Since Georgia has the first fresh apples on the market each year, the Com- mission makes ev- ery effort to help producers sell their product. These promotions are designed to help roadside stand operations V- j, 11-v : as well as those k>< 1 >W producers who pack apples for shipment. An intensive consumer campaign involves television appearances throughout Georgia and parts of Florida to show homemakers new and different ways to use Georgia apples. A recipe booklet is offered to consumers free of charge from the Apple Commission. (Our guest columnist this week is Barr Miller, Chairman, Agricultural Commodity Commission for Apples, Box 570, Cornelia 30531.)__________________ Personal calls are made on food editors of newspapers and tested recipes, along with appetizing photographs of the dishes, are furnished to more than fifty food editors. These editors are urged to offer the Georgia Apple Recipe booklet to their readers. For the past two years the Commission has sponsored a quarter page ad in THE PACKER urging buyers of packed apples to look to Georgia for quality and freshness. There have been glowing reports from packing houses around the state about the results of the advertisement and the number of cases of apples it has sold for them. The Commission is an active participant in the International Apple Institute and has made significant strides in the recognition of Georgia as a vital part of the nation's apple industry. The House Agriculture Committee has approved new ceilings for insured and guaranteed loans made by the USDA's Farmers Home Administration. There is also legislation which will be considered in the coming months dealing with pesticide control programs, crop insurance, cotton price supports and farmer relief. One relief measure which benefits many Georgia peanut farmers has already been passed. This law waives or reduces marketing quota penalties for several hundred peanut farmers who exceeded 1978 quotas because of unintentional errors. This legislation, spearheaded by subCommittee Chairman Dawson Mathis, passed the House and Senate earlier this year. Also on the hill there are other important agricultural matters dealing with such areas as tobacco, dairy industry, commodity futures and environmental quality. Grandpa's Garden (Continued From Page 8) If you plan to dry flowers for fall and winter use, better start now before the selection is completely gone. There are several ways to dry flowers. Pressing: Press flowers and foliage between sheets of porous paper (newspaper or a telephone directory) weighted down. Drying may take several weeks. A quicker method is to press with a warm iron until all moisture is removed. If you want a lighter effect than the natural dried color, soak the collected material for a short time in a solution of household bleach (about 1/2 cup to 1 gallon water). Air Drying: Strip foliage from fresh cut flowers. Tie loosely in small bundles and hang upside down in a warm, darkened room for one to two weeks or until dry. Store in cardboard boxes. The last time I was in the grocery store, the scales by the cash register started with two ounces before anything was weighed. I told the clerk about it and she told me it was too bad, but she just worked there. R.T. The federal Truth in Lending Law states that a contract, which is usually in the form of a receipt, be provided for any purchase made on credit. Okra is primarily a southern vegetable, which some folks like and some folks don't. Most of the don't-likes are brought about by the rather slick consistancy of the pods when boiled. However, some old cookbooks, and even some older writers of cookbooks, recommend that a tablespoon of vinegar, in about a two-quart boiler added as the okra is prepared, will take away the "slickness" and even change the flavor somewhat for the better. Others say the same can be done by adding salt. The most knowledgeable on the subject recommend that a little of both could be nothing but a ," sure thing". Of course, okra is a well known, much used plant cultivated for its immature oods, which are used in stews, to thicken and flavor soup and as a boiled or battered and fried vegetable. The plant is an annual, growing two to eight feet high, with fine lobed leaves, greemsn-yellow flowers with pods four to six inches long. However, don't be surprised if you happen on a pod a foot o r more long. The pods are cooked and canned when young ana tender to enjoy year around. Okra is a member of the hibiscus family and is closely related, believe it or not, to cotton. The Georgia Apple Commission is funded by a 2 cents per bushel assessment of producers and expends the majority of its funds on promotion of Georgia apples.
