FARMERS & CONSUMERS Tommy /rv/n, Commissioner Georgia Deparfmenf of Agriculture Market Bulletin Vol. 70, No. 32 Wednesday, August 8, 1984 Hcmlei Booming Horticulture Industry ABAC Combines Ag and Business Abraham Baldwin Agricultural College (ABAC) is well known throughout the state and the Southeast for its agriculture, forestry and home economics programs. However, ABAC is much more than just agriculture. ABAC has one of the strongest business programs of any junior college in Georgia. This works to the benefit of many students who choose to mix courses from agriculture and business into an education that will meet their particular needs. (Our guest columnist this week is Dr. Harold Loyd, Chairman of the Division of Business Administration at Abraham Baldwin Agricultural College, Business-Humanities Building, Tifton 31793.) One of these programs is the agribusiness program in which students enroll who desire a strong program of agricultural courses along with some business courses. I can foresee more students enrolling in a business program who already have an agricultural background and who plan to return to some phase of agriculture. Many of these students need to pick up a few specialized agricultural courses and then a strong dose of business courses such as accounting. There are many factors that are vital to a profitable operation, not the least of which is a good background in management and marketing. The day has passed when all you had to do was worry about the production side of agriculture and then let someone else determine your marketing plans. I have heard many agricultural producers remark that they wish they had more business fundamentals so they could make their production background more profitable. Dear Editor: I would like to hear from people who eat fried okra. The reason for this request is that there seems to be a conspiracy among seed companies, gardening magazines, culinary publications, etc. against frying okra. They all give out that bit about thickening soup, boiling, etc., while you and I both know that most of the okra eaten in the country is fried. I am hoping to write an article on the subject some day. Those editors downgrade fried foods, then on their way home stop for a bucket of fried chicken. Mix together next 7 ingredients. Add broccoli and onions and stir. Pour into a 9 x 13 inch baking dish and place chicken on top. Sprinkle with paprika. Bake at 350 degrees for 1 hour. Serves 6. Peaches Although peach season will soon be over in the state, there are still fresh, Georgia peaches available in the grocery stores and at farmers' markets. Use them in one of the delicious recipes included below. LOW CALORIE PEACH SHAKE Great Tasting ... only 75 calories 1/2 cup sliced Georgia Peaches g 1/2 cup skimmed milk g 2 drops almond flavoring (if desired) 1 package artificial sweetener 4-8 ice cubes, cracked Process peaches, milk, sweetener and flavoring in a blender. Add ice cubs one at a time while blender runs at a high speed. The drink will be quite thick, but 12 ounces has only 75 calories. PEACH BREAD 1 1/2 cups sugar 1/2 cup shortening 2 eggs g 2 1/4 cups pureed, fresh Georgia peaches g (6 to 8 medium size) 2 cups all-purpose flour 1 teaspoon cinnamon 1 teaspoon soda 1 teaspoon baking powder 1/4 teaspoon salt 1 teaspoon vanilla 1 cup finely chopped pecans g Cream sugar and shortening together. Add eggs and mix thoroughly. Add peach puree and dry ingredients. Mix thoroughly. Add vanilla and chopped pecans and stir until blended. Pour into two loaf pans that have been well greased and floured. Bake at 325 for 55 minutes to 1 hour. Let bread cool a few minutes before removing from pan. Makes 2 loaves.
