To a wicked farmer, God cursed the earth and decreed that in the future the earth should not produce in abundance for that man and his descendants. To another farmer God said, "If you will hear my voice and obey my laws, I will cause the earth to bloom as a rose and your harvests shall be so great that there will not be room to receive it." To another farmer God said after the flood, "Behold! I place my bow in the cloud as a covenant between me and thee and while the earth remaineth heat and cold; summer and winter; seed time and harvest shall not cease." Beginning many centuries before Christ lived, men built cities and were forced to convey food and other needed articles from the farms to the (Our guest columnist this week is former Commissioner of Agriculture Tom Under. This gave rise to middle men and bankers and transportation. In turn middle men and bankers invented profits and interest. The farmer has a natural monopoly on foods and fibers but never used his advantage to oppress the public. All our business is based on the use of money to buy and sell. All wages are paid by using money. All the costs of transportation and distributing food and fiber necessarily come out of the sale price to the ultimate consumer. Since everyone else gets a whack first at the consumer dollar and the farmer gets only what the others leave. It is little wonder that prices at the farm continue to go down while prices to consumer continue to go up. The machine age has brought to the farmer the ability to produce more crops with fewer hired hands but this machinery costs a great deal of money and destroys millions of jobs. This forced migration to the cities increases the army of the unemployed and takes away millions of the farmers customers from the ranks of self-supporting citizens and increases by millions the ranks of those dependent on the government for bread. We had best turn to that God who spoke to farmers in olden days for guidance it is evident the wisdom of men is not able to cleanse the temple and when the wicked rule the people perish. Wednesday, February 25, 1970 NUMBER 8 Ga. Legislature 23.000 Passes Sound Young Georgians Budget For Ag. The Georgia General Assembly adjourned this past week in Atlanta after passing one of the most progressive and sound budgets for the Georgia Department of Agriculture in recent years. It is a budget that will allow this department to continue various programs of vital concern to the farmer and consumer as well as to implement additional services to better protect the people of this state. Friends of agriculture, agri-business and the consumer in both the House and the Senate are to be commended for this foresight and their efforts on behalf of the Department of Agriculture. The House Agriculture Committee. Senate Agriculture Committee and the work of the Joint Conference Committee were influential in presenting and passing this budget. In general this budget will allow programs such as meat inspection, fire ant eradication, consumer protection service and livestock and plant disease control efforts to be continued in order that the farmer and consumer may be properly protected. Observe FFA Week Vocational Agriculture students in 292 Georgia high schools are joining Future Farmers of America members throughout the nation in activities to emphasize the importance of agriculture during National FFA Week, Feb- ruary 21-28. The theme for this year's celebra- tion is "FFA . . . emphasis agricul- ture." Throughout the week, the young agriculturists are emphasizing the importance to this nation of a dy- namic and prosperous agriculture. Not only will they be informing the nation of the importance of agricul- ture to its citizens, but they will also seek to inform the public of the vast opportunities open to young people in agriculture today. In their classes of vocational agri- culture, these young men study the practical, scientific principals of ag- riculture. They are owners of 11,593 head of beef cattle, 24,300 dairy animals and 39,688 head of swine. They raised 3,366,959 broilers last year and 591,- 771 hens for egg production. Membership in the FFA is made up of high school students in voca- tional agriculture. The organization's activities are designed to help de- velop leadership and good citizenship and to stimulate student interest in higher achievement. While for many years, the FFA has devoted its main efforts toward establishing young men in farming, it also is working to train and de- velop men for thousands of jobs which support the nation's farmers and provide consumer services. Each year, FFA Week is observed during the week of George Washing- ton's birthday. Although Washington is usually recognized as a Revolutionary War general and our first President, it is not generally known that his first love was the farm. He was one of the first in the nation to practice contour planting, crop rota- tions, fertilization, and other soil improvement methods. Smith, horticulturist with the University of Georgia Cooperative Extension Service, says folks who have this problem on their lawns should remove the thatch buildup during February and March. Sprinkle yeast over warm water, stir until dis solved. Heat cottage cheese to lukewarm in a bowl. Combine cooked onion, yeast, cottage cheese, sugar, salt, soda, and dill seed or dill weed. Beat in egg. Mix in flour 1/2 cup at a time, beating after each addition. When flour is well mixed into dough, cover with damp cloth and set in warm place, let rise until doubled in bulk, about 1 1/2 hours. Punch down and turn into well greased loaf pan. Let rise until double, about 40 min utes. Bake in moderate over 50 to 55 minutes until thoroughly baked. If loaf browns too much, cover with foil last 15 minutes. While hot, spread with butter and sprinkle with salt. Page 8 What Horseradish Armoracia, the pleasantly assertive condiment that's so good, regrowing in the same places for dozens of years and spreading where there is sufficient moisture, came to the New World from England. It has thrived and dispersed until it now grows wild throughout much of the same general area. The nosestinging, eye-watering roots, so good when used in moderation with less tasty foods, are edible the year around. The leaves when tender in the spring make greens that are tastier than most when dropped into a small amount of boiling water, cooked uncovered only until tender and then served with a small pat of butter. But it is for its peppery roots that horseradish has been famous for thousands of years. There is little comparison between the freshly grated horseradish you can prepare yourself, using the wild roots and lemon juice instead of the commonly employed wine vinegar, and that from a store. The simplest way to prepare this condiment for the table is by scraping some of the scrubbed root into a small dish, then stirring in fresh lemon juice to taste. You can use this fundamental procedure to produce all kinds of treats with sour cream, using two parts of sour cream by volune to one part of horseradish. It really brings out the flavor of game meats, not to forget good honest beef. Pioneers used to apply the freshly scraped roots externally as they would mustard plasters. It was also used as an internal medicine, a teaspoon of the scraped root to a cup of boiling water; this was allowed to cool. One or two cupfuls were drunk throughout the day, several sips at a time, as a stimulant to the stomach. We have had calls recently here at the BULLETIN inquiring about horseradish reportedly being good for sinus conditions; however we have not been able to find anything to support this theory. THE MARKET BULLETIN Plants May Overcome Cold Weather Damage TROY KEEBLE Extension Horticulturist Cold weather has been rather rough on plants, animals and mankind during the winter. December and January brought some rather unwelcome temperatures to our southland. It is only natural that gardeners are con- cerned over possible injury to their ornamental shrubs, trees and flowering material. A generalized statement concerning the amount of cold injury is highly impractical. Injury is determined by many factors such as section of the state, temperatures during previous weeks, moisture in the soil and plant, amount of sun and wind during the freezing weather, and condition of the plant. There is one factor that contributes greatly to cold injury and that is the selection of plants to be grown in your area. Some plants can tolerate rather low temperatures while others suffer considerable injury. Injury occurs as a result of several phenomena. In the main, stems are injured by the rupturing of plant cells as the water turns to ice crystals. Other injury results, we might call it burning, by plants being exposed to strong wind and bright sunlight while the plant is frozen. Foliage will be browned and rather crisp as a result of moisture being lost from the leaf and not replaced since the moisture in the soil and in the plant will not be able to move into the plant. This is called dessication or drying out of plant tissues and will result in death of the leaves if severe. Generally plants may overcome wind burn, dessication, etc. In the case of split stems and bark these may die or be so severely injured they cannot Overcome the injury. Wise gardeners do not rush out and prune away any stems of discolored foliage or stems showing split bark or ruptured tissues. The full extent or severity of the injury may not be known until the plants come out of dormancy and go into growth again. Granted your plants may be rather unsightly but remember you may be needlessly cutting away growth that required several years to develop. Pruning can be safely delayed until early or mid spring. Be prepared to practice good sanitation and provide adequate soil moisture and proper nutrition. Come May and June and those plants which look so rough now will take on a new dress of foliage, flowers or fruit. FIG TIME It's fig planting time in Georgia. According to C. D. Spivey, horticulturist with the University of Georgia Cooperative Extension Service, fig trees do best if planted on the south or southeast side of a building. He also cautions homeowners not to plant fig trees too deep. They have a shallow root system.
