1/2 cup butter or margarine 
 
1/8 teaspoon pepper 
 
1 teaspoon lemon juice 
 
3 whole chicken breasts 
 
1 tablespoon chopped parsley 1/2 cup flour 
 
1 tablespoon chopped chives

1 clove garlic, crushed 
 
1/3 cup cornflake crumbs 
 
1 teaspoon salt 
 
1 cup pecans chopped fine 
 
Beat butter until soft. Stir in lemon juice, parsley, chives, 
 
garlic, salt and pepper until well combined. Spread mix- 
 
ture onto wax paper to a 4 x 3 inch rectangle, about 1/2 
 
inch thick. Place in freezer to chill, about 20 minutes. 
 
Split chicken breasts; remove skin; carefully cut meat 
 
from bones, keeping meat in whole pieces (6 in all). Place 
 
each piece, smooth side down, between 2 sheets of wax 
 
paper. Platen with wooden mallet or heavy object to about 
 
1/2 inch thickness, being careful not to break meat. (This 
 
pounding stage is essential for recipe success.) Remove 
 
papers. 
 
Remove herb-butter from freezer, cut lengthwise into 
 
six 1/2 inch-wide sticks, then half across to make 12 
 
"fingers." Place a "finger" of herb butter in center of each 
 
flattened chicken breast. Bring long sides of chicken over 
 
butter; then fold ends over, being sure butter is com- 
 
pletely covered. Fasten with wooden picks. Roll in flour, 
 
dip in beaten egg, then roll in crumb mixture to coat com- 
 
. pletely and evenly with crumbs. Wrap individually or a 
 
few together in foil; freeze. 
 
To bake: Unwrap chicken rolls, place in single layer in 
 
jelly roll pan. Bake in 425 degrees F. oven 5 minutes. Low- 
 
er heat to 400 degrees F. Bake 20 minutes longer.

Production 
 
Water management is extremely important to profitable crop production. Where irrigation is used, soil moisture should be observed closely. Severely depleted moisture is difficult to replenish during peak plant growth. 
Farmers must be aware of crop pests at all times. 
Harvest on time. When harvest conditions are good, it is again time to work long hours and get the crop harvested before yield and quality is lost. 
Timing - Timing - Timing. A major factor in profitable crop production is proper timing of the jobs that must be done. The calendar, the moisture, the day length, the temperature do not wait on man. Man must take advantage of timely opportunities for profitable crop production.

When you take your Christmas tree down, save it. Old trees can be decorated with bird seed, suet, etc. to attract wild birds to your yard and add some life to the winter landscape. 
Whole trees can be used as temporary windbreaks for plants that need more protection from the coming winter winds or cut branches can protect smaller plants. 
Flame violets, like all other violets, do not like to get their foilage wet. If moisture is on the foilage, the leaves will discolor. 
"I didn't believe my son-in-law when he told me to put an apple in with my bromeliad to make it bloom," writes Agnes Warren. "When the bloom showed, however, I had to apologize. 
"Phil told me to place an apple in a plastic bag with my bromeliad, pot and all. Leave it for three or four days and then remove the bag and apple. Two months later I have a beautiful blooming plant," Mrs. Warren concluded. 
The reason behind this is that bromeliads need ethylene gas to form flowers and the apple gives off the needed gas. However, if your bromeliad has bloomed once, it won't bloom again no matter how many apples you use. It is now a mother plant producing "pups" which will bloom at maturity.

Soil is the basic resource farmers have to manage in producing profitable crops. What crop is the soil best suited to grow, what level of plant nutrients 
are available in the soil, and what weed seed, insects and diseases does the soil contain. These are very important questions a farmer must answer in 
order to reduce production risks. 
 
As a general rule, higher crop yields produce the greatest profit. Production recommendations made by the Cooperative Extension Service are generally based on optimum economic response for the specified crop growing in a good environment. 
Farmers should take soil samples and have them analyzed well ahead of planting the next crop. Soil test data, along with farm records of

previous fertilizer used and crop yield will provide information for making sound economic decisions on how much of each fertilizer element is needed. Under use or over use of fertilizer and lime can reduce profits. 
Farmers should make a written record of weed problems for each field that will be planted in 1981. Weeds that were a problem in 1980 will likely be back in 1981. Weeds can be controlled mechanically and chemcially. Both preemergence and postemergence chemcials should be considered. Early planning of weed control programs can reduce weed control cost and increase crop 
 
yields. Farmers should identify specific 
weeds that are major problems and select herbicides for the specific weeds. Band application and postemergence directed applications are 
good methods of weed control to consider. Both use less herbicide than broadcast methods. 
Farmers should plant seed of 
known quality. The use of certified seed is the best assurance of known 
quality and purity. Rate of seeding is important from the standpoint of 
actual seed cost per acre. Optimum plant growth and development is also influenced by spacing of plants. 
Planter equipment should be cali- 
brated to plajrjt. the desired number of seed per foot of row. 
Seed size of a given crop may vary from year to year or even from bag 
to bag of seed. Careful attention to 
planter calibration should be made 
well before time to plant. Proper spacing of seed, amount of soil 
covering the seed, firming of soil 
below and above the seed, soil moisture and soil temperature are extremely critical to rapid and 
healthy plant development. All major crops produced in 
Georgia require a certain number of growing days to develop. Time to 
plant is most important to optimum

Georgia 4-H'ers have captured eight national awards in competition recently held in Chicago. At the National 4-H Congress, 4-H'ers from all over the United States competed in different categories for grand honors and scholarship prize money 
This year Georgia 4-H'ers were tops in public speaking, food and nutrition, fashion revue, citizenship, photography, horses, leadership and achievement. Each winner receives a $1,000 college scholarship' to further the talents they have developed through 4-H participation. 
Public Speaking winner Fran Ivey, Wrightsville, credits 4-H with helping her channel her enthusiasm and energy in the right direction. "Through my project work, I've learned to refine my speaking and myself. Now I'm conscious of every word I 
 
say." Fran is a freshman at Agnes Scott College in Decatur, majoring in chemical engineering. 
As winner of the food and nutrition category, Regina Abernathy, Rome, used food to show comparative shopping, the importance of accurate measuring, and the need for food safety. For her 4-H project, she prepared 1,513 dishes, 987 snacks and 203 meals, many especially designed for the elderly and diabetics. 
Kenneth King, Hall County, took top honors in fashion revue. Designing, sewing and modeling a black, formal three-piece suit illustrated his talents in fashion and won for him the $1,000 scholarship prize. 
For her work in serving the elderly and handicapped of Bleckley County, Maria Greene was named national Citizenship winner. In her 
 
project, Maria taught low-income groups about home and community safety, and organized classes, for recreation and educational projects. 
Charlie Dawson, Jefferson, used his skill developed through a 4-H photography project to prepare fund 
raising slide presentations. The presentations of the New Dawn Center 
in Commerce and other examples of his photography expertise captured for him the national award in photography. Picture not available. 
Riding horses and teaching others about them helped Phyllis Buchen, Monticello, win the top prize in the 
4-H horse project. She credits the opportunity to work with horses at her family's Wildwood stables with her 4-H success. Phyllis has schooled green horses, taught riding and theory and planned horse shows. 
To capture the leadership award, 
 
Robby Sharpe, Millen, proved he was a dedicated 4-H'er. It took Robby nine years to reach his leadership goals a counselor at Rock Eagle 4-H camp and president of the 1979-80 Georgia 4-H Council. According to Robby, "Leadership ability is not inherited but developed by a lot of practice and hard work." 
DeLaney Hurston, Columbus, used her skills in arts and crafts to teach mentally retarded students 
and pre-schoolers and primary grade children about safety. "The cartoon-like characters tell a story 
about the do's and don't's of good ' safety practices," comments DeLan- 
ey. For her 4-H program, DeLaney was named national winner in ach- 
ievement. We congratulate our 1980 nation- 
al 4-H winners on their outstanding accomplishments.
