The Future Homemakers of America are involved because we CARE. We are aware of the many problems^ of our society such as the Viet Nam war. poverty, drug abuse, and the so-called generation gap. But Future Homemakers join with other concerned young people in dreaming the "Impossible Dream"; that of solving these problems and improving our society so that our children will have a better place in which to live. How often have we heard, "The youth of today are the leaders of tomorrow." As American citizens, we teens realize this challenge and try to face it squarely. The young generation seeks to solve not only its own problems, but those of our nation and the world with enthusiasm some adults lack. The majority of today's youth are young citizens, eager to play a role in home, community, and national affairs. They stand ready to uphold (Our guest columnist this week is Miss Mary Beth Music, State President, Georgia Association, Future Homemakers of America, Route 3, Box 88, Nicholls, 31554.) democracy, to provide leadership and to take responsibility. But how often do you turn on the television, and hear a news report on the teens who are attending college FOR an EDUCATION, or the group of young people who started a "hot line" for persons who were in trouble with drugs and needed advice? Drugs, drugs, drugs are you tired of hearing about them? When you see a headline with the word "drug" printed in it, do you turn the pmaeg?e" and say "That doesn't concern This rapidly spreading problem does concern you. You are obligated by your share in the future to learn all you can about drugs. Your son, daughter, grandson, or granddaughter may be involved in the "Drug Scene". Statistics show that last year 1,500 accidental deaths were caused by barbiturate overdose. The average age of victims: 17. Adults look at teens, and shake their heads in a hopeless attitude. Many parents point to peer pressure as the cause of their child's drug involvement or to television or contemporary music or many other outside things. However, psychiatrists find almost invariably that the basic problem is in the home. There are, unfortunately, very few families that have the open communication, the consideration for one another, an innate self-respect coupled with respect for one another that allows for (Continued on page 8) Oops! We Goofed 71 Legislature Passes Farmer, Consumer Bills In last week's Market Bulletin we goofed. That picture with the termite article was not a termite at all, but a flying ant. The real termite looks like this! The just concluded 1971 session of the legislature was a productive one and included the passage of several bills of particular interest to the farmer and consumer. Commissioner of Agriculture Tommy Irvin has stated that he feels the bills passed that relate to the Department of Agriculture will enable this department to do a better job of serving and protecting the farmers and consumers of Georgia. Ted Hudson of District 48 also Powers' Crossroads, located on state highway 34, between Newnan and Franklin, will be the site of the. South's largest outdoor festival of arts and crafts, September 11 and 12. Powers' Crossroads is an innovation in outdoor exhibits for this part of the country. It will provide an opportunity for the display and sale of all types of arts and crafts, and in addition, photography, glass, handwork, fresh produce, canned goods, flowers and herbs. Anyone having artifacts they would like to display and sell is invited to do so. Directors of the festival are anxious to locate people throughout the state who would like to share their workmanship with others. Deadline for return of entry forms is May 1st., 1971. At the beginning of the session it appeared that farmers would lose the sales tax exemption that is allowed on certain farm equipment. However, legislation introduced by Representatives Doug Whitmire of District 11, Tom Carr of District 35 and Paul Nessmith of District 44 expanded the sales tax exemption law to include poultry and livestock equipment. This bill received the support of many friends of agriculture and agri-business in both Houses and passed. Mrs. Janet Merritt, representative from the 46th district, introduced legislation which will strengthen the Georgia Food Act. It requires all retail food establishments in Georgia to be licensed by the Department of Agriculture and allows for hearings to be held by the Commissioner on any violations without going into court. However, the privilege of taking a case to court is maintained. Sen. Bobby Rowan of the strengthened the Georgia Food Act as pertains to meat inspection at the retail level. It will allow the Department of Agriculture to receive matching federal funds for retail meat inspection. H.B. 106 by Dorsey Matthews of District 63 allows for the custom slaughtering of meat animals by individuals for their own personal use. The last several cases of hog cholera in Georgia have been traced directly to the feeding of garbage. H.B. 108, introduced by Henry Reaves of District 71 will prohibit the feeding of garbage to swine by individual or commercial hog farmers. Institutions that do not sell their hogs or meat will still be allowed to feed garbage. The majority of employees of the Georgia Department of Agriculture are not stationed in Atlanta but are located throughout the state in that much of the work of the department is in the field of inspection. The travel of these inspectors, however, is still a major expenditure to the department. Studies have indicated that the department could operate its own vehicles at a savings. Therefore, Representative Marcus Collins of the 62nd District introduced legislation in the House that would enable the department to purchase its own automobiles for state use if this is deemed to be more economical than having employees own and operate their own cars. Senator Hugh Gillis of the 20th aided this legislation in the Senate. A Senate bill of interest was in- troduced by Sen. Sam McGill of District 24 requiring that anyone purchasing livestock in Georgia must pay for it on the same day it is pur- chased. This law should protect salesbarn operators as well as far- mers. A House Bill was introduced by Rep. Roy Lambert of District 25 that allows all producers of any particular commodity who elect to do so to cooperate in the cost of promoting and marketing any surplus of that com- modity. Rep. Marcus Collins also in- troduced a bill exempting some farm Commissioner of Agriculture and Stone Mountain Memorial Association Chairman Tommy Irvin will share the spotlight with 30,000 eggs Easter Sunday afternoon, April 11, at Stone Mountain Park. Eager youngsters, three to nine, will participate in the park's sixth annual Easter egg hunt. The fun is slated to start at 2 p.m. in front of Memorial Hall. The Georgia Egg Commission will furnish the eggs for the hunt. Members of the "Path Finders" from the Seventh-Day Adventists churches in the community will hide the eggs. Easter activity at the park will start at 4:30 a.m. as worshipers arrive for the annual 6 a.m. sunrise service atop the mountain. Torches will be lighted along the walk-up trail at 4:30 a.m. The Skylift begins operating at the same time, with reduced rates. Simultaneously, a service will be held on the lawn of Memorial trucks from parts of the vehicle inspection law. Certain safety features of the law must still be complied with, however. Another Senate Bill of interest which was introduced by Sen. McGill, Chairman of the Senate Agriculture Committee, is designed to promote good Georgia beef by allowing only beef produced in Georgia and U.S.D.A. graded "good" or better to carry a "Georgia Beef" label. "On a hot day, in Virginia," wrote Thomas Jefferson, "I know of nothing more comforting than a fine spiced pickle, brought up troutlike from the sparkling depths of the aromatic \ar below stairs in Aunt Sally's cellar." Pickling, a process used to keep food longer, is of ancient lineage, along with salting, smoking, and sun-drying. Pickling provides us with a lengthy list of delicacies. Pickles are a product of natural fermentation either of the vegetables or food ingredients or of the liquid surrounding them. This process is controlled by the amount of salt used, the tem perature, herbs, spices and other factors which develop the flavor, color, aroma, and texture. The pickle patch was very important on the colonial plan tations as well as to all pioneering generations since pickles were the only zestful, juicy, and green food available during many months of the year. The homemakers "put up" pickles in glass jars and "put down" pickles in stone crocks. Most pickles are made from cucumbers and are called either "cured pickles" or "fresh pack pickles" each having its own characteristic flavor and texture. Cured pickles are fermented in a salt brine for several months and then completed in a vinegar solution seasoned to give the flavor desired. They are usually crisp, dark green, and tran slucent. Fresh-pack pickles are relatively new on the market. They are packed in containers and covered with a pickling solution containing vinegars, other acids, flavorings, and ingredients. 71 Legislature (Continued from page 1) Representatives Simon Gran- tham and Charles Hudson introduced a resolution urging the President, U. S. Congress and the U. S. Secretary of Agriculture to continue the school milk program as a part of the National School Lunch program. Six Senate Resolutions pertaining to tobacco were introduced and passed in the Senate by Sen. Joe Kennedy of the 4th District, Sen. Ford Spinks of the 9th and Sen. Roscoe Dean of the 6th. Each of these resolutions was designed to protect and assist the Georgia tobacco farmer and warehouseman. It was a busy and a serious session of the Georgia Legislature and Commissioner Irvin commended both Houses on their study and work with special emphasis on the House and Senate Agriculture Committees. In addition he expressed his appreciation to the Budget Committees of both Houses for their understanding and consideration of the Department of Agriculture's budget request. I have tried greasing it and cooking it in a very hot oven, but so far, no success. Mrs. J.N.T., Zebulon Some iron pots have a tag, "Preseasoned" and need no seasoning. However, if no tag, the pot has probably been given a thin coating of lacquer to prevent rust. This must be scoured off with scouring powder and a stiff brush. Then wash it in hot soapsuds, rinse and dry thoroughly. Coat the inside of the pot and cover generously with unsalted fat (lard, vegetable oils, or what you have) and heat it in a slow oven (or over a low fire) for several hours. During the heating process apply more fat now and then. Wipe off excess fat when the seasoning has been completed and you shouldn't have to scour it again. I have a few amaryllis bulbs that come up every spring with a beautiful green foliage but never bloom. What do I do?
