provide the local county Extension agent with the latest information on livestock production practices. We are backup resource personnel for the local Extension agents. 
In order to assist the county agent with his local educational programs, we also provide statewide leadership in several program areas. These areas include bull and boar test stations, performance testing programs, forage testing, field days, short courses and the junior livestock program. 
The junior livestock program is 
one of the most dynamic programs that the department is involved in. 
Last year we had over 1,200 4-H'ers in livestock judging, over 400 entries in the heifer show, around 700 in the junior steer program, 190 in the lamb show, 900 in the market hog show and 400 in the horse program. These young people are under the direction of local Exten- 
sion agents and leaders. Over the past several years, we

Recertify Your 
Pesticide License 
If you are currently licensed as a private pesticide applicator by the Georgia Department of Agriculture, you will need to earn three hours of training credit to maintain your license. 
Licenses are issued for a period of five years. Many will expire on October 21, 1982, unless training credits are earned before the expiration date. 
Your local county extension agent will be offering various grower meetings for credit this fall and winter. Most of these sessions will earn one hour of credit each. Check with your county extension agent and arrange to attend the meetings before your license expires.

Versatile Sweet Potatoes Supply

Sweet potatoes have long been considered one of the major moneymakers among Georgia vegetables with crop sales generating over $6 million income to the state's farmers in 1980. 
 
Six thousand acres of sweet potatoes were planted across the state this year with average yields of 11,500 pounds per acre (approximately 209 bushels per acre). The state's total production level reached 64,400,000 pounds. 
For nearly 100 years (1836 - 1936), Georgia was the leading sweet potato producing state in the nation, at one time having over 150,000 acres in production. Although acreage has dwindled due to replacement by other crops and high production costs, its importance has not. 
"At one time everybody had a patch of sweet potatoes because they kept well in storage and there wasn't the variety of foods that exist today," explained James Barber, Extension horticulturist, Tifton. "Now, most people buy sweet potatoes at the grocery store that have been produced by larger growers." 
Sweet potatoes are a high cost labor intensive crop, according to Barber. Extensive labor and capitol 
are necessary to bed, grow, transplant, hand harvest and cure the crop. Many growers also have the added expense of irrigation. 
 
While sweet potatoes can be grown throughout Georgia most of the production is located in the Coastal Plains region because of more favorable soil and climate conditions. Irwin, Tift, Worth, Turner and Lee counties are considered the "sweet potato belt". The income generated by sweet potatoes has a significant impact to the economy in these counties. 
There are plenty of Georgia sweet potatoes presently available in grocery stores and at Georgia State Farmers' Markets across the state. Currently, Red Jewel and Georgia Jets are among the most popular varieties being produced, according to Barber. 
When selecting sweet potatoes, look for smooth, firm, well-shaped potatoes free from spots of decay. Decay causes an unpleasant flavor even to parts of the vegetable unaffected. 
Sweet potatoes are sold as green, freshly dug potatoes or cured. Either crop is equally good.

Epsom salts (magnesium sulfate) can be used to deepen the color of flowers or colored foilage, thicken petals and foilage, and to stimulate root growth'. Add 1/4 teaspoon to the soil of each four inch pot in the fall. 
One way to check and see if your small foilage plants need water is by using the "dip stick method." If the top of the soil seems dry, but you are not sure about the condition of the remaining soil, slide a wooden stick (an ice cream stick is ideal) down the interior side. Like a dip stick that helps check the oil level in your car, this helps determine the water level for your potted plants. When it comes out, you can see how far the moisture level extends and water if needed. 
To overwinter geraniums, pull the plants up by the roots after the first frost when they turn brown. There are many storage methods at this point. One method is to lay each geranium diagonally across a double spread of newspaper and wrap. Place the wrapped roots in a cool damp basement and leave them until March.

SWEET POTATO SOUFFLE CRUNCH 
3 cups cooked, mashed sweet potatoes 1 cup sugar Vi teaspoon salt 2 eggs, slightly beaten 2Vz tablespoons butter or margarine, melted Vt cup milk 1 teaspoon vanilla 
Mix all ingredients together and pour into a greased baking dish. Cover with crunch topping. Bake at 350 for 35 minutes. 
CRUNCH TOPPING Melt 2 1/z tablespoons of margarine. Add 1 cup brown sugar, 1/3 cup all purpose flour and 1 cup chopped pecans. Serves 6-8.

Sweet Potatoes

"Green" potatoes are likely to have more delicate skin and bruise easily. Because these potatoes are more susceptible to damage, they tend to spoil quickly and must be used within a short period of time. 
Cured potatoes are held in well-ventilated curing barns at a high temperature and humidity for five to seven days. This process promotes healing of wounds and bruises acquired during harvesting. Cured potatoes can be held up to four to six months under proper conditions. 
Handle potatoes carefully and store at room temperatures. Never refrigerate this could cause cold damage and lower the vegetable's quality. 
The versatile sweet potato can be enjoyed raw, boiled, baked, mashed, fried, candied and souffled. Not only are they delicious but Georgia sweet potatoes are also good for you. 
One medium potato provides a full day's supply of Vitamin A and contains appreciable amounts of 14 other nutrients. As an added bonus, one medium potato contains only 135 calories.

Horse Sale 
The first national hunter and jumper sale will be held in Atlanta November 13 and 14. This sale, the first of its kind in the nation, will offer 160 horses at auction with an anticipated attendance of more than 2000 people. 
People from all over the U. S. and several foreign countries plan to attend to see horses like "A Touch of Class," expected to sell for approximately a quarter of a million dollars, be auctioned.
