Progress Takes Cooperation Activities during Farm-City Week provide the opportunity for urban and rural people to understand each other's common interest, mutual concerns and economic ties and see how much each contributes to the welfare of the other. Participation in Farm-City Week gives people a clear understanding of the interdependence of the rural and urban sectors. Taxes and cost of living, land use and air and water pollution are shared concerns, not problems to blame on one side or the other. This year Farm-City Week will be observed throughout Georgia November 20 through November 26. (Our guest columnist this week is Dr. J. W. Pou, 1981 Chairman, Farm City week and Assistant Director, Community and Rural Development, Cooperative Extension Service, University of Georgia, Athens 30602.) Programs and activities during this week will include luncheons, exhibits and tours of farms and industrial plants. The program will be designed to help rural and urban citizens work together more effectively as partners in economic progress. Program information and local plans will be coordinated through the county offices of the Cooperative Extension Service. Improvements in our country's food supply over the last 35 years reflect progress in both agriculture and industry. Farmers are maximizing yields with improved practices and crop varieties while industry is developing better fertilizers, chemicals and machinery. Through increased farm efficiency, American consumers now spend only 17 percent of their after-tax income for food. No Other country has been able to equal that record. A dozen eggs, a sack of potatoes, a slab of steak, a chilled fresh fryer, a carton of milk, a pound of tomatoes we can buy them and hundreds of other items at almost any food store at almost any time and at comparatively reasonable cost. Reasonable that is compared with the cost of most other things; compared with the cost of food in other advanced countries in the world; and compared with the share of our income that food takes now as contrasted with 10, 20 or 30 years ago. There were fewer pre-packaged foods, less variety and their food budget took a bigger bite out of their annual salary. Thirty years ago the average family spent 23% of its income for food. What makes this possible is the hard work, efficient production and modern know-how of farming and agricultural technology. Farm people and city people depend on each other for products and services. I purchased some apple cider with the label stating one gallon; however, while using the cider in my apple butter recipe, which I have made for years, I realized that the product had to be mislabeled because I ran out of the cider before finishing my recipe. We appreciate your bringing this matter to our at- tention. *** What precautions should I take to avoid spoilage in preparing my holiday turkey? A.J. Sylvania To eliminate food spoilage, do not stuff the bird; prepare the dressing separately as germs will multiply in the turkey's warm cavity. If you prefer stuffing the bird, do so jus I before roasting. Stuff it loosely to allow heat penetration and remove all the dressing after cooking. After the meal is over, remember to refrigerate any leftover stuffing and turkey in separate containers. (Continued on Page 12) Pesticide Provides Wide Range Control One of the most common, yet versatile and important pesticides in use today is Sevin. Known generically as carbaryl, more than several million pounds of Sevin are used each year by farmers, gardeners and homeowners. Sevin, introduced commercially in 1958, works against a wide range of insects. It is registered for control of over 500 different pests on more than 100 different plants and animals including crops, trees, rangeland, poultry and pets. Because of its broad spectrum of activity, Sevin often controls a variety of insects on a given crop which otherwise might require the application of, several additional products for specific insect control. Sevin is used on pets and other animals as an active ingredient in flea powder and for tick control. If you soak them in detergent, they take months to dry. Try rolling your paper logs tight and tying them with a coathanger (which can be re-used) and only make every fourth log a paper one. H. J. The eggtree is an annual plant that grows from 1-1/2 to 2-1/2 feet high. It puts out a purple flower, then the eggs appear. The eggs are white when small and turn to a deep yellow when mature. There are usually six to ten "eggs" per plant. The first question many people ask when they see the tree is, "Can you eat the eggs?" The eggs can be eaten but a hen egg tastes better and is probably more nutritious . . . "eggstraordinary." The true Dominique is a slightly smaljer fowl with ir regular or v-shaped barring throughout its plumage. The Bar red Rock (a breed it is often confused with) has regular barr ing throughout its plumage. The Barred Plymouth Rock is a massive bird, long and broad in its back with a single comb. The Dominique is of short back, standing more erect, having a rose comb. Add \ eggs and beat well, add flour gradually and mix well. The \ dough is soft and will be easier to work with if cooled for an hour or so before using. Drop batter by teaspoons onto a lightly greased baking \ sheet. Bake at 400F for 8-10 minutes or until tightly browned.! Remove from pan at once. Recipe may be halved if desired, makes 9 dozen cookies. Batter may also be rolled in wax paper and frozen. Simply slice the dough and bake when needed. Saute onions in bacon drippings until tender; set aside. Combine potato, water, salt and pepper in a sauce pan. Cook over medium heat just until potato is tender. Stir in clams, milk, butter and onions; simmer three minutes or until heated through. Sprinkle bacon over each serving of chowder. Serves 2.
