Utz, a timber investment and tax specialist with the U.S. Forest Service of Atlanta, in the 1983 Forest Farmer Manual just off the press. "Return on investment, after taxes, is favorably high when compared with most other investments available to private forest farmers," continues Utz. Articles cover the use of advanced technology in developing timber management plans, the latest methods of harvesting timber, costs of forestry practices, keeping records for best tax results, chemicals used in forestry, landowner assistance programs, markets for timber, and many other subjects related to effectively managing timber. The Forest Farmers Association is a unique grassroots organization of timberland owners located in 15 southern states organized to represent the voice of timber growers and provide up-to-date information on timber management. Membership is comprised of mainly small- to medium-sized owners who control almost 40 million acres across the South with some 85 percent owning 500 acres or less. The association seeks to encourage better management of southern forest lands through educational and legislative activity. Besides adding beauty to the landscape, ponds also serve many practical purposes. Over two million ponds had been built across the United States by 1980 according to the United States Department of Agriculture. There are two general kinds of manmade ponds. An embankment pond is made by building an embankment or dam across a stream, where the stream is depressed enough to permit the storage of at least six feet or more of water. The size of the surrounding watershed (the area that drains into the pond) is an important consideration. It should be large enough to supply water needed to fill the pond. PEACH STUFFED CHICKEN BREASTS 6 whole chicken breasts, boned and skinned g 1 1/2 teaspoons salt, divided 1/8 teaspoon pepper 3 fresh Georgia peaches, peeled and diced g 1/2 cup chopped onion g Vt cup chopped cashews 1/8 teaspoon ginger 1/4 cup butter g Creamy Fresh Peach Sauce Place each breast on waxed paper on cutting board. Using a mallet flatten to Vt in thick. Sprinkle salt and pepper! over each chicken breast and set aside. Combine peaches, onions, cashews and ginger and stir well. Place approx- j imately 1A cup in center of each breast, fold over and secure [ with a toothpick. Melt butter in a 13x9x2 inch baking dish. Place chicken in butter. Bake at 375 for 25 minutes, turn and bake 25 minutes more. Serves 6. CREAMY FRESH PEACH SAUCE 2 fresh Georgia peaches, peeled and diced g 1-8 ounce carton sour cream g Vt cup brown sugar, packed 2 teaspoons prepared mustard 1 tablespoon brandy Vi teaspoon salt Combine all ingredients and simmer for 8-10 minutes. | Serve with stuffed chicken breasts. SPICY PEACH CAKE 1 cup shortening 1 1/4 cups sugar 2 eggs g 1 teaspoon vanilla 2 cups mashed, fresh Georgia peaches g 1 cup raisins 2 cups all-purpose flour g !/2 teaspoon salt 1 teaspoon allspice 1 teaspoon cloves 1 teaspoon cinnamon 1 Vz teaspoons baking soda 1 Vz teaspoons cocoa In a large mixing bowl, cream shortening and sugar. Add j eggs one at a time, mixing well after each addition. Add vanilla. In a small saucepan, heat peaches and raisins until raisins are plump; cool slightly and add to creamed mixture, i Combine dry ingredients and carefully add to peach mixture. Pour into a greased, 13x9 inch pan. Bake at 350 for 35-40 minutes. Garnish with whipped cream and sliced peaches or serve i plain. Serves 8-10. The "g" signifies that this is a Georgia product.
