Future Looks Promising Varied Research Benefits Everyone At an agricultural experiment station one expects to see test plots of the various crops on which research is being done. Also, pens of animals, pigs or beef cattle, for examples, are common. I expect most think of agricultural research as being directed toward increasing production efficiency through science based production technology. New crop varieties more resistant to diseases and pests with improved quality characteristics and livestock management practices to produce more and safer meat, milk and other animal products are (Our guest columnist this week is E. Broad- us Browne, Associate Director, Georgia Agricultural Experiment Stations and Resident Director, Coastal Plain Station, Tifton.) the kinds of things generally expected from agricultural research. Success in doing these things has been phenominal and accounts in large degree for the U.S. being recognized as the world agricultural leader. The state-federal cooperative research at the agricultural experiment stations is involved in much more than just what takes place on the farm, as important as that is. This broad-gauge agricultural research program includes the whole range of functions involved in the entire food system. One of the important areas of research at the Coastal Plain Station has to do with what happens to a food product from the time it is harvested until the consumer takes it from the grocery store. One project researched the post-harvest quality changes of summer squash. The objective was to determine what changes occur in squash during a period from harvest up to nine days after it is harvested. It had been determined up to nine days is the time period fresh squash is frequently maintained in the marketing system. Sweet Potatoes Although our status as a sweet potato production leader has declined steadily since the 1930's, changes in our eating habits, improved sweet potato varieties and the possibility of using sweet potatoes as a base for alternate energy may reverse this downward trend. Research Links High Humidity To Eggshell Breakage Problem Egg breakage during handling and processing is a continuing problem for the poultry industry. Losses due to breakage are estimated at $70 million annually in the United States. To curb the breakage problem, researchers are testing a theory that humidity is a major factor in eggshell strength. Horticulture Courses A new program in horticulture is being offered at Reinhardt College in Waleska, Georgia. The program includes courses in plant identification, plant disease, insect control soils and fertilizers, greenhouse management and horticulture equipment. Researchers estimate that the egg industry can reduce breakage losses by keeping the relative humidity as bw as possible or by handling eggs when eggshell moisture is low. In two experiments testing the effects of temperature and air moisture on eggshell strength, 160 eggs were collected from a flock of young hens. In the first experiment, the eggs were held for 24 hours in a chamber with a temperature of 40 degrees F. and a relative humidity of 40 percent. (Continued On Page 12) For 100 years, Georgia led the nation in the production of sweet potatoes. Between 1836 and 1936 more than 150,000 acres of sweet potatoes were planted annually. By 1964, only 9,000 acres were planted; 6,000 acres in 1979. Since 1936 when production reached its peak, the crop has steadily declined. Blame is attributed to deterioration of sweet potato seed stock, competition from other crops and increased availability of other fresh vegetables. Plant Problems Between the 1930's and 40's, sweet potato seed stock suffered genetic and disease deterioration, a common problem for any crop which is intensely produced. Today, Georgia produces some of the most disease-free and pure genetic stock in the nation. Three or four varieties were developed in Georgia superior to anything previously produced. According to Dr. Silas Harmon, Professor of (Continued On Page 10) Helping Georgia Agriculture Grow For the past three years, Bob Wetherington, Hahira, has actively participated in a training program to educate European tobacco companies about Georgia gold leaf. As a host, Mr. Wetherington involves the young men assigned to him hi all phases of Georgia flue-cured tobacco planting, cultivation, harvesting and marketing. The training program helps create a positive environment for international customers with the Georgia tobacco market. Mr. Wetherington began tobacco farming in 1966 planting 20 acres. In 1980 he planted 275 acres and produced 575,000 pounds of tobacco. Mr. Wetherington [left] discusses auction procedure with Peter Niehusen, a trainee for a major German tobacco company. Considering Irrigation? Read Up and Decide As a result of the increased Georgia cropland under irrigation and the continuing drought problem facing many .farmers, a research program to study the effects of irrigation was initiated. After four years of study, three of the reports are in. One medium sweet potato provides a full day's supply of vitamin A, as well as appreciable amounts of as many as 14 other nutrients. All of this for a mere 135 calories. Color varies from pale yellow to dark orange-red. The darker the color, the higher the content of vitamin A. Varieties grown in Georgia include the Porto Rico, Georgia Red, Georgia Jet, Georgia Red Jewel, Centennial and Jewel. When selecting sweet potatoes, look for smooth, plump potatoes that are clean, dry and uniform in shape and color. Handle them gently and store at room temperature. Remember, raw sweet potatoes should never be stored at less than 60 degrees F. Sweet Potato Boats 4 medium sweet potatoes 3/4 cup grated cheddar cheese 1/2 cup milk 1 1/2 tablespoons melted butter 3/4 teaspoon salt Dash pepper Paprika Bake sweet potatoes at 375 degrees F for 60 minutes. Cut a lengthwise oval in peel; scoop out centers leaving 1 /4 inch shells. Whip sweet potatoes with 1 /2 cup cheese, milk, butter, salt and pepper. Stuff into shells; top with re- maining cheese; sprinkle with paprika. Broil until lightly browned. Serves 4. Sweet Potato Cake 1 cup shortening 1 Ib. box light brown sugar 3 eggs 1 teaspoon cinnamon 3 cups flour 1 cup sweet potatoes (baked and 2 teaspoons baking powder and mashed) 1/2 cup milk 1 teaspoon vanilla Cream shortening and sugar, add eggs and sweet pot- ato. Sift cinnamon and baking powder with flour and add to mixture. Add milk and vanilla. Bake in 350 degrees F oven for 30 minutes in two greased and floured layer pans. Allow to cool before icing. Icing 1 box confectioners sugar, sifted 1 stick butter 4 ounce block cream cheese 2 teaspoons vanilla 3 1/2 tablespoons milk 1/2 cup chopped pecans Place sugar in large bowl. Add butter, cream cheese, pecans, vanilla and milk. Beat until creamy. Sprinkle chop- ped pecans over top of cake after icing. Sweet Potatoes Horticulture at tlje Coastal Plain Experiment Station, Georgia now produces stock freer of disease than has been available for the last 75 years. Crop Competition The competition from other crops such as peanuts also attributed to the declining acreage devoted to sweet potato production. Sweet potatoes unlike corn and peanuts did not adapt well to mechanization. Cost and availability of labor still are a main factor in determining the feasibility of planting and harvesting the crop. Vegetable Competition Increased availability of other (Continued From Page 1) fresh vegetables also reduced the demand for sweet potatoes. Cheap transportation brought an increased variety of vegetables from California, Mexico and Florida. The assortment of fresh vegetables lured away many sweet potato fanciers who previously included the Georgia product in at least two to three meals each week. However, with the increased cost of transportation, the availability of "reasonably" priced vegetables from other parts of the nation is declining and interest is once again being focused on Georgia-grown vegetables such as sweet potatoes. times of food scarcity or food crisis. Varied Research Benefits Everyone (Continued From Page 1) Squash was harvested at its topquality stage; samples were placed in plastic bags and maintained up to nine days at three different temperatures. Quality determinations were made by chemical and physical analyses and by preparation and tasting immediately after harvest and after three, six and nine days of storage. As would be expected, the lowest temperature, five degrees centigrade, (about 40 degrees F.), maintained quality best for the longest period. However, maintaining squash at five degrees centigrade for an extended period may not be practical. Measure the detailed changes which take place under different times and temperatures to determine how to "maintain the product to meet consumer demand at the least cost. The next time you buy fresh vegetables at the supermarket they may have been better because of the kind of research conducted by scientists at the Coastal Plain Experiment Station and other such stations throughout Georgia and the nation. To make baby sock dolls: 1. Stuff foot of white infant size sock to 1/2 inch above heel. 2. To make neck, wind sewing thread several times around sock, pull tight and fasten. 3. For head, stuff sock to form 1 1/2 inch wide ball above neck fastening. Fold excess sock from top of head to back neck and fasten with thread wound around neck again. 4. For arms, stuff each side of excess sock at back of neck with small amount of cotton to form 1/2 inch balls. Wind and fasten each arm with thread. 5. For hair, cut 1 1/2 inch wide piece of cardboard. Wind yard of color desired around cardboard eight times. Slip yarn from cardboard, pinch together at center and tie tightly. Glue bunch of loops to top of head, clip loops. 6. For face, glue felt eyes, and mouth to head or embroider featues. 7. For baby blanket, fold back cuff of another infant sock of a different color. Pull sock over body, fold toe under and glue. 8. For baby cradle, cut paper towel tube, 31/2 inches long. Cut piece open lengthwise, flattening it slightly, cut to measure 31/2 inches square, round two corners for foot of cradle. 9. For cradle hood, cut 4 1/2 inches square from tube. Cut square in half, using one half only curve one 4 1/2 inch edge for top of hood. Before attaching hood to cradle, cut pieces of fabric size of cardboard and glue to surface to cover cradle. Decorate with lace, bias tape, flowers as desired. Lap and glue corners of hood over back corners of cradle. For large sock dolls: 1. Cut toe off sock, cut that part in half and stuff to form arms. 2. Cut the foot part of sock to heel. Embroider eyes, nose and mouth. 8. Sew knitting yarn around top of head, one inch in front for bangs and 6 to 8 inches around sides and back. It did, however, play a major role in shaping the agriculture of the tropical islands in the Caribbean. Breadfruit was originally native to Polynesia. As an all purpose food, it balanced a diet of fish and fruits to provide many nutrients otherwise not available. Breadfruit is a round fruit, about the size of a child's head. The pulp is mealy and adapts to many recipes similar to sweet potatoes. The part which is eaten is found between the skin and the core and looks like new bread. Cloth is made from the inner part of the breadfruit tree and the wood, which resembles mahogany, is used for building boats and furniture. In the late 1700's Captain Cook was commissioned to sail to Polynesia and bring back a load of breadfruit to the English colony of Jamaica. The H.M.S. Bounty, which had earlier experienced a mutiny under the leadership of Captain Bligh, succeeded in its mission and established breadfruit on Jamaica where it spread to other Caribbean islands. The breadfruit tree has low spreading branches, like our Georgia live oak trees. It grows to a length of about 40 feet. The leaves are shiny green and very large, up to one foot in length. The fruits hang in clusters and are ideally picked before they ripen. There are many ways to prepare breakfruit. Islanders sometimes mix the "bread" with coconut milk to make pudding; sometimes they beat the fruit to a paste, store it underground and eat it when it has slightly fermented. However, baked breadfruit with melted butter tastes like mashed potatoes, smells like fresh bread and is delicious. Eggshell Breakage (Continued From Page 1) In the second experiment, the eggs were held in another chamber for 24 hours at the same temperature but with a relative humidity of 80 percent. The eggs from both chambers were removed, mixed and placed in chambers with various combinations of temperature and humidity. After 20 hours, the eggs were broken on a testing machine that mea- sures eggshell strength. The results of the test concluded that the relative humidity of the environment is the critical factor, not the temperature. Researchers believe that changes in eggshell breaking strength are caused by changes in eggshell moisture, accompanied by changes in temperature after eggs are laid. The moisture is directly influenced by the relative humidity. The egg breaking machine tests the strength of an eggshell. If controlling humidity improves the breakage problem, the poultry industry could save mil lions annually.
