Bake exactly three hours in slow 250 degree oven. Raisins may be puffed by dropping in water which has been brought to a boil and then the unit turned off. Let stand for fifteen minutes. In the early 1900's the Bureau of Plant Introduction of the U. S. Department of Agriculture sent sample seedlings of several hollies from China to the superin tendent of Westview cemetery in Atlanta. Mr. Burford grew these plants which were the only ones of their kind in the United States. The one leaf spine holly prospered in its original location at Westview and this particular variety became known as the Burfordi holly. From this parent plant, thousands of offspring have been propagated and literally populated the entire country. The Burfordi holly is one of the most popular Chinese variety as it produces very glossy, dark green foliage and an abundance of berries. Burfordi hollies as well as all other varieties of Ilex have played an important role during the holiday season for centuries. Holly has long been symbolic of Christmas. The name is thought to be a corruption of the word "holy". European customs and super stitions frequently involve the use of holly leaves, berries or the shrub itself. In Wales if holly was brought in the house before Christmas Eve it was sure to cause family quarrels throughout the year. In some parts of Germany and England, he-hollies were the prickly variety and shehollies were the smooth-leaved kind. The type of holly brought in the house determined who would "wear the pants" for the next 12 months. Besides bringing the holly in the house at just the right time, removing it was also tricky. In parts of Britain if you left holly in the house after New Year's Eve the maidens of the household would see ghosts. The holly could not be simply thrown away either but had to be burned, otherwise misfortune would continue as if the holly had never been removed. To maidens looking for a husband, holly leaves and Christ mas Eve were extremely important. The plan went as follows: place three pails of water on the floor near your bed; pin three leaves of holly on your nightgown over your heart. During the night's "painful" sleep you should see your in tended's face. Christmas Eve was one of the few nights during the year that this charm was potent. Carnesville Family Finds Turkey Farming Rewarding Less than four years ago, Jim Reid was working on the assembly line of the General Motors Doraville, Ga. plant. His wife, Faye, was employed as a corporate secretary and together, as Faye puts it, "we drew a nice weekly pay". With their three children they were leading a comfortable life. REMINDER... No more garbage feeding to swine will be allowed after January 1, 1973 due to an act passed by the 1971 General Assembly. According to Commissioner of Agriculture Tommy Irvin, this two year time elapse bet ween passage of the law outlawing garbage feeding and date for the law to become ef fective was provided so that garbage feeders could make the necessary operational changes and institutions providing gar bage to feeders could arrange for other means of disposing of their food scraps. Improperly cooked garbage is known to have contributed to continuing hog cholera out breaks in the state, and com plete eradication of hog cholera is not possible so long as garbage feeding operations are allowed. Indemnity Payments Not Available For Calves At Present The USDA has advised Georgia farmers that funds are not available at this time to pay indemnity on calves of cows which react to test for brucellosis. Indemnity for calves of infected cows became possible October 12, 1972 by an amendment to the Code of Federal Regulations, which provides for indemnity for heifer and purebred bull calves under six months of age nursing infected dams. However, the regulations further provide that before indemnity can be paid, all calves in the herd nursing infected dams must be removed and slaughtered, including grade bulls, steer calves or spayed heifers which are not eligible for indemnity payments. When funds will be available for indemnity payments on eligible calves is not known at this time. Georgia Still Ranks As Pulpwood Leader Like most couples, Jim and Faye stopped in the middle of their suburban treadmill to evaluate their goals and found that mostly they were reaching for material things. Unlike most couples, they made a decision to completely change direction. They bought a farm in Carnesville but once they moved in, they had some more decisions to make. What to grow? What to do with the 203 acres sitting atop a windswept north Georgia hill. Faye resigned her job, the kids enrolled in Carnesville schools and Jim commuted to Doraville. Some people, Jim soon discovered, were making a good living raising turkeys. His decision to leave General Motors for the life of a turkey rancher was not long in coming. "We've had some lean times," Faye will say, "but we love this life. Jim and I don't think we could ever be any happier than we are right now." This year has been the banner one. As of Thanksgiving, they sold 24,000 birds, the weight of each averaging 30 1/2 pounds. The Reids are especially proud of the fact that thus far, they have had to hire no extra farm help. "Our son Jim (16) and daughters Carol (13) and Susan (11) love farming and are tremendously important to the operation of our farm," Jim Reid says. "Young Jim is very active in the Georgia Future Farmers of America and this year he's the chaplain." Jim, Sr. is a director in the Georgia Farm Bureau, a member of the Cattlemen's Association and a member of the Young Farmer's Association. When an observer said Jim Reid .and his family have obviously found a new life, Jim Reid put it more succinctly. "We've found life. Period." DANGEROUS POPCORN? During the holiday season, many edible goodies are left in places easily accessible to infants and young children. A word of caution from University of Georgia Extension home economists: Small children should not be allowed to eat small hard candies, popcorn and nuts, because they might get caught in a youngster's windpipe. Again last year, Georgia was the leading pulpwood producing state in the nation. Georgia produced over 7.2 million cords in '71. HOW MANY SNAKES?
