Lawn Btgjctletj Domestic Rabbits In America In the early days in America, few people ever thought that -domestic rabbits would become an essential agriculture animal. In those days, rabbits were commonly considered pets for children. But as years passed, rabbits began to interest adults. Rab- _____ bits were scar";:;: ce according to records and about the only pure breeds were Belgian |Hares which |had been imp- orted from Belgium. Belgian Hares became more plentiful and the interest of growers increased. Rabbit breeders associations were organized; standards of perfection (Our guest columnist this week is R. Lamar Brantley, Secretary of the Blue Ribbon Rabbit Club, Rt. 2, Box 79, Wrixhtsville, Ga. 31096.) were set whereby all purebred hares that met these standards could be registered. New breeds were developed and the rabbit industry grew. Exhibiting rabbits today has created much interest. The rabbit industry in America is a big one and has brought enjoyment and relaxation plus profit to many thousands of people. Rabbits are ideal meat and fur producers, and can be raised in practically all parts of America and Canada. The fur is also used in making felt. The cut skins are used in manufacturing strong glue. Domestic rabbit meat has a high protein content. Rabbit meat is all white meat, low in calories but high in protein. This meat is always in season and very tender and delicious. The rabbit potential is wide in scope and offers a challenge to those who engage in the industry. Purchasing foundation stock can be one of the most deciding factors. The novice, in many cases, purchases his foundation stock at a cheap price obtaining poor or inferior stock, unaware that he is on the road to failure and could lose his investment. The principal food for rabbits is hay and grain, (which now is available from feed mills in a pelleted form.) Fresh, clean vegetables that are free of water also make a good in-between meal snack, though they are not to be considered a principal diet. The housing of rabbits is important whether outdoor or indoor hutches are used. Rabbits are clean animals and must be respected as such; they will not eat dirty food or drink dirty water unless forced to do so. The demand for meat rabbits by processing plants is tremendous. The week of May 20-25 has been selected this year. The purpose of Mailbox Improv- ment Week is to call attention Exhibit A to the need for providing mail receptacles which are designed to protect the mail from the weather and are neat in appearance, con- veniently located, and safe to use. Neat, attractive mailboxes will make a significant contribution to the ap- pearance of the countryside. Where the use of street names and house numbers has been authorized, the house number will be shown on the box. If the box is located on a street other than the one on which South Georgia farmers have been hit hard this week and last by a severe nitrogen shortage which is threatening the yield on" this year's corn crop. Nirtogen has been in short supply for several months, therefore there is no stockpile of nitrogen fertilizer and it is being manufactured daily. The problem reached a head this past week when farmers in extreme south Georgia started trying to get a sufficient supply of nitrogen to side dress their corn. Commissioner of Agriculture Tommy Irvin and his staff have contacted and been working with the fertilizer industry looking for some relief. However, manufacturers indicate that there is no immediate relief in sight and it may be June before supplies increase. Industry has indicated that they will do all they can to see that the supply is equally distributed according to last year's usage. Compounding the problem is the light winter which made the corn crop come in early and an evident increase in the number of acres plan- ted_____________________ Paint Storage Tanks tire route. Miss Susan Braswell has made a "first" in Emanuel County by being selected "Miss Emanuel County Garden Queen" from 35 contestants. In addition to this honor, she received $100. I'm 88 years old and live in a senior citizen's building and am making soap in my kitchen. Since I started my neighbors save their grease for me and I share my soap with them. The recipe is on the cans of lye, but I'll add to it by saying never use aluminum utensils or spoons. I have a large bowl that holds 2 1/2 pints cold water, into which I pour the lye in and stir with a wooden spoon til thoroughly dissolved, then I pour the strained grease in slowly and keep stirring til it begins to thicken. Then I pour it in pyrex dishes (square) and mark if off in any size of soap. I let it set a day or so and then take the bars and wrap in paper to use. I grate the bars to use in my washing machine which really whitens clothes. Caution: Be sure to keep this lye water out of the reach of children. Must Now Be Shown On Bacon You have a better chance to choose the kind of bacon you like since a U.S.D.A. regulation on bacon packaging became effective. The regulation requires that all bacon packages have a transparent area at least 1 1/2 inches wide revealing at least 70 percent of the length of a representative slice. To meet this requirement, many bacon packages added a new "back window"; some simply show a full slice in a ' front" window. Pickling Here are some basic factors to consider when you buy bacon: Primarily, bacon differs in its amount of lean (lean-to-fat ratio), Questions High Lean How do I keep fruit from turning dark when canning? While preparing fruit for canning use ascorbic acid and citric acid mix-' tures or add two tablespoons each of salt and vinegar to a gallon of water. Drop apples, apricots, peaches or pears into the solution as they are prepared. If using the salt and vinegar method do not leave the fruit in the solution more than twenty minutes and rinse before packing. To prevent darkening in the jar use ascorbic and citric acid mixtures according to directions. If using pure ascorbic acid, sprinkle 1/4 teaspoon to each quart over the fruit just before capping the jar. How much dill should I use when making pickles? What amount of dill seed do I use in place of a head of dill? The a'mount of dill used is a matter of taste. One head of dill per jar is equal to 1 1/2 teaspoons of dill seed per jar. Use 6 heads or 3/4 cup seeds to 6 cups liquid. What kind of vinegar do I use in pickling? A high grade of cider or white distilled vinegar of 40 to 60 grain strength should be used. A low grade vinegar will cause the pickles to become soft. What kind of salt should I use for pickling? Pure granulated salt should be used. Uniodized table salt is also acceptable but it may cause the brine to be cloudy. Iodized salt will cause the pickles to darken. Are aluminum pans acceptable for making pickles? Yes Aluminum, stainless steel, glass or unchipped enamel pans should be used in pickle making. Copper or iron containers should never be used. How much water should I use when processing in a boiling-water bath? In a steam pressure canner? In a boiling-water bath the water should be 2 inches over the tops of the containers. In a steam pressure canner have 2 or 3 inches of boiling water in the canner. How do I check jars to make sure they are sealed? Let jars cool for about 12 hours. If the top of the cap is low in the center or if the center stays when you press it down the jar is sealed. How can I tell if my home can- ned foods are safe to eat? Do not use any canned products that bulge at the ends or lid, or any that leak around the rings. After opening check for off-odors, spurting liquid or gas bubbles, and pronounced color or texture changes. Canned vegetables can contain botulism without showing signs of spoilage. To be safe boil them in the jars in boiling water for at least 10 minutes before tasting. If the food looks spoiled, foams, or has an offodor during heating destroy it. Can empty jars from products purchased at the store be used in home canning? Commercially canned foods are designed to be sealed on special packing machines and these containers are not suitable for home canning. The hot temperature used in home canning may cause the jar to break. In addition the mouth of the jars are not made to fit the lids that ar,e bought for home canning. It is distribution of lean, and thickness of slice. These factors may vary considerably within a given brand. Lean-To-Fat Ratio Look at the slice in the window to see how much lean and fat it contains. These drawings show slices with different amounts of lean. 2 High Average Lean Select according to your taste, but remember that most of the bacon produced looks like slices 2 and 3. Distribution Of Lean The distribution of lean within a slice of bacon affects its palatablity. When fried, bacon with several strips of lean distributed throughout the slice will tend to be more crispy, 3 Low Average Lean while bacon with the same amount of lean concentrated in fewer but larger sections will tend to be more chewy. These drawings show slices with the same amount of lean distributed differently. Here again, select according to your taste. Thickness of Slice Thick slices are chewier than thin or very thin slices unless cooked longer. Very thinly sliced bacon and vacuum packed bacon is often hard Lean to separate when cold. Warming it first helps. Regular one-pound sliced bacon packages contain about 20 to 22 slices, while a one-pound package of thick-sliced bacon usually contains about 12 slices. Bacon is commonly sold in onepound shingle packages. However, it is also available in a two-pound package, or the smaller 12-ounce or half-pound packages. When comparing prices, check the weight of the package._________________ Egg Shell Color Did you know that an egg's shell color does not affect its nutritive value, flavor or cooking? Egg shell color is determine by the breed of hen and in no way affects the quality. recommended that you use the same brand of lid as jar to assure a proper fit. During processing there is a loss of liquid, what causes this? There are a number or causes for this loss including: a) the product is not heated before packing; b) product is packed too tightly; c) air bubbles are not removed before putting on the caps; d) improper use of pressure canner; e) water in water bath does not cover the jars. If this happens do not open jars to replace liquid. The food will not spoil but .there may be a change in color.' Mrs. T. M., Mt. Vernon We do not recommend chemical means to prevent damage to cured meat by insects. Several methods have been recommended, such as hanging the cured meats in an area that will completely prevent the en trance of such insects. If the entire smokehouse cannot be insect proof, then perhaps a small screened-in area could be provided. Another method would be to completely enclose the individual hams in "Kraft Bags". The bags will permit some exchange of air and will not prevent the natural aging and curing processes. and yellow shafted flicker, require a cavity for nesting. Build birdhouses for the cavity nesters. Use the most weatherresistant materials available. Avoid metal it gets too hot in the summer. The size of the house and its entrance should suit the size of the bird you want to attract. Drill holes to provide ventilation and drainage. Many plants beautify your home and produce seed for the birds at the same time. Among them are asters, forget-me-nots and marigolds. If you want to build a feeder, place it near the birdhouse. The closer you place food and shelter, the more likely you are to attract birds. Different birds require different foods. Some eat fruit while others prefer grain or animal materials. You can make your own mixture or use the wild bird food sold in stores. A pamphlet entitled, "Attracting Birds To Your Home," is available from the Cooperative Extension Service. It includes information on the nesting and feeding habits of birds in Georgia as well as illustrations of birdhouses and feeders. Contact your county agent for a copy. 2. Estate planning is for wealthy people This idea suggests that taxes are the only objective of estate planning... Many estates aren't large enough to be taxed but this does not eliminate the need for planning. Other objectives must be considered, including; (a.) providing for special needs of family members; (b.) allowing the estate holder to direct the disposition of his possessions; (c.) reducing estate settlement in costs and possibly in time, (d.) reducing the possibility of personal family problems; (e.) making provisions for retirement. If you have used the excuse that estate planning is for old, wealthy people exclusively, I hope these brief points have prompted you to deeper thought that will result in positive action right away. 3. A will is an estate plan in all situations Without reducing the importance of the will in an estate plan, there is much more than a will needed in many situations. For instance, a life insurance program might be a vital part of an estate plan. A plan for making gifts during life or the establishment of trusts might be important considerations in estate planning. The will instrument is a keystone in the structure of an estate plan and may be sufficient for some estates. 4. Also known as Horse Mint, Bergamot, and Oswego Tea, Bee Balm is a native American plant. It was named, however, after a 16th century Spanish botanist Monardes hence its botanical name Monarda Didyma. Bee Balm was used by the Creek Indians to prepare a tonic and healing bath for patients weakened by illness. Bee Balm can be brewed as a tea but is too peppery for most tastes. It smells of mint but according to modern authorities has no medicinal value except that it is somewhat refreshing. The plant is a hardy herbaceous perennial with shallow roots which are easily uprooted. Characteristic of its family, it has the square mint stem. The plant reaches a height of about 3 feet and the sharply pointed leaves are downy on the underside. When the leaves are crushed you can detect a minty peppery smell. As indicated by its common name, bee balm attracts bees and is an asset to any hive. The scarlet, pink or bluish-purple flowers are widely used in fresh or dried arrangements. Mole Crickets Damage Lawns Mole crickets may cause damage to lawns this summer. These small, light brown crickets with shovel-like front legs burrow beneath the soil and feed on the roots of grass. Damage is rapid and severe when these pests are numerous. Where injury is observed, treat the lawn with an insecticide. Then irrigate to wash the insecticide into the soil. AMERICA EATS LESS MEAT Per capita consumption of red meat fell to 175 pounds in 1973, the lowest level since 1966. Lower consumption was due to a six per cent drop in production, according to the USDA. FUEL STORAGE Don't store fuel for more than six months, advises the Georgia Cooperative Extension Service. Store in underground tanks when possible. If above-ground tanks are used, they should be equipped with a water trap to remove condensation. Condensation in above-ground tanks can only be eliminated by keeping the tank full of fuel.
