much they will be paid. Farmers in many of the smaller counties rely soley on their local Extension agent to help them obtain scouts. Scouts primarily check for the presence of insect infestation in crops, but they also are trained to recognize other problems, such as the presence of weeds and nematodes. Although the scouts make farmers aware of such problems, they do not make any control recommendations. Once a scout has checked a field, he provides the farmer with a record of the data. The farmer can then use this information to determine if chemical control of the pests is needed. During the growing season, Extension specialists meet with the scouts weekly, and in some cases daily, to provide assistance if needed. Kathy Kingsburg Decatur, Georgia *** PEACH TORTE CRUST: 1 3/4 cup graham cracker crumbs 1/3 cup butter B 1/4 cup sugar TORTE: 1 (8 ounce) package cream cheese, at room temperature 1 cup cottage cheese, small curd 1 cup sugar 3 eggs g 1 (4 ounce) package vanilla pudding, not instant 1/2 cup milk B 1/2 teaspoon vanilla TOPPING: 1 pint whipping cream 1/2 cup sugar fresh, frozen, or canned peaches, chopped g Crust: Mix the ingredients and place in an 8-inch springform pan. Press firmly against the bottom and 2 inches up the sides of the pan. Chill. Torte: Mix together cream cheese and cottage cheese. Add remaining ingredients. Pour into crust and bake for 45 minutes to an hour at 350 until golden brown. Cool and refrigerate overnight. Top Torte with chopped peaches, then the whipped cream, whipped with the sugar. Garnish with peach slices. Serves 8. Cooking Remedies to Cure Homemakers' Headaches A mishap or ingredient shortage may occur in the kitchen at any time. Try the remedies listed below. Too Sweet Add a teaspoonful or two of vinegar to a vegetable or main dish which is too sweet. Too Salty or Spicy Make a second batch, without the salt or problem spice and combine the two. Freeze the second half for later. Add a cut raw potato to soup or stew and boil. Discard the potato before serving. Too Bland Improve the flavor of a "too bland" meat dish by adding a dash of bottled meat sauce, hot pepper sauce, Worcestershire or fried onion. Add a dash of sugar to vegetables. Adding salt and pepper will work for most foods. Too Sharp Add a teaspoon or two of sugar. Prepare a second batch and combine the two. Gravy Too Light Add a few drops of soy-sauce gravy seasoning - browning sauce to darken pale gravy. Avoid the problem by browning the flour well before adding liquid. Gravy Too Thick Add a little more liquid. Gravy Too Thin Mix some water and flour, arrowroot or cornstarch to a smooth paste. Stir into the gravy and bring to a boil, stirring constant- ly. Overcooking can cause gravies thicken- ed with arrowroot or cornstarch to become too thin. Rethicken with more arrowroot or cornstarch. Cook just until thickened again; remove from heat. Curdled Hollandaise Remove sauce from heat and beat in 1 teaspoon hot water a few drops at a time. Oo not return to heat. Serve warm or at room temperature. Curdled Mayonnaise Start over with another egg yolk and add the curdled mayonnaise a drop at the time. Pale Com Bread Broil it for about half a minute. Or add a teasponful or two of sugar during mixing, to promote browning. Wilted Vegetables Pick off brown edges or cut out blemishes. Sprinkle vegetables with cool water or leave a few minutes in cold water; then wrap in towels and refrigerate for an hour or two. Make Ahead Whipped Cream To keep freshly whipped cream for a short time pour it into a fine-mesh strainer over a bowl and refrigerate. Some liquid will separate from the cream and drain into the bowl, but the whipped cream will hold its stiffness for an hour or more. Doubling a Recipe If you have enough storage space, and your family likes a particular dish, you may save time and energy if you double recipes such as: stews, sauces, gelatin desserts, soups, and prepared puddings. Decreasing a Recipe If fractions won't come out even, take them to the nearest 1/8 teaspoon and the recipe will usually work out well.
