FARMERS & CONSUMERS Tommy /rvin, Commissioner Georgia Department of Agriculture Market Bulletin VOL. 69, NO. 13 Wednesday, March 30, 1983 Vow Georgia Formers Join Nation Fastest Growing US Beef Breed The Simmental is one of the oldest and most widely distributed of all breeds of cattle. The breed originated in the Simme Valley in western Switzerland. The first herd book was estab- lished in 1806. Worldwide Sim- mental are recognized as the second most popular breed of cattle with an estimated 43 * million head. On- ly the Brahman are more populous. Simmental is America's fastest growing beef breed. Since 1968, when the first Simmental semen entered the United States, the breed has grown to fourth place in the volume of annual registrations. In December of 1982, there were 785,060 registered Simmental in the United States. (Our guest columnist this week is Lindy Davis, President of the Georgia Simmental Association, 1683 Prospect Road, Lawrenceville 30245.) Open artificial insemination is possibly the single most important factor responsible for the dramatic growth of Simmental cattle in the U.S. As a result, the best sires in the breed, as determined by provenprogeny performance are used extensively. Simmental excel in their ability to cross with the American beef herd available today. They not only add growth, feed efficiency and muscle to the mix, but they also have the added features of sound udders, more abundant milk and improved reproductive efficiency. Simmental cross-cattle are bringing a premium from $1.00 to $5.00 per CWT over all other breeds. Adding the pounds the Simmental sires will put on the calves greatly enhances the profit potential for the commercial cow-calf producer. This clearly shows that buyers are looking for medium to large frame steers and 93 percent of Simmental steers fit that category. The programs are intended to reduce surpluses and to eventually help raise depressed farm prices. Backyard Not a Requirement For Fresh Vegetable Supply Wheat farmers will receive 95 percent of their established base yield per acre for the amount diverted. For corn, grain sorghum, rice and upland cotton, farmers will receive 80 percent of their established base yield. More than 82 percent of Georgia's cotton farmers enrolled in PIK, and will take 100,301 acres out of production. Nationwide, 94.6 percent of cotton producers participated in PIK. (Continued on Page 15) ag consumer line . . . A sunny, spacious backyard is ideal for a vegetable garden. However, it is not a necessity. Container gardening provides an appealing alternative for gardeners confined to apartments, mobile homes, condominiums or townhouses where gardening space is often unavailable. Mobility is a big plus of container gardening. Since most vegetables require at least six hours of sun a day, container gardening allows you to move your vegetables as the sun moves. In addition, container gardens or "mini" gardens can be decorative as well as edible, To start a mini-garden, you must first select a container. The possibilities are unlimited and may I contacted an exterminating company to have my home treated for termites. I was told by the owner that he was a licensed exterminator; but the two men who would treat my house were not licensed. Shouldn't they be licensed, too? J. C., Savannah The men who will do the actual work do not need a license as long as they are under the supervision of a licensed exterminator. *** You may call Consumer Services toll-free at 1-800-282-5852, or in metro Atlanta, 656-3645, if you have questions or problems related to products or services regulated by the Georgia Department of Agriculture. Jan Eberly, National FFA President from Fallbrook, California and Thomas Hardy, State FFA President from Athens, visited the Georgia Department of Agriculture in conjunction with the recent Agriculture Day activities. Jan is the first female to serve as National FFA President and Thomas is the first State FFA President to be elected after graduating#from high school. The special handicraft edition of the MARKET BULLETIN will be published on April 20. Deadline for notices is April 6. Regulations for han- dicrafts will be relaxed in this edition to include ornamental and gift items not regularly published. All notices should include an affidavit stating that the item was made by the individual advertiser and not purchased for resale. Page 2 Dear Editor. When I was a little girl, I remember my father always in- sisted on planting green beans in his vegetable patch on Good Friday. Do any of your readers know the reason for this? MARKET BULLETIN Reader (send responses to the MARKET BULLETIN office) Dear Editor I would like to send the MARKET BULLETIN to my daughter in Kentucky. She is a transplanted Georgia farm girl and I think that she would enjoy keeping up with her home state's agricultural happenings. Please let me know what I need to do to have her name added to the mailing list. Nora Jones 56 Hill Street Atlanta, Georgia 30310 (Editor's Note: There Is a $5 annual fee for out of state subscriptions. Just send us your daughter's name and address, along with a $5 check or money order and we will be glad to add her name to our subscription list.) Dear Editor I just wanted to let you know how much I enjoyed reading the winning essays from your Agriculture Day contest. I am delighted to know that knowledge and appreciation for agriculture is alive and well. I would like to see Georgia schools emphasize agriculture more in their basic curriculum. Agriculture could be incorporated in almost every course from mathematics (how to measure an acre) to science (how seeds germinate). After all, when it comes down to it, everything does start out on the farm. Agnes Taylor Route 2 Cairo, Georgia 31728 Dear Editor I am seeking information on the Grangers, an organiza- tion of farmers who were in the Vienna, Georgia area. More specifically, I am looking for their building which was thought to be an acre of land (1860-75) in the southwest corner of the northern half of land, lot no. 93, district 7, in Dooley County. This land was purchased in 1860 from Fennity Ann and son John D. Garvin for the purpose of building a house of worship to be known as an "arm" of Providence Church (now Vienna First Baptist Church). The "arm" was constituted as Mt. Pleasant Baptist Church in June 4,1872 with 15 charter members. Tradition has it that the first house of worship was built by the Grangers. I would appreciate any information concerning the building. Miss Nell Bond Clerk-Historian Route 2, Box 469 Cordele, Georgia 31015 Dear Editor I am looking for a recipe for sausage made with either dried beans or peas and regular sausage seasonings. I also am looking for a tea cake recipe. My grandmother used to make them when I was small. She rolled them out and baked them like biscuits. They were more like a sweet bread than cake and I don't think that they had eggs in them. I would appreciate any help anyone can give me. Mrs. M. Tolbert 103 Avenue F, SE Lindale, Georgia 30147 (Editor's Note: The USDA is developing and updating a list of farms and ranches which accommodate paying guests for working vacations. If you would like to be included on that list, please send notice to the Georgia Dept. of Agriculture, Room 230, Capitol Square, Atlanta, Ga~30334. There is no fee to be included on the list.) Ph. 912-586-6687, ,, > Page 5 eorgia Cooking The Georgia Egg Commission has some "eggspert" advice when it comes to cooking, storing and using hardcooked eggs during the Easter season. HARD-COOKING EGGS For perfect hard-cooked eggs, cover in a pan with enough water to come at least one inch above the eggs. Bring rapidly to a boil. Turn off heat and if necessary, set pan aside to prevent further boiling. Cover, let stand in the hot water 15 minutes. Cool immediately and thoroughly in cold water. This makes the shells easier to remove and helps prevent dark surfaces on the yolk. STORING HARD-COOKED EGGS Make sure shells are not cracked or dirty before storing hard-cooked eggs. Keep them in the shell; this way you can store them under refrigeration for up to four days. If eggs have been at room temperature for two hours or less, they may still be refrigerated without damage for up to four days. If you have hard-cooked eggs left over from Easter, use them in one of the delicious recipes featured below. CONTINENTAL CASSEROLE 6 servings Have your egg salad hot and hearty in the form of a goodlooking, great-tasting casserole. 1/3 cup butter g 1/4 cup fine dry bread crumbs 1/4 cup all-purpose flour 1/2 teaspoon salt 1/8 teaspoon pepper 1 1/2 cups milk g 1/4 cup (1 oz.) shredded Swiss cheese 1/4 cup Parmesan cheese 6 hard-cooked eggs, sliced g 1 package (10 oz.) frozen chopped broccoli, thawed and drained 1 cup cubed cooked ham, optional 1 can (4 oz.) sliced mushrooms, drained Parsley sprigs, op tional. In large saucepan over medium heat, melt butter. Remove 1 1/2 tablespoons and stir into crumbs. Set aside. Blend flour, salt and pepper into remaining butter. Cook, stirring constantly, until mixture boils and is smooth and thickened. Remove from heat. Stir in cheeses until melted. Reserve 3 center egg slices for garnish. Chop remaining eggs. Stir chopped eggs, broccoli, ham, if desired, and mushrooms into cheese sauce. Pour into greased 9x9x2-inch baking dish. Sprinkle with reserved crumbs. Bake in preheated 350F. oven until hot and bubbly, about 20 to 25 minutes. Garnish with reserved egg slices and parsley, if desired. Georgia Egg Commission CURRY PICKLED EGGS 12 appetizer servings Try a Pennsylvania Dutch specialty - Pickled Eggs. Peel your hand-cooked Easter eggs, place them in jars, cover with a pickling brine and refrigerate. Once marinated, you'll have a snappy, adult taste treat. 2 cups white or white wine vinegar 1 medium onion, sliced and separated into rings g 2 tablespoons sugar 2 teaspoons whole mixed pickling spice 1 teaspoon salt 1 to 2 teaspoons curry powder 12 hard-cooked eggs g In medium saucepan, combine all ingredients except eggs. Over low heat, bring to simmering. Simmer, uncovered, until onion is tender, about 10 minutes. Arrange 6 eggs in each of two 1-quart jars with tight-fitting lids. Pour 1 cup vinegar mixture into each jar. Cover and refrigerate several hours or overnight to blend flavors. Store in refrigerator.
