FARMERS & CONSUMERS Tommy Irvin, Commissioner Georgia Department of Agriculture Market Bulletin Volume 59 Gene Marks Dairymen Feel Price Squeeze During the past week, my feed dealer came to see me and to let me know that the feed price had increased $10.60 a ton for the week. Last week, the increase was $7.00 a ton. The day before, my gasoline dealer arrived to make a deliv- ery. He said, "Gene, I don't have any regular gas, and high octane is 3 cents a gallon higher and I diesel fuel is also up." During the same day, I called my fertilizer dealer and he simply didn't have any fertilizer on hand that he could deliver. My experiences were about typical of my dairy farmer neighbors and the 700 producers who make up Dairymen, Inc., in Georgia. The increases in feed costs make the total increase during the past year in excess of 50%. Box 1287, Decatur, Georgia 30031.) milk has increased from feed costs alone by approximately $1.25/cwt. of milk. Other production costs, gasoline, fertilizer, electricity, taxes, etc. are all higher. The farm price of milk has increased during the past year and currently the average price to the farmer is about 50 cents/cwt. higher than it was a year ago. In spite of the increased prices, many dairymen have left the business and production is down in Georgia. On a national level, production of milk has been lower for five consecutive months than a year earlier. At this point, let me review. The average price to the dairy farmer is up 50 cents, but his cost is up in excess of $1.25/cwt. and rising. Obviously, the squeeze is on and the farm price must be increased to forestall a serious shortage of milk. It is because of these reasons that the Board of Directors and staff of Dairymen, Inc. are working for an increase in price by October, of 75 cents to $1.00/cwt. This will be an increase of about 10% in the farm price in Georgia. In considering this matter, let me call to your attention, some facts about food prices, according to USDA figures: * Average wages increased nearly 250% during the past 20 years, while the prices of food eaten in the home increased less than 40%. * In February of 1973, the average price of milk per quart in the United States was about 31 cents. Page 5 Recipes Of The Week COFFEE CAKE 2 sticks margarine 2 cups sugar 2 large eggs 1 cup sour cream 2 cups flour 1/4 tsp. salt 1 tsp. baking powder Cinnamon Mixture Make mixture of 6 Tablespoons Confectioners 10X powdered sugar, and 2 Tablespoons cinnamon. Chop approx. 1/2 cup pecans and add to Cinnamon mixture. Set aside. Cream margarine and sugar. Add eggs and beat. Add sour cream and mix. Sift flour, salt, and baking powder together and fold into batter. Pour one-third of batter into greased Bundt Cake Pan, alternating batter in layers with Cinnamon mixture. Add more batter and another layer of Cinnamon mixture until all is used. Bake approximately 50 mins. to 1 hour (or until done) at 350 degrees. Let cool a few minutes, loosen sides with knife and invert to remove. May be frozen, if so desired. Bake in one 10 inch Bundt size pan or two 81/2x4 1/2 size. INTERNATIONAL BEAN A student in Yale University's dining hall eats a main course of "soybean steak." An Illinois industrial firm advertises a soybean product "that looks, tastes, and feels just like meat in stews, patties, and chili. It handles as easily as a dry ingredient until you're ready to use it." As far as Mozambique, Africa, women stir water into a soybean powder to add protein to their meatshort meals. Page 8 The genus Yucca of the Liliaceae family includes some of the most peculiar, and sometimes grotesque, flowering plants known. The major characteristics of the yucca are the swordlike leaves which are rigid and sharptipped, and the flowering stalk which bears an open cluster of creamy white flowers. There are many varieties of yucca, some being native to our state while others are at home in the deserts of Utah. The hardiest kind and probably the most common in Georgia is Adam's-Needle, Y. filamentosa. It produces leaves about 21/2 feet long and 1/2 inch wide and large inflorescent creamwhite flowers on a stalk 4 to 5 feet high. One of the more tender varieties which grow outdoors in mild climates only is Eve's Darning needle, Y. gloriosa, also called Spanish Dagger. The main difference in this plant is the creamcolored flowers which are marked with purple or red on the outside. To propagate yucca, short shoots can be detached from old stems. These can be rooted easily in pots and are ready to be planted in their permanent location. The plant itself prefers a well-drained loamy soil. Wet, cold or heavy clay soils will not be suitable. In mixing the soil, be sure to add pieces of sandstone or brick rubble to keep it from packing. The yucca bears a fruit which ripens in autumn varying in color from yellow to dark purple and is shaped somewhat like a papaya. It has a sweet flavor when peeled and eaten raw although the southwestern Indians generally roasted it before eating and sometimes dried the raw, sliced fruit in the sun for future use.
