Dm Farm Credit Basic Tool Credit is basic in our economy and a vital tool in Georgia agriculture. The volume of credit extended to Georgia farmers through the Federal Land Bank System and the Federal Intermediate Credit BankProduction Credit Association System continues to increase. As of July 31, the combined total of all Georgia Federal Land Bank Loans outstanding was $509,087,122.61 representing 17,754 loans. The PCAs of Georgia had loans outstanding to 12,209 members in the amount of $383,005,867. The continual increase in capital needs has resulted in a constant growth in the amount of credit that is used by Georgia farmers. Because of increased costs, the far- Continued On Page 8) Wednesday, October 16, 1974 Number 42 Lime Transporting Harvesting Summer Herbs Should Get Better New equipment has helped alleviate, to some extent, railroad transport problems of lime in the southeast, according to railroad officials. A number of new 100 ton hopper cars are now available and lime will be more easily obtained by farmers as dealers and distributors set up facilities to unload and stockpile lime more efficiently. Dealers who have modernized their operations to handle the new 100 ton hopper cars will be able to serve their customers quicker than before; hopefully ending the waiting period many farmers experienced before the new rail cars were placed into service. Would-be Horsemen Buy With Care Horsemen and would-be horsemen thinking of buying a horse should make sure that it has been tested and found free of swamp fever, also known as EIA. Testing for this incurable virus disease has almost tripled during the past year. This increase can be attributed to new regulations that require testing and restrict the movement of infected animals. Would-be buyers may request results of the Coggins test and demand papers that show that the horse has been tested for swamp .fever and found nagative. Will Bring Fall Enjoyment Now is the time to harvest the herbs you have been enjoying outdoors all summer. Although you might have used a few sprigs of rosemary, dill or basil in your summer cooking, only after you have collected and stored these herbs can you appreciate their unique qualities that distinguish them from other garden plants and flora. The fragrant potpourris, flavorful teas and culinary delicacies are ready to be made. Perennial herbs such as'rosemary, lavender or sage should be cut back to encourage compact growth during colder months; annual herbs can simply be cut to the ground. Of the several methods of preservation used, drying is the most com- mon and practical for most herbs. Only a few herbs, such as basil, fennel, dill chives and burnet do not dry well and retain their flavor best if packed in salt or frozen. The important things to remem- ber in drying herbs is that warm, dry air needs to freely circulate around the leaves to absorb the moisture to prevent the precious oils from being destroyed. Barns arc inspected by dairy inspectors, cattle are tested and continuously checked to make sure they are disease free by the veterinary division with the assistance of local veterinarians. The cow being milked (picture 1) has been washed and sanitized prior to milking; milk travels from the cow into the weigh jug (picture 2) and from there to the cooling tank (picture 3). Milk samples are collected from all milk plants over the state as well as from stores throughout Georgia. After the milk has been checked into the lab, it is plated for bacteria testing (picture 6). The plated milk samples are placed in a hot incubator (picture 7) where it remains for 48 hours for bacteria growth to form. Butterfat samples are Summer Herbs (Continued From Page 1) Because of its delightful fragrance marjoram is a beloved herb. It has long been associated with happiness in life and young couples often wore marjoram crowns at their wedding. The "herb of grace" is often mentioned in English history, as it was a common nosegay and strewing herb to sweeten and freshen the air. The name marjoram comes from the Greek words meaning "joy of the mountain". It is a tender perennial and if not grown as an annual should be protected during cold winter months. The small, oval light green leaves are borne on semiwoody branching stems that reach a height of 1 to 2 feet. It requires full sun and a moist slightly alkaline soil. Since marjoram is easily grown indoors, seeds can be planted anytime of the year but should be sowed outside only in eary spring. Marjoram has a mild sage-like flavor and is a popular seasoning for meats, salads, vinegars and casseroles. Valera Jessee Soybean Field Days Have New Varieties All interested growers are invited to attend one of two Fall Soybean Field Days scheduled in October. The first field day will be October 22, 10 am till 3:30 pm at the Southwest Branch Experiment Station, Plains, and the second will be October 25, 10 am till 3:30 pm at the Agronomy Research Farm, Athens. To dry-long stemmed herbs, such as rosemary, tie together with string into bunches and hang up side down. store. Herbs can also successfully be dried on screens, trays or newspaper in a warm, dry attic. It will, however, be necessary to gently stir or turn the leaves every few days to assure uniform and thorough drying. Some plants, particularly basil, need to be cured in salt. After rinsing the leaves and blotting them dry, pick the leaves from the stems. Pour a layer of non-iodized table salt in a jar and then add a layer of leaves, then another layer of salt. Continue until the jar is filled, press leaves down firmly, cover tightly and store in dark place. Use salted leaves as you would fresh but be sure to rinse well in water or allow for the extra salt in your recipe. To freeze some of the more tender herbs, such as fennel, burnet, dill tarragon, chives and parsley, blanch the herbs as you would vegetables. Leave foliage on stems, tie a string around stems and blanch in unsalted boiling water for about 50 seconds holding onto to string for quick removal. Dip herbs in ice water or cold tap water for a few minutes. Remove leaves from stems and place leaves in freezer bags or foil. Entomologist Honored Dr. Edward L.
