Christmas Tree 
Farming Grows 
During the last few years, the interest and activity in growing Christmas trees in the South, particularly in Georgia, has increased rapidly. ;The Georgia Christmas Tree Association membership has increased in the last two years from 75 to approximately 275 members. 
Most of the Christmas trees grown In Georgia are sold on a local level as a choose and cut operation. The choose and cut offers the customer a bhance to take his family to the field jand look around until they find the exact tree for them. They actually cut the tree themselves, which assures them of getting a fresh tree. It also provides the grower with a direct sale to the consumer at a retail level, rather than wholesale. 
The number of trees a grower can market as a choose and cut is limited to the sales potential in his immediate area. To go beyond a choose and

cut operation is more involved and should be investigated thoroughly prior to an investment of that size. 
Here in the South, the White Pine and Virginia Pine are the only two varieties that should be considered in large numbers as a commercial operation, with the Virginia Pine the most favored. 
Anyone interested in growing Christmas trees should first visit people who are already in the business, attend some of the various functions that are available throughout the year and certainly join the Christmas tree associations, both state and national. This gives them a chance to talk to people actively involved in the various Christmas tree activities. 
Contrary to a lot of peoples' belief, you do not plant a seedling and wait four to five years to go back and harvest it for a large profit. This is a very specialized business and requires a considerable investment of time and money; however, it can be profitable if managed properly.

Among the fondest memories of Christmases past is the refreshing fragrance of a fresh Christmas tree. With the arrival of fresh and live trees at Georgia State Farmers Markets, grocery stores and Christmas tree lots, here are a few tips on selecting the right tree and keeping it fresh for the holidays.

When selecting a fresh, cut tree keep in mind the area where it is to 
be placed. Remember the height is important since cutting off large 
 
shape. Also, if the tree is to be placed in a corner, it is not imperative 
that all sides be perfectly shaped. Check the freshness of the tree by

A bright sun glittered against the state Capitol dome last week providing a fitting welcome for a wagon train laden with gold from Georgia's mountains. The train brought 43 ounces of the precious metal to refurbish the brilliant peak of Atlanta's skyline. 
The paper-thin goldleafing, first applied in 1958, has been flaking off as weather and time have taken their toll on the original brilliance. Dahlonega Jaycees, who turned the gold over to Governor Busbee [insert], are still taking donations to complete the project. The work is scheduled to begin next spring.

Work in Pesticides 
Receives Recognition 
J. R. Conley, Director of the Pesticide Division of the Georgia Department of Agriculture, has been recognized for his cooperation in Georgia's pest management program by the Georgia Cooperative Extension Service. 
Mr. Conley was presented a plaque commemorating the honor at the 1979 Georgia Pest Management Workshop in Macon.

Dear Editor: Enclosed please find a short article on the origins 
of the GEORGIA MARKET BULLETIN which my father has written. I trust you will find this to be of interest. 
Tom Watson Brown Atlanta, Ga. Under the 1874 act which created the Georgia Department of Agriculture, one of the Commissioner's duties was to issue reports of interest and value to state farmers. Before the days of mass communications, Georgia farmers were unable to find out about prices at different markets and had no way to advertise their produce th- 
throughout the state. To solve these problems, J. J. Brown, candidate for 
Commissioner of Agriculture in 1916, promised that if elected he would establish a statewide marketing system. 
Soon after Mr. Brown took office on February 14, 1917, the state legislature appropriated funds for the Bureau of Markets and authorized the printing of the MARKET 
BULLETIN. The first issue of the BULLETIN was mailed in October, 
1917, and was distributed free of charge to anyone who asked to be put on the mailing list. In addition to providing the latest market prices, the MARKET BULLETIN listed items farmers wanted to buy or sell. It also included articles on fertilizers, pesticides and other information of interest to Georgia farmers. 
By the time Mr. Brown left office in 1927, circulation was almost 60,000 per week, the largest for a publication of its kind in the nation.

1 9-inch deep dish pie shell 2 1/4 cups baked or boiled 
 
1/4 cup butter or 
 
sweet potatoes, mashed 
 
margarine, softened 2/3 cup sugar 
 
3 eggs, beaten 
 
1/4 cup milk 
 
1 teaspoon vanilla 
 
1 /4 teaspoon nutmeg 
 
pinch salt 
 
1 cup nuts 
 
1/4 cup brown sugar 
 
*Marshmallow Cream 
 
Meringue 
 
Brush pie shell with small amount of the beat- 
 
en eggs. Prick bottom and sides with fork. Pre- 
 
bake pie shell in preheated 450 degrees F. oven 
 
for five minutes. Cool. Mash sweet potatoes, set 
 
aside. 
 
In large mixing bowl, cream softened butter 
 
with sugar. Add beaten eggs, milk, vanilla, nut- 
 
meg and salt. With mixer at low speed, add 
 
mashed sweet potatoes. Mix until all ingredients 
 
are together and mixture is smooth. 
 
Pour into pre-baked pie shell. Bake in preheat- 
 
ed 350 degrees. F. oven for 30 minutes. Remove 
 
from oven. Sprinkle nuts and brown sugar on top 
 
of pie. Bake 15 minutes longer. Let cool. Top 
 
with Marshmallow Creme Meringue. Makes 6 to 
 
8 servings.

3 egg whites 
 
dash of salt 
 
7 ounces marshmallow 
 
creme 
 
In small mixing bowl, beat egg whites with a 
 
dash of salt, forming soft peaks. Gradually add 
 
marshmallow creme, beating until stiff peaks form. Spread over cooled pie, sealing to edge of 
 
crust. Bake in preheated 350 degrees F. oven for 
 
12 to 15 minutes.

3 cups one-minute oatmeal 2 cups pecans, chopped 
 
2 cups sugar 
 
1/2 cup cocoa

Place oatmeal and pecans in mixing bowl. In 
 
sauce pan, combine sugar, cocoa, butter and 
 
milk. Bring to boil and cook 1 1/2 minutes. Add 
 
cooked mixture to oatmeal and pecans. Stir well 
 
and drop by teaspoons onto waxed paper. Chill 
 
till firm. Makes 6 dozen.

1/2 cup vegetable oil 
 
1 cup cranberry halves 
 
1 Tablespoon grated orange 2 cups all-purpose or whole

1/3 cup sugar 
 
3 teaspoons baking powder 
 
1 teaspoon salt 
 
Preheat oven to 400 degrees F. Grease 12 
 
muffin cups. Beat egg, milk and oil. Add cran- 
 
berries and orange peel. Stir in dry ingredients 
 
all at once and mix just until flour is moistened. 
 
Fill muffin cups 3/4 full and bake until golden 
 
brown (about 20-25 minutes).

5 eggs 
 
2 cups cold milk 
 
1 /2 cup chilled apple juice 1 /4 cup sugar 
 
1/2 teaspoon cinnamon 1/4 teaspoon salt 
 
Combine all ingredients in blender container. 
 
Cover; blend at high speed just until thoroughly 
 
combined. Serve immediately. One recipe 
 
makes approximately 4 1 /2 cups or 8-10 half-cup 
 
servings. Repeat as necessary for additional ser- 
 
vings.

In small bowl beat 2 eggs and 2 cups sugar. 
 
Set aside. In large bowl, cream 3/4 cup butter or 
 
margarine. Add sugar and egg mixture and beat 
 
til fluffy. Mix dry ingredients well. Add dry 
 
ingredients, buttermilk and vanilla alternately to 
 
creamed mixture. Beat til smooth. Grease cook- 
 
ie sheet and sprinkle with flour. Drop batter by 
 
tablespoons, keeping high in the middle. 
 
Sprinkle tops with sugar and bake at 425 
 
degrees F til lightly browned (about 7 minutes). 
 
Allow to cool slightly before removing from bak- 
 
ing sheet. Store tightly covered. For a holiday 
 
treat, sprinkle colored sugar on top rather than 
 
white before baking. Makes about 5 dozen med- 
 
ium cookies.

Mashed Potatoes 
This recipe was one of the winners in the holiday foods con- 
test sponsored by Rich's and the North Central Extension Ser- 
vice. 
 
5 Ibs. potatoes (about 9 1 8 oz. package cream 
 
large ones) 
 
cheese 
 
1 cup dairy sour cream 2 to 3 chopped green onions 
 
2 Tablespoons margarine 
 
or 2 tsp. onion salt 
 
Peel and cook potatoes, drain. Mash until 
 
smooth and add remaining ingredients, beat un- 
 
til light and fluffy. These will last in refrigerator 
 
for two weeks. To reheat, place in casserole 
 
dish, dot with butter and bake at 350 degrees F 
 
20 to 30 minutes until heated through. Serves 
 
12-15.

Party Cheese Ball

Worcestershire sauce 
 
Place cheeses in mixing bowl and allow to

ight. Shape into large ball and roll in chopped 
 
parsley, peanuts or pecans. Serve with assorted 
 
crackers. 
 
Broccoli, Rice and Cheese Casserole 
 
2 Tablespoons butter or 1/2 cup diced celery 
 
margarine 
 
1/2 cup diced onion 
 
1 can cream of chicken soup 1 can cream of mushroom 
 
1 8 ounce jar processed 
 
soup 
 
cheese spread 
 
1 10 ounce package chopped 
 
3 cups cooked rice 
 
broccoli, cooked 
 
Saute celery and onion in butter or margarine 
 
until tender. Mix with chicken and mushroom 
 
soups, cheese, broccoli, and one cup rice. 
 
Grease a large casserole dish and line with 2 
 
cups of cooked rice. Add broccoli mixture and 
 
sprinkle with paprika. Heat in 350 degrees F. 
 
oven 20 minutes or until bubbly. Serves 6.

Let cream cheese and 1/2 cup butter soften at 
 
room temperature. Blend together - stir in flour - 
 
CHILL about 1 hour. Shape in 1-inch balls, makes 
 
about 2 dozen. Place in ungreased 1 3/4" muffin 
 
pans. Press dough against bottom and sides. 
 
Filling: Beat together eggs, brown sugar, and 1 
 
tablespoon butter, vanilla and salt just till 
 
smooth. Divide half the peanuts among pastry 
 
lined pans. Add filling and top with remaining 
 
nuts. Bake in slow oven (325 degrees F.) for 25 
 
minutes or till filling is set. COOL - remove from 
 
pans.

Pineapple Cherry Salad 
 
1 20-ounce can crushed 1 cup sugar 
 
pineapple 
 
2 envelopes plain gelatin 
 
1 targe bottle red 
 
1 cup cold water 
 
maraschino cherries (cut) 6 ounces cream cheese, 
 
1 9-ounce carton whipped softened 
 
topping 
 
1 cup chopped nuts 
 
Drain juice from canned pineapple. Add juice 
 
to sugar and bring to a boil. Let boil until syrupy 
 
(just a few minutes). Dissolve gelatin in cold 
 
water and add to hot syrup stirring until com- 
 
pletely dissolved. Allow to cool. Mash cheese 
 
and mix with pineapple. Add to cooled syrup 
 
along with whipped topping, nuts and cherries. 
 
Mix well. Add enough cherry juice to give a very 
 
light pink delicate color. Place in a clear glass 
 
bowl or other serving container. Chill. Serves 
 
about 15. 
 
Hot Chicken or Turkey Salad 
 
3 cups cooked chicken or 3 cups finely chopped 
 
turkey, chopped 
 
celery 
 
1/2 cup blanched, salted 3 Tablespoons chopped 
 
almonds 
 
pimento... 
 
2 Tablespoons minced onion 3 cups crushed potato chips 
 
1 cup mayonnaise 
 
1/2 cup grated cheddar 
 
1 1/2 teaspoons lemon juice cheese 
 
Combine first seven ingredients. Turn into 
 
greased 3 qt. casserole (13 l/2"x8 3/4" x 1 
 
3/4"). Sprinkle with cheese and chips. Bake at 
 
350 degrees F. for 25 minutes or until cheese 
 
melts and casserole is bubbly. Serves about 1 5. 
 
Stove-top Ham and Asparagus Casserole 
 
3 Tablespoons margarine 1 Tablespoon cornstarch 
 
1/2 teaspoon salt 
 
1/8 teaspoon pepper 
 
1 cup milk 
 
1/4 cup mayonnaise 
 
2 cups diced cooked ham 2 packages (10 ounces each) 
 
1 Tablespoon lemon juice 
 
frozen asparagus, cooked 
 
1/4 cup grated Parmesan 
 
cheese 
 
Melt margarine in saucepan over medium 
 
heat. Stir in cornstarch, salt, and pepper. 
 
Remove from heat. Gradually stir in milk until 
 
smooth. Cook over medium heat, stirring con- 
 
stantly, until sauce comes to a boil and boils one 
 
minute. Stir small ajnount of hot mixture into 
 
mayonnaise, then stir into hot mixture in sauce- 
 
pan. Add ham, asparagus and lemon juice; heat 
 
through. Sprinkle with cheese before serving.

Pick Your Tree With Core For Long Lasting Enjoyment

running your finger down the branch. The needles should not fall 
off and should not be brittle. Now, shake or bounce the tree lightly on the ground. If only a few needles fall 
off, the tree is fresh and, with proper care, will last the entire holiday 
season. After purchasing the tree, cut the 
butt of the trunk at a diagonal about one inch above the original cut and 
put the butt in a container of water. This will allow the tree to absorb water. Store the tree outside until 
ready to bring into the house. Before bringing the tree into the 
house, cut the butt again, squaring off the diagonal. This makes it easier 
 
to place the tree in a stand and also allows it to "drink" more water. Keep the butt end of the tree in water the entire time it is in the house, being sure to check the container daily. Trees require a lot of water anywhere from a pint to a gallon daily. 
It is important that trees not be placed too near fireplaces, heaters, televisions or other sources of heat. Lighted candles should never be used on or near the tree. The longer the tree is in the house, the more combustible it will become. 
"Live" Christmas trees balled or burlap trees have become 
 
popular in some areas. Consider the adaptability of the species to your area. If you aren't sure it will grow, check with your nurseryman or county extension agent. 
Once the tree has been selected, it should be carried into the house through an unheated garage or carport, out of the wind and sun. A week to ten days in the house is long enough for live trees. 
Keep the root ball in a tub or wrap it in plastic while it is in the house. It should be kept damp, but not flooded. 
Lights may be used, but they must not give off any heat; flood lighting 
 
from a distance is acceptable. Do not flock a live tree. 
The live tree should not be taken from a warm house into freezing temperatures. If the ground is frozen, the tree may be planted and should be mulched to prevent freezing. Plant as soon as possible. 
Do not remove the burlap and strapping, since this keeps the root ball solid and secure. Water the tree as needed, but remember a flooded tree may die. 
The use of fresh trees at Christmas adds that special dimension to the holidays of which memories are made. 
 
The Department of Agriculture has a variety of responsibilities concerning proper labeling of foods and manufactured products. One of our inspections 
involves labeling of bedding and mattresses. The Department's Division of Consumer Protection Field Forces took over mattress inspections from the State Health Department in 1972 during a massive government reorgani zation. 
Agriculture Sanitarian Harold Jambon checks on a mattress operation in 
 
Columbus. Every phase of the procedure is monitored to make sure that the specific materials used in the finished product are indicated on the mattress label. This label, by the way, must remain on the bedding product until it is purchased by the consumer. It may be removed at that tune. 
Inspectors also check general plant conditions and make sure that materials 
used adhere to all sanitary regulations.

boundaries are not confined to Georgia seed, but are worldwide in scope. 
Experts explain that certain grass seeds and some vegetables have their origin in other states and parts of the globe, and are shipped into Georgia for individual sales. 
Agriculture Commissioner Tommy Irvin points out that if any seed tested does not fall within critical tolerances, a stop sale order is immediately imposed and in some cases the product is physically seized from the store shelves. 
Seed varieties scrutinized by the Department literally fill a large notebook, with the list continuing to grow. It is because of this growing list, coupled with the marked increase in soybean acreage in Georgia, that future plans call for expansion and modernization of the testing program ... a program which is already considered by experts as one of the more thorough and best facilities of its kind in the country. 
And, there's this final note. Beginning now, those desiring to have seed samples tested by the Department should start sending them to the laboratory. There is no charge to farmers for this service.

ABOUT MOLES 
The common or Eastern mole is the one found most often in Georgia lawns, flower beds and fields. Extension Service specialists say this mole can be identified by its long and pointed snout, inconspicuous eyes and ears, short tail, rounded front paws which turn outward, and stout claws. These features distinguish the common mole from its small cousin, the shrew.

Garden 
Many of our readers have asked what is the ration of "in-the-shell" pecans to those shelled. It depends on the quality of the nut, of course, but on the average, two pounds of in-theshell pecans will equal one pound of shelled nuts. 
Nuts are on the minds of lots of people and removing the meat from a coconut is a common problem. Heat the coconut for 30 minutes at 350 degrees. Let it cool and then crack. The meat will come out easy after this handling. 
If you need to grate the coconut, slice the meat thin, put in blender with coconut milk and then drain grated coconut in colander. 
To cure gourds, cut them from the vine on a dry clear day. Handle the gourd like a breakable egg. This will help avoid bruises which can cause the gourd to rot. Wash the gourd in a strong solution of non-bleaching disinfectant. Place the clean gourd in a dry place with good air circulation until they are thoroughly dry. Then, wax with a liquid floor wax. 
Protecting your shrubs from subfreezing weather may not do any good. Temporary protection seldom reduces plant or flower damage when temperatures drop below 15 degrees. (Temporary protection refers to covering shrubs with boxes, quilts, sheets or plastic bags.) 
 
Icing the shrubs by spraying water on the plants after the temperature drops below 32 degrees is another procedure that is good in theory but usually is not successful in practice. 
The best alternative is to select cold hardy varieties and plant them in protected areas. Filtered shade through pines will offer considerable cold protection to shrubs. 
If you have an opportunity to cut Christmas greenery early, soak the cut branches overnight in the sink or bathtub. Then place the greens in a plastic bag, seal tightly and put in a cool place. When you are ready to decorate, the greenery will be fresh and noWr in color than the day they were cut, 
Many p* eple like to decorate with pine conL- during the holidays. To get a perfect cone, collect the cones when they are green or light brown and ripen them yourself. The cones will open if placed in a warm oven for several minutes with the door open. Be sure to sit the cone on a sheet of aluminum foil or there will be pine resin in your stove. 
Save your wood ashes for next year's garden. Scoop out the ashes and either store in plastic bags for spring or go ahead and add to the

While attending the National Christmas Tree Convention at Amhurst, Massachusetts, in 1978, I told our northern tree growers if they would listen carefully they could hear the hoof-beats rapidly approaching over the hill of the southern Christmas Tree industry. 
At the present time, we are having to gallop up the hill. I predict that in the near future, we will be at the top of the hill, and the gallop down the other side will be much easier! 
HEALTHY PLANTS 
The key to preventing disease problems in ornamentals is to start with a healthy, disease-free plant from a reputable dealer. When purchasing any nursery stock (shrubs, trees, etc.) inspect the plant closely for cankers, galls, foliage spots, crown rots, root rots and nematodes. Cooperative Extension Service specialists recommend that you not buy the plant if you have any doubt about its health.

The pastoral image of a cow grazing on a rocky slope may be aesthetically beautiful but realistically it takes a special breed of cow to turn poor grazing conditions into a reliable dairy supply. 
The Brown Swiss are native to Switzerland where heavy rainfall makes abundant grazing during summer months but inclement weather during the winter limits grazing to farm and barnyard. 
The Brown Swiss were recognized as an important element to Switzerland's agricultural economy in the early 1800's when improvements in the nation's agriculture created a market for increased dairy products. 
When the Brown Swiss were first imported to the United States, around 1869, they were considered a dualpurpose cow. They were desirable because of their abundant milk supply and also because they were a meaty cow which fattened well on grass or feed. 
Brown Swiss are the fifth largest breed of dairy cattle in the U.S. and produce an average of 7,000 pounds of milk annually. Their colors range from light brown with a silvery cast to extremely dark brown. They are regarded as a large breed with bulls averaging 1900 pounds and cows, 1400 pounds. 
Brown Swiss have a rugged appearance with larger ears than most other dairy breeds. Among their most desirable characteristics are their docile, quiet disposition, strong constitution, hardy appetite for feed or grass and need for limited care and attention.

Millions of Americans are returning to the use of wood as a viable, efficient source of energy. 
Georgians are particularly fortunate in that the state is energy rich with forest land. 
 
The latest figures from the Georgia Forestry Commission indicate 25.7 million acres of Georgia forestland, ranking the state second only to Oregon in commercial forest utilization. 
According to one set of figures from the U.S. Forest Service, there is at least 13 billion cubic feet of potential fuelwood available annually across the country. That converts to 160 million cords. It takes five cords a year to heat the average home, which means there is enough wood for 33 million such homes, or almost every house in the country. 
Fire Places 
Taking this new interest into consideration there has been a "rebirth" of the fireplace. Extra safety measures are needed when using any open flame in the home. 
Any fire department or manufacturer of stoves, fireplaces or other woodburning devices can supply long lists of safety tips. 
All agree, that outside of faulty installation, the greatest danger area is the chimney. The best precaution against chimney fires is to burn only dry wood. But, even with dry wood, it would be foolish to gamble on never having a chimney blaze. 
Cleaning Chimneys 
One extensively used method of 
 
preventing chimney fires is by traditional or chemical chimney sweeping. 
Sodium chloride (salt) is the old standby for the chimney weep. 
However, a chemical mixture of sodium chloride and calcium chloride or sodium chloride and copper sulphate can be more effectively used. The combination creates a cleaner burn than salt alone. 
Chemists agree that an oft-times suggested combination of sodium 
chloride and zinc oxide should be considered "dangerous" and not used. 
After selecting the chemicals to be used, they should be sprinkled on a hot fire. The fumes rise in the chimney and cause accumulated creosote to flake off and fall into the blaze, leaving a clean stack. Commercial chemical cleaning "sticks" may also be readily purchased for the procedure. 
A spruce bough pulled through the round flue of a steel chimney will do the same thing. Heavy chains can be used to loosen the residue when working with masonry chimneys. 
If your chimney is an old one, and you're not sure it's safe, ask the local Fire Department to inspect it, or 
check it yourself by building a fire, placing a wet newspaper over the chimney top and sniffing around for escaping smoke. 
Whatever you do with respect to fire, do it right, play it safe.

should be removed immediately and the tails frozen within 24 hours. Cooked rock shrimp yields about half the weight of uncooked or green shrimp. Two pounds of 
green shrimp will provide one pound c*oo*k*ed*, peeled, deveined rock shrimp.

Dogwood Tip 
Inadequate soil preparation is one of the main reasons so many transplanted dogwoods get off to such a slow start and do so poorly. Extension Service horticulturists suggest digging a hole at least 18 inches deep and three feet across, regardless of "the size tree you are going to plant. To the soil removed from the hole, add one-third [by volume) organic matter suth as peat moss, leaf mold or pine bark. Mix the soil and organic matter thoroughly before placing the mixture around the roots of the young tree.
