At the close of Expo '83, over one million visitors, domestic and international, will have been exposed to the Expo in just six short years. I do not believe they are disposing of their dead chickens properly. M.M. Gainesville Our inspector's investigation revealed that the farm has four poultry pits, all meeting regulations. The yards had been mowed and sprayed. The owner appears to be doing everything possible to keep the flies down. Our inspector recommended the owner spray with a 50 percent concentrate of malathion when the chickens are sold and keep everything as clean as possible. As you know, with the hot weather, it is practically impossible to eliminate all flies around poultry farms. ** Do you have any information on raising crawfish and how to cook them? J.M. Once the crawfish is cooketl you pick off the shell and pick out the meat using toothpicks. Drought Stricken Ga. Soybeans Face Further Yield Reductions Stem canker disease, a fungus which attacks a plant's nodes and kills it from the point of attack up, is threatening to further reduce Georgia's soy- bean crop yields. Earlier drought conditions already had resulted in a significant reduction in soybean yield prospects. _ Fa.ll i.s.."peanut-.b.o.il.ing". ti.me in Georgia. The southwest counties of Baker, Brooks, Colquitt, Early, Grady, Miller, Mitchell, Seminole, Thomas and Worth appear to be hardest hit, but soybean pathologists and agronomists say the disease also is appearing in other parts of Georgia. Some symptoms may have been masked by the severe drought damage. The experts are predicting an average ten to 15 percent drop in production in the southwestern Georgia counties, with individual farmers experiencing yield losses of as much as 50 to 75 percent. "During a year when our soybean yields already have been seriously reduced by drought, a disease such as this comes as an especially painful blow," said Georgia Commissioner of Agriculture Tommy Irvin. (Continued on Page 12) Developed in Athens Repair and Clean Chimneys Before Cold Weather Arrives A warm blazing fire may be the farthest thing from your mind during the early days of autumn. But, the time to prepare your fireplace for safe, efficient winter operation is before cold weather arrives. Like the rest of your home, your fireplace and chimney also require preventive care and maintenance. You should inspect your chimney at least once a year, preferably before the heating season begins. Inspect the inside of your chimney by holding a mirror at a 45 degree angle and shining a flashlight up the flue. Check for loose bricks, cracks or breaks in the flue. Another way to check your flue for cracks is to build a small fire in the hearth and place a wet blanket or newspaper on top of the chimney. Then sniff or check to see if smoke is escaping through the chimney walls. Any sign of escaping smoke indicates a crack or loose mortar that needs repair. While inspecting the flue, you also need to look for accumulation of soot and creosote. Creosote, a by-product caused by burning green or resinous (Continued on Page 12) Small grain producers now have the option of planting a new, early variety of barley. Dawn, a semihardy winter barley, was developed and released by the College Experiment Station in Athens in December 1981. The variety is a selection of a cross between Barsoy and a Florida selection that is resistant to spot blotch. The name Dawn was selected because of its early maturity. Dawn is a short, rough-awned variety that is as early as Barsoy but is three inches taller. It has a head and kernel type similar to Barsoy but has more resistance to spot blotch, net blotch and septoria. Peanuts * * Fall is the season for that traditional Southern favorite i boiled peanuts. Boiled peanuts are easy to prepare and require little besides an accommodating farmer, green peanuts, salt, water and a big pot. According to Georgia Peanut Commission Home Economist Marilyne Hubert, before boiling wash peanuts thoroughly in cool water and soak for about 30 minutes. Then place peanuts in a saucepan and cover with water, adding one and a half tablespoons of salt for each quart of 4 peanuts. Boil peanuts for 30 minutes and taste to see if they are salty enough. Taste again in 10 minutes, both for salt quantity and to see if peanuts are cooked enough. Fully-cooked peanuts should be similar in texture to a cooked dry pea or bean. If peanuts are not ready, continue tasting every five minutes until they reach a satisfactory texture. In order to boil peanuts in a pressure cooker, Hubert says, clean and wash peanuts as before and place them in the cooker. Cover peanuts with water salted at a rate of one to one and a half tablespoons per quart of peanuts. After the I pressure comes up to 10 minutes, cook peanuts for 18 minutes. Hubert warns that in both the above cases peanuts I should be drained after cooking or they will continue to absorb salt and become over-salted. Peanuts now are being harvested throughout the peanut * belt, Hubert says, and anyone interested in obtaining green peanuts for boiling and not lucky enough to know a * generous farmer, should check with the grocery store or * farmer's market.
