It functions as an integral part of the home economics program. Future Homemakers of America: 40 Years of Real Learning is the theme for National FHA/HERO Week, celebrated by Future Homemak ers as part of Vocational Education Week, February 10-16. During this week, members of the Georgia Association will focus on how voca tional education and Future Homemakers of America prepare them for the future. (Our guest columnist this week is Kelley Wims, Georgia President of the Future Homemakers of America, P.O. Box 682, Lumpkin 31815.) In a nationwide observance, 350,000 young men and women are highlighting the leadership and decision-making skills they have developed through projects related to family life concerns, community involvement, and personal growth. Also, to implement the week's theme, members have designed ac tivities that show the relevance of home economics education to youth development while celebrating the (Continued on Page 16) $300 in Prizes The Georgia Department of Agriculture, through its regulatory services, lends great support to the state's multi-million dollar egg industry. The Depart ment has the responsibility of enforcing various regulations designed to pro vide consumers a wholesome quality product. "Our Department is proud of the egg industry in Georgia," says Com missioner Tommy Irvin. "The pro ducers work closely with the Depart ment to insure consumers have the highest quality egg possible for their purchase." How does the Department ac complish this? Through its inspec tion division, the Department en forces regulations pertaining to grading and storage of commercial eggs. From the poultry farm to the local grocer, this inspection process benefits both the producer and the consumer. Eggs are at their freshest when first laid. As hens lay the eggs, they are gathered by hand, or in the case of automated houses, gently roll down a conveyor belt. The eggs are then transported to the packer. Eggs are generally refrigerated at 45 to 55 degrees dur ing transport and storage even though this is not required by federal and state laws. Eggs will stay fresh much longer when under refrigera tion. At the packing plant, the eggs are thoroughly washed and coated with a light vegetable oil. The oil is natural, tasteless, colorless and odorless. Each egg has thousands of pores in its shell which can absorb air and cause the egg to lose quality. By sealing these pores with an oil, the eggs stay fresh longer. After all the impurities have been removed from the outer shell, the eggs pass over a high intensity light. This process is known as candling because originally eggs were in spected by holding them over a can dle in a darkened room. Candling allows the inspector to check for flaws and impurities inside the shell. B. Frank Strickland of Lakeland, direc tor from Georgia, and Fred G. Bond, general manager, jointly announced the meeting will be held in Valdosta, Georgia, February 22, beginning at 2:00 p.m. The auditorium is located at 2311 Williams Street, near South Georgia Hospital. The meeting will be extremely im portant to flue-cured tobacco growers, as well as to others in terested in the tobacco program. For the past three years (1982-1984), price support loan operations have been administered under provisions of the No Net Cost legislation. The impact of this legislation has placed a tremendous financial burden upon the growers. Under the law, growers must underwrite any potential losses through an annual assessment. PageS Georgia Cooking DARK CHERRY DESSERT CAKE 3 eggs g 1 cup sugar 1 3/4 cups all purpose flour 1/8 teaspoon salt 2 teaspoons baking powder 2 tablespoons water 1/2 teaspoon vanilla 1/4 teaspoon almond extract 1/4 cup chopped pecans g 1 1/3 cups canned dark cherries, drained Cream eggs and sugar until lemon colored, add remaining ingredients except pecans and cherries. Prepare two 8 inch cake pans and line bottom with waxed paper. Pour batter equally in each. Drop cherries on top of batter and sprinkle with pecans. Bake at 350 for 30 minutes or until done. Cool and remove from pans, top with whipped cream. If you have a favorite recipe using eggs, this is your chance to enter! The only requirement is that your recipe be a main dish containing a minimum of one egg per serving. The recipes will be judged on nutritional quality, ease of preparation, taste appeal, appearance, and creativity. The contest is divided in two categories; the youth divi sion is made up of those that are junior and senior high school age, and the adult division is anyone older. A first, second, and third place winner in each category will be awarded prize money of $250, $150, and $100, respectively. In addition, the first place winners will receive one dozen eggs a week for one year. The first place winners will automatically be entered into the American Egg Board's Na tional Egg Cooking Contest, with the chance to win a first place prize of $4,000.
