The Georgia Association of County Agricultural Agents is made up of county and state professionals of the Cooperative Extension Service, University of Georgia, working throughout the State of Georgia to carry out educational programs in Agriculture, Community and Rural Development, and 4-H.

belong to and take part in the activities of our organization devoted primarily to professional improvement and copetence.

Our professional goal is getting
research information to the people
and encouraging the application of
the same. That is the job we have
and our association, through its many activities, helps members become better prepared through the various professional improvement
programs. Research is only part of the game
in making progress. Getting research applied in all areas of the coun-
ties of Georgia is our job. The progress that has been made by the
farmers, homemakers, and citizens to accept change and to adjust, to newer and better techniques and practices is evident.

House Ag Committee
Plans Atlanta Hearing
Another hearing has been scheduled to discuss the Agricultural Commodity Commissions. The meeting is planned for August 8 at 10 AM at the Georgia Department of Agriculture, Capitol Square, Atlanta, in room 201. The meeting will convene at 10 AM.
The Georgia House Agriculture Committee is holding the meeting to discuss the appointment and selection of Commodity Commission members, ex-officio members and other matters pertaining to Commodity Commissions.

Hundreds of Sanitarians Busy
This week (July 22 - 28) has been proclaimed by Governor George Busbee as a period of special recognition for the jobs done by a work force frequently referred to as the "front line watchdogs" of Georgia's environmental health.
Georgia tobacco season is in full swing.

The group the Georgia Environmental Health Association is made-up of registered professional sanitarians, with the state Department of Agriculture providing an entire division dedicated to that field of consumer protection.
The division of Consumer Field Inspection Forces is rssponsible for enforcing 79 state codes, concerning everything from grocery store food quality inspections to sanitary conditions of bottling plants, flour mills, bakeries, health food stores, bedding manufacturers and more.
Other governmental agencies and private industry cover virtually every other area of environmental health not handled under the Agriculture Department's responsi-
bilities. The Agriculture Department has
some 90 inspectors, including trainees, with other government agencies and private business pushing the number of registered sanitarians in the state to over 900,

R.E. Winder Nothing is added to whole milk. However, salt and citric acid or sodium citrale may be added to buttermilk in quantities ranging from 0.01 to 0.2 percent to enhance the flavor.
Can you tell me if there is a state law requiring restaurants to provide a place where patrons can wash their hands?

Best Peanut Recipe
Will Win Top Prize
The Georgia Peanut Recipe contest is underway. Winners often district contests, held throughout the state, will compete in the state finals in Macon on September 8 for over $1600 in cash and prizes.
The contest is sponsored by the Georgia Peanut Commission and the Georgia Farm Bureau Women's Committee. The annual event features six recipe categories: casseroles and main dishes; cakes, pies; snakes; hor d'oeuvres and appetizers; other desserts and miscellaneous items. There are also two age group divisions: ages 10 to 17 and 18 and alder.
Official entry forms are available from the county Extension offices, county Farm Bureau offices or by writing Recipe Contest, Georgia Peanut Commission, P. O. Box 967, Tifton 31794. Deadline for entries is August 3, 1979.

study of horticulture. We would like to find a tempo-

1/4 cup coarse salt

pinch of alum
Finish jar with vinegar and dill. Shake jar until salt is
dissolved.

1 eggplant, pared and cut in cubes 1/3 cup olive oil
1 large onion, dked
2 tsp. salt
1 green pepper, diced
1/2 tsp. pepper
6 medium tomatoes, slked

Brown all ingredients except tomatoes in oil. Stir in
seasoning. Alternate eggplant mixture with tomatoes in 1
1 /2 quart casserole. Bake 40 minutes at 400 degrees.

WINNER, BEEF COOK-OFF CONTEST Chunky Beef Fritters
2 pounds cooked, unseasoned, cold roast beef, (chuck, rump, or
round), cut into bit size chunks (1/2 to 1 inch she).
3 eggs
6 tablespoons milk
1 taUespoon flour
Mix milk with flour and stir into eggs.
1 1/2 cups self-rising flour
4 teaspoons salt
1/4 teaspoon black pepper
Mix together
Dip roast beef chunks in egg mixture and roll in flour
mixture. Drop floured beef chunks into hot cooking oil and
deep fry until brown...(use medium heat). Drain and serve
hot. Takes about 15 minutes and yields 4 to 6 servings
(time does not include cooking time for roast). Serve on
divided serving dish surrounded by pickles, crab apple or
cherry tomatoes, green pepper rings, carrot curls, celery
sticks, and parsley vary garnishes according to your
taste.

Old Fashioned Chocolate Pudding
1 cup sugar
1/3 cup flour
1/4 tsp. salt
2 egg yolks
2 cups milk
1/3 cup coco
1 tsp. butter
1/2 tsp. vanilla
Beat egg yolks, add milk. Sift dry ingredients together
and place in double boiler, stir in 1/3 cup milk and egg
yolks. Mix and stir; add remaining milk, cook till thick,
then add butter and flavoring. This can also be used for a
pie. Pour into crust top with egg white meringue and
brown lightly. Cool before serving.

Jiggs-Com Beef & Cabbage
Select pieces out of stone crock, wash it off in cold water and wipe dry. Put it in a large amount of warm water, when water comes to boil throw it away and start over. Boil beef in new water, 2 1/2 hrs. Then start adding vegetables in following order about 15 mm. apart. Chunks of peeled turnips scraped and halved carrots whole sml. onions and sml. peeled potatoes also whole potatoes cook in about 45 min. and only during the last 20 min. is the cabbage put in small solid heads, quartered and placed on top of everything in cook pot. Serve on big platter, beef in middle and vegetables arranged around. Always carve corn beef on the bias.

Blaeberry plants which are ad vertised as 1 to 2 year old plants are on the average 8 to 12 inches tall. Horticulturists advise us that it takes an average of 3 more years before the blueberry plant will produce enough blueberries to make a pie. There will be a few berries the first year on the small

Tests that the average buy ing public never imagine are routine. For example, fat tests are conducted on ground beef at the supermarket to deter mine if the ratio of fat to lean is in compliance with state re gulation.
Also, sulfite tests are made to find if any additives are added to meat sold in retail stores.
To be a professional sani tarian you must have a colle ge degree with emphasis in food science education. You must pass a state exam and be registered by the Secre tary of State's office.

Restaurants are not under the jurisdiction of the Depart ment of Agriculture, but are inspected by sanitarians from the local county health de partments. Out of curiosity we checked and found that there is no such provision which requires a restaurant to provide a place to wash-up. Efforts were made to require these facilities, but a law was not passed. Check with your local government for informa tion on city ordinances.

Last week in the grocery store, I noticed that there was no date on the meat products. Each time I shop will I have to ask the butcher about the age of the cuts I am interested in buying? He said he was just following the law.
M. F. Albany It is not required that meat be dated. The new law which went into effect in April, 1979, requires that if a store uses a date on meat, the date must be identified, i.e. "pack date", "sell by date", etc. The store you were concerned about decided to eliminate dating of fresh meat rather than add the words "pack date". You should tell your store manager you like your products dated.

Freezing Summer Vegetables
Freezing vegetables is a popular method for putting up fresh produce to use later in the year. The procedures are simple and the results are well worth the
effort. Clip and save the listing below of the more popular vegetables Georgia homemakers chose to freeze.
Beans, Green, Snap or Wax. Select young tender pods when the seed is first formed. Wash in cold water, snip and cut into 2 to 4 inch lengths. The longer cuts are best quality.
Blanch 3 minutes. Cool promptly, drain and package, leaving 1 12 inch head space. Seal and freeze.
Beans, Lima. Harvest while the
seed is in the green stage. Wash, shell, wash and sort according to size. Blanch small beans 2 minutes, medium beans 3 minutes and large beans 4 minutes. Cool promptly, drain and package, leaving 1/2 inch head space. Seal and freeze.
Beets. Select deep, uniformly-red, tender, young beets. Wash and sort according to size. Trim tops, leaving 1/2 inch of stems. Cook in boiling water until tender for small beets 25 to 30 minutes; for medium beets 45 to 50 minutes. Cool promptly in cold water. Peel and leave whole or cut into slices or cubes. Package leaving 1/2 inch head space. Seal and freeze.
Cabbage or Chinese Cabbage. Frozen cabbage or Chinese cabbage is suitable for use only as a cooked vegetable. Select freshly picked solid
heads. Trim coarse outer leaves from head. Cut into medium to coarse
shreds or thin wedges, or separate heads into leaves. Blanch 1 1/2 minutes. Cool promptly, drain and package, leaving 1/2 inch head space.
Seal and freeze. Carrots. Select young, tender,
coreless, medium length carrots. Remove tops, wash and scrape. Leave small carrots whole. Cut others into thin slices, 1 12 inch cubes or lengthwise strips. Blanch small whole carrots 5 minutes, diced or sliced 2 minutes and lengthwise strips 2 minutes. Cool promptly, drain and package, leaving 1/2 inch head space. Seal and freeze.
Corn. Select only tender, freshly-
grated corn in the milk stage. Husk
and trim the ears, remove silks and wash.
Corn-on-the-cob. Blanch small ears (1 1/4 inches or less in diameter) 7 minutes, medium ears (1 1/2-1 1/4 inches in diameter) 9 minutes and large ears (over 1 1 12 inches in diameter) 11 minutes. Cool promptly, drain and package. Seal and freeze.
Whole kernel corn. Blanch 4 minutes. Cool promptly, drain and cut from cob. Cut kernels from cob about 2/3's the depth of the kernels. Package, leaving 1/2 inch head space. Seal and freeze.
Cream style corn. Blanch 4 minutes. Cool promptly and drain. Cut kernel tips and scrape the cobs with the back of a knife to remove the juice and the heart of the kernel. Package, leaving 1/2 inch head space. Seal and freeze.
Another way to prepare cream style corn for freezing is to cut and scrape the corn from the cob without blanching. Place the cut corn in a double boiler, and heat with constant stirring for about 10 minutes or until it thickens; allow to cool and package in moisture-vapor resistant containers, leaving 1/2 inch head space. Seal and freeze.
Eggplant. Harvest before seeds become mature and when color is uniformly dark. Wash, peel and slice 1 /3 inch thick. Prepare quickly enough eggplant for one blanching at a time. Blanch 4 minutes in 1 gallon of boiling water containing 41/2 teaspoons citric acid or 1 12 cup lemon juice. Cool, drain and package, leaving 1/2 inch head space. Seal and freeze.
Greens. Select young tender green leaves, wash thoroughly and cut off woody stems. Blanch collards 3 minutes and all others 2 minutes. Cool, drain and package, leaving 1/2 inch head space. Seal and freeze.
Herbs, Garden. Wash and drain. Wrap a few sprigs or leaves in freezer wrap and place in a freezer bag. Seal
and freeze. It can be chopped and used in cooked dishes. These usually are not suitable for garnish as the frozen product becomes limp when it
thaws. Onions. Choose mature bulbs and
clean as for eating. Blanch 3 to 7 minutes or until the center is heated. Cool promptly, drain and package, leaving 1/2 inch head space. Seal and freeze. These are suitable for cooking only. Young green onions may be chopped for salads and sandwiches and frozen without blanching, but they will not be crisp. They will be highly flavored but may be slightly tough.
Okra. Select young tender pods and separate into small pods (4 inches or under) and large pods. Wash. Remove the stems at the end of the seed cells. Blanch small pods 3 minutes and large pods 4 minutes. Cool promptly and drain. Leave whole or slice crosswise. Package, leaving 1/2 inch head space. Seal and freeze.
Fried Okra. Wash and remove stems. Blanch small pods 3 minutes and large pods 4 minutes. Cool promptly and drain. Slice crosswise and meal or flour. Tray Pack: spread m a single layer on shallow trays. Place in freezer just long enough to freeze firm. Package quickly, leaving 1/2 inch head space. Seal and freeze.
Peas, Field [Blackeye]. Select pods when seeds are tender and barely grown. Wash, shell and discard overmature and immature seeds and those injured by insects. Wash. Blanch 2 minutes. Cool promptly, drain and package, leaving 1 12 inch head space. Seal and freeze.
Peas, Green. Harvest when pods are filled with younger, tender peas that have not become starchy. Wash, shell and wash; blanch 1 1/2 minutes, cool and drain. Package, leaving 1/2 inch head space. Seal and freeze.
Researchers Study the Penned Pig
Do pigs in confinement grow, mature and reproduce better than those allowed to roam free? Researchers would like to prove that they do because it would reduce costs and refine swine production, but so far, evidence has not sub stantiated these goals.
Based on tests conducted at the Richard Russell Research Center in Athens, pigs held in confinement af ter approximately three months of age show signs of delayed puberty, abnormal reproductive cycles, de creased conception rates and smaller litters.
There seems to be a very little information available on why pigs react negatively to confined living. If scientists could find out why, solu tions to the problem could be researched and hopefully found.

Squash, Summer. Choose young squash with tender skin. Wash and cut in 1 12 inch slices. Blanch 3 minutes. Cool promptly, drain and package, leaving 1/2 inch head space. Seal and freeze.
Tomatoes. Select firm, ripe tomatoes with deep red color.
Juice: Wash, sort and trim firm, vine-ripened tomatoes. Cut in quarters or eighths. Simmer 5 to 10 minutes. Press through a sieve. If desired, season with 1 teaspoon salt to each quart of juice. Pour into containers, leaving head space. Seal and freeze.
Stewed: Remove stem ends, peel and quarter ripe tomatoes. Cover and cook until tender (10 to 20 minutes). Place pan containing tomatoes in cold water to cool. Pack into containers leaving head space. Seal and freeze.
Raw. Wash and dip in boiling water for 30 seconds to loosen skins. Core and peel. Freeze whole or in pieces. Pack into containers, leaving 1 inch head space. Seal and freeze. Use only for cooking or seasoning as tomatoes will not be solid when thawed.

At this point, the current theory is that confinement causes stress on the animal and it is this stress that causes the reproductive problems. There is no data, however, to in dicate that confinement actually is a stress. Confinement could mean a lack of stress, that the animal is bored and secretes less adrenalin and hormones; or it could mean that the stress of confinement causes too much secretion.
In either case, University of Georgia animal physiologist Dr. George Rampacek and Dr. Robert KrqeUng, Russell Research Center animal physiologist, say that he functioning of the adrenal glands and other endocrine glands will have to be characterized in order to form a logical explanation of the confinement problem confronting swine producers.

Bee balm is a summer pleaser, to the eye and to many, the taste as well.
The colorful wild plant is found in virtually every corner of the U.S. in open meadows, wastelands and along roadsides.
The plant is a member of the mint family and can provide a cool refreshing drink, particularly if your taste leans toward a spicy, somewhat peppery variety.
Bee balm is a late summer bloomer, providing many of the lavender and crimson hues in the fields or late season flowers.
The stem is square, like all mint, with oval, pointed leaves growing in opposite pairs along the stiff stem line. The flower looks like a round pincushion with many single tubular blossoms surrounding it.
As the plants begin to bloom, they can be collected for use. Tea can be made from either fresh or dried ingredients. Break the stem six to eight inches from the ground, where the leaves begin growing thickly.
Tie 20 to 30 stems together loosely and hang them in a dark, warm dry location for a couple of weeks. When the leaves crumble to the touch, they are ready for use. If large, a single leaf at a time can be pulled. Smaller leaves should be stripped.
The flower heads can also be used as part of the tea base. They add both flavor and color. Store dried leaves and blooms in airtight containers.
Make the tea with about a half-teaspoon of dried leaves per cup of water. If fresh leaves are used, about twice as much is required. Sweeten to taste.
WEEDS IN PONDS How do you control aquatic plants? Pond owners usually think of herbicides. Herbicides are effective, agrees George Lewis, Extension Service fisheries specialist. But they are sometimes expensive, and if they are not used properly, they can have disastrous results.
Flea Control Necessary
For Pet's Sake and Your's
"My dog has fleas" and most likely so does the cat, the carpet and the house. Fleas live in the furry coats of household pets as well as livestock animals and poultry. Getting rid of fleas is not difficult but takes concen trated effort, especially during summer months.
Fleas must have a host on which to live. They are parasitic insects which require blood to survive and reproduce. Fleas can make life miserable for a small animal and uncomfortable for man. They bite, they jump and they reproduce with tremendous energy for their size but they are not immune to control.
Control of fleas, particularly in the house, starts with good house keeping and the use of insecticide. Thoroughly clean infested rooms, preferably with a vaccum cleaner, including rugs, upholstered fur niture and anywhere else the fleas may have laid their eggs.
Apply insecticide by lightly, but thoroughly, spraying cracks in flooring, baseboards, cold-air ducts, rugs and carpets (particularly around the edges), and between cushions of upholstered furniture.
Water base,sprays leave a visual residue. To prevent this be sure to use a nonstaining oil-base household spray containing 0.5 percent diazinon or premium grade 2 per cent malathion. It may be necessary to repeat the treatment after 10 to 14 days to eliminate newly hatched fleas.
Never use a spray specified for indoor use outside as it will kill foliage. Do not use an outside spray
inside either. Outdoors, treat lawns, pens and
spaces under buildings with one of the following:
57 percent malathion emulsifiable concentrate, 1 1/2 ounces in 15-20 gallons water per 500 square feet,
5 percent malathion dust, 2 pounds per 1,000 square feet,
25 percent diazinon emulsifiable

Names Winner
The winner has been named. Mrs. Fred Collins, Whigham, received top honors for her recipe 'chunky beef fritters' in the second annual Georgia CowBelles Cook-off held in Atlanta last month.

DRIP IRRIGATION
Drip irrigation may be an idea whose time has come. If high water bills are keeping you from watering, you might want to try it. Extension Service specialists say the method works best on flower beds, veget able gardens, shrubbery and indiv idual trees. Water savings of up to 50 percent can be realized by placing the water on the ground instead of in the air via sprinklers. Drip irrigation kits designed for homeowner use are available.

5 percent sevin dust. There are many ready-made flea and tick powders on the market. Look for items containing malathion, co-ral, sevin, lindane, rotenone, pyrethrum or combinations of two or more of these. To treat pets, dust with one of the following: malathion 4-5 percent dust; rotenone 1 percent dust; pyrethum 0.2 percent dust; sevin 2-5 percent dust (caution: do not use on kittens less than four weeks old). A tablespoonful of dust is enough to treat a dog of average size. Rub it thoroughly into the hair, beginning at the top of the head and continuing along the neck to the base of the tail. Use more or less dust according to the size of the animal and amount of hair. Don't forget to treat Fido's house and kitty's basket the same day you treat the animal and the house. Everything must be done at one time for effective treatment.

Since it takes three to six months for green wood to cure, you should be working on your log pile for the coming winter. Green wood is approximately half water. If you try to burn unseasoned firewood, a great deal of energy is wasted in drying out the wood.
Stack wood under a shelter or cover with both ends of the cut wood exposed to air to quicker drying.

If you wonder why your geran iums haven't bloomed, it may be the way they are planted. Geraniums prefer to be rootbound and should not be transplanted until roots are coming out the botton. Giving them room to spread will produce lush green plants, but will reduce your blooms.
July is recommended as an excel lent time to propagate azaleas, cam ellias and other shrubs. Cuttings from the current season's growth should be four to six inches long. Be careful not to let the cuttings wilt before placing them in a rooting, mixture.
Mrs. R. B. Hodges, Gwinnett County, tells us that now is the time to prune back chrysanthemums. "If you cut them back now, they will make prettier plants in the fall with lots more blooms."
