FARMERS & CONSUMERS Tommy /rvm, Commissioner Georgia Department of Agriculture Market Bulletin Volume 60 David Guest Pork Producers Improve Quality With Georgia being the largest swine-producing state east of the Mississippi and marketing approximately 2 million hogs annually, the pork producers of Georgia have recently organized the Georgia Pork Producers Association, Inc. The organization became official in November, 1973 with an organizational meeting to elect officers and directors and also to adopt a set of by-laws. The purpose of this association shall be to promote the best interest of the total swine industry in the State of Georgia; to bring about the (Our guest columnist this week is David Guest, Georgia Pork Producers Assn., Inc., Route 3, Americus 31709.)____________ efficient production of market hogs of superior quality and to improve through the cooperation of packing and marketing industries, the quality, uniformity, processing and packaging and therefore, the consumer demand for Georgia pork products. The Georgia Pork Producers Assn., Inc. will also become affiliated with the National Pork Producers Council by participation in a voluntary nickel check-off program on every hog sold. Several markets in the state have already begun this check-off which will be divided among the National Livestock & Meat Board (1 cent), the National Pork Producers Council (1.6 cents) and the Ga. Pork Producers Assn, Inc. (2.4 cents) in a coordinated effort of promotion of pork within our State and nationally. As an insight, we might add that the NPPC spent approximately $60,000 in Atlanta in 1973 for the promotion of pork before we were organized and before we ever had a single head checked off in this program. The state association is currently engaged in a massive 1974 membership drive to involve all facets of the swine industry in our state in our organization. More than 1.1 billion board feet of lumber are produced annually by approximately 300 sawmills located in the state. The milk, eggs, peanuts, tobacco, cotton and soybean commissions have programs of research, promotion and education. Sweet potatoes, peaches and apples have programs of research, promotion, education and minimum quality standards. Each program is financed by the producers of that commodity. The combined annual budget of the nine commissions is approximately $1.8 million, ranging from $650,000 for peanuts to $2,500 for apples. The commodity commissions promote quality Georgia products and is another good example of Georgia growers working together for their betterment. Bermudagrass Pellets May Cut Food Costs Commissioner of Agriculture Tommy Irvin presented the Georgia Cattlemen's Association trophy to Bobby Thornton of Wilkes County at the recent 1974 Georgia State Junior Steer Show. Bobby, a member of the Wilkes County FFA, had the 1974 Championship steer. The Georgia Department of Agriculture supports the Junior Steer Show each year and invites all Georgians to participate. Georgia dairy farmers who are feeding blended diets may be able to reduce herd feeding costs by using bermudagrass pellets to supply 15 percent of the dietary dry matter, according to results of research underway at Tifton. Overall performance of the cows fed the concentrate-silage-pellet diet was equal to and, in some respects, perhaps superior to the performance of the cows fed the concentrate-silage diet, said Dr. Joseph C. Johnson, Jr., associate professor of animal science, who conducted the experiment. Page 2 we, ad letteu I-- ^-BB* Dear Editor: I read with interest and appreciation the 100th anniversary issue of the MARKET BULLETIN which carried the masthead showing my father, J.J. Brown, established the Bureau of Markets March 1, 1917. As a boy, I drove my father over Georgia as he made speeches, and I remember well how he was always urging better facilities for farmers to market their products. He would point out how the farmers had learned to make ten blades of grass grow where one formerly grew and having succeeded in production and diversification they were entitled to a better break in the marketing of their products. A promise to set up a bureau of markets was one of the important planks in his platform on which he won election as Commissioner of Agriculture in 1916. The MARKET BULLETIN started in one room at the Capitol. I worked there after school and helped set the type for the Multigraph on which the bulletin was printed. It became so popular that the bulletin was soon let out for contract to be printed as a tabloid newspaper, and more space was found in the basement of the Capitol for editing and mailing. When my father left office in 1927, the Bureau of Markets and the MARKET BULLETIN had proved their worth to the farmers of Georgia, and I believe stood out as two of the major accomplishments of his administration. Therefore, it was gratifying to me that the February 13, 1974, issue of the MARKET BULLETIN in reflecting the outstanding history of the Georgia Department of Agriculture gave credit to my father for the establishment of the Bureau of Markets. When the small white daisylike flowers are in bloom, it grows to a height of one foot. Chamomile flowers are used in preparing a tea for nervousness. However, it is more respected for the claim that it is the "garden's doctor", meaning that if planted near sick plants it would cure them. This creeping herb spreads rapidly and for the most part will stay green through the winter. Its tiny, fern-like leaves mat together and when crushed give off a pleasant herbal fragrance. Can Food Properly For Best Quality With prices soaring, many Georgians are again canning. Canning, though, must be done with care if food is to keep and be of good quality. Particular attention must be given low-acid foods such as most vegetables, meats and fish. The pressure-canning method should be used for low acid foods. At that weight, the calf is weaned and either sold to a feed lot operator or put back out in the pasture for an additional growing period. (3) Feed lot: Eventually, the feed lot enclosed dirt pen will become his home. For the next four to eight months he does nothing but eat as much as he wants and grow to a marketable weight, which is usually over 1,100 pounds and takes about 3,500 pounds of grain, 1,000 pounds of hay or silage, and 360 pounds of protein supplement during an average stay. (4) Packing Plant: At the packing plant the steer is slaughtered and converted from beef on the hoof to beef on the hook in carcass form. Up to this point weight has been gained, but from here on it's lost as the nonmeat parts are removed. Here's an example: an average 1,150 pound steef will yield only about a 700 pound carcass. (5) Retailer: Then, the retailer cuts the carcass into individual retail cuts, packages them, and sells them to consumers. During the cutting process, the meat cutter trims away an additional 190 pounds of fat, bone and waste leaving only about 510 pounds of saleable retail cuts from what was once a 1,150 pound steer. (6) Your Table: To the beef industry, consumer demand is the most important stage of all, because the amount consumed and the price consumers are willing to pay determine the economic well being of the entire production system. Beef demand can increase rapidly, but not beef supply. It takes at least 3 years from the time the producer decides to expand his breeding herd until more beef reaches the market. Instant beef just isn't possible. Swine Losses Cost Millions Millions of dollars are lost each year by the swine industry from disease, poor management, inadequate nutrition and parasites. Approximately 30 percent of the pigs farrowed never go to market. Half of the deaths occur during the first week of life, due to chilling and crushing by the sow. Close attention must be given to the sow. Provide good nutrition, worm with the proper drug, provide good management and utilize veterinary services on a preventive basis wherever possible. S., Fairburn The smoking method you refer to is a simple matter. A metal container that can be placed off the floor is needed. Start a fire in the container out doors and let it burn. Place hardwood sticks, preferably hickory, over the fire for heating purposes. When the flame has decreased, place in a smokehouse or whatever building you have that is constructed with close fitting materials. Hickory wood is green and will smoulder and produce an abundance of smoke. Keep this up from twelve to twenty-four hours. A charcoal grill will be fine to use for this method. The meat should be hung over the smoke source. *** Why do my petunias wilt and die after the first blooms? L. T., Lawrenceville Petunias are subject to a number of diseases; one of the more common is a wilt disease that is quite difficult to prevent and control. Once the disease is found in a flower bed, it would be wise to choose plants other than petunias. There are some sprays that if used often would keep it un der partial control. Unfortunately, the sprays are quite expensive and must be used weekly for any results at all. Most petunia diseases are more severe during wet and warm weather. Seldom will petunias go through an entire growing season without the disease coming into the planting.
