Providing facts on Geor- gia's Agriculture is the joint respon- sibility of the Statistical Reporting Service U.S.D.A. and the Georgia Department of Agriculture. The co- operative agency responsible for col- lecting and disseminating such in- formation is the Georgia Crop Re- porting Service. Crop and livestock estimates rep- resent collective reports of several thousand individual Georgia farmers, -; processors, ship- s pers and others ? well informed on current prospects of acreage, yield, production, prices and livestock num- bers. The information supplied by r e - ' porters i s tabu- lated and analyzed by trained Agri- cultural Statisticians. These data and recommendations are forwarded to the U. S. Crop Reporting Board, Washington, D.C. where a final re- view is made and all state reports are combined into the United States summary. To saftguard against premature release of estimates the board works on them in locked quarters. __ (Our guest columnist this week is Frasier T. Galloway, Agricultural statistician for Georgia Crop Report- ing Service, 409A North Lumpkin Street, Athens.) __________ The Georgia Crop Reporting Ser- vice prepares special releases for Georgia giving detailed information for this state, the United States and other states for certain competing crops and livestock. These reports are mailed to all crop reporters, newspapers, radio and TV stations and, by special request, to anyone else who is inter- ested in agriculture. To the more than 30,000 voluntary Georgia reporters performing this vital service we extend our heartiest thanks. There are many reasons crop and livestock estimates are made and released for public utilization. Some of the main ones are: 1. With these reports, America's farmers attain an advantage in planning their current and future production and marketing activities. 2. To give producers the same fore- sight to future price trends that organized dealers and proces- sors already have. 3. To eliminate the ill effect of mis- leading reports that might be circulated for private gain in the absence of official reports. 4. To reduce the amount of speculation in farm products. Speculation thrives on uncertainty. Unbiased estimates reduce this uncertainty. 5. To give information on surplus and deficit areas of production, making possible a more economical distribution of products. Wednesday, July 22, 1970 NUMBER 30 Permit Required Tobacco Markets To Move Hogs Open Today In Ga. Due to reports of violations of restrictions on the movement of feeder and breeder swine and slaughter pigs, Dr. J. F. Andrews, State Veterinarian, has issued the following reminder to hog producers in Georgia. Georgia's 23 tobacco markets open today with the promise of one of the best seasons in recent years. Commissioner of Agriculture Tommy Irvin announced the July 22 opening date after the Industry-Wide Flue-Cured Tobacco Marketing Committee, meeting in Raleigh, approved a request for extra selling time on the Georgia markets. Any movement of feeder and Conservation Help breeder swine from farm to farm or from farm to special feeder pig sale The Georgia Tobacco Advisory Board and Commissioner Irvin had agreed that the markets should open must be accompanied by a permit. The permit is obtained after an on farm inspection by a private veterinarian, state livestock inspector, county agent or vo-ag teacher. Slaughter swine may move to livestock auction markets or direct to the slaughter house without inspection or permit. However, these slaughter swine MAY NOT be returned to a farm. The control of the movement of swine was brought about by a high incidence of hog cholera in the state of Georgia during 1968. These controls have helped reduce the outbreaks and spread of cholera. Dr. Andrews reminded all breeders that any violations of these Georgia laws will result in the prosecution of anyone found guilty of such. In an effort to help preserve wildlife and promote good conservation practices, Georgia Power Company has inaugurated a program to attract and conserve wildlife by the use of power rights of way. Georgia Power Company will pay the landowner the estimated cost of one clearing (up to $75) for the preparation and planting of crops or seeding to encourage game in the area. Almost any crop except trees can be planted. For additional information on the use of Georgia Power Company rights of way for wildlife food strips or suitable crops, write Mr. Gill K. Agricultural seed and plants PICKLED BEANS AND CORN ON THE COB For Beans: Wash and string. Cover with hot water and cook only long enough until they are hot throughout, usually about 15 minutes after they come to a boil. For Corn on the Cob: Choose nice, tender, milky ears. Place into hot water and cook only until the milk is set, test by sticking with fork. Ears may be broken into serving size pieces if large. Regardless of size of jars or containers used, the amount of salt per quart of water is one level teaspoon. The food must ferment as kraut does. Dissolve salt in water before pouring over food. If a crock, churn, or barrel is used, place a plate or saucer on top and weight down. Food must remain below surface of salt water or it will mold. However, if any molds, just dip off until all mold is gone. Tie a cloth or towel over top to keep insects from getting in. Fill to within one inch of top with the brine. It will bubble and ferment for a week to ten days. When fermenting ceases, it may be packed into jars and sealed up 'if desired. Some prefer to put into quart or gallon jars to start off with, screwing down the lids very lightly until fermenting has ceased and then tightening the lids. However this has the disadvantage of making the lids almost impossible to get off later and I personally do not use this method. Cold water is used in making the brine; have some extra on hand. Check containers daily and if brine has run over add more to cover. If corn is sealed up in jars, it will foam up like a coke or beer when opened. This does not mean it is ruined. THE MARKET BULLETIN Wild carrot, bird's-nest or Queen Anne's-lace, common names for Daucus Carota, is not native to America but since the coming of the white man it has become naturalized everywheresometimes growing in solid stands in ol.l fields. The small densely clustered flowers are quite decorative and give the plant its most common name: Queen Anne's-lace. These flowers are milky white but if you look closely enough, near the center there is almost always a little flower that is pink, red or purple. There was once a superstition in England that eating this small colored flower from the center would cure epilepsy. Probably no other plant so well illustrates what can be done by plant breeding, seed selection, and cultivation as the ordinary carrot. Few people recognize that the rich orange colored and delicious garden carrot and the common old field weed, Queen Anne's-lace are exactly the same species with only varietal dif ferences. One wonders if the domestic carrot came from the weed or whether "the weed" came from the domestic carrot-that had gone wild; however, good carrots never get a chance to go wild as they will not be overlooked by rabbits, field mice, and other rodents that know a good carrot when they taste it. These little animals see to it that a good carrot never gets a chance to set seed. There is a curious belief in some sections that it is poisonousprobably because livestock will not eat it-disliking its flavor. However, all of this plant is edible and the roots, foliage and seeds are used in home remedies that come highly praised by old her balists. By drying the first year foliage in a warm room and made into an infusion (one ounce of the herb steeped in a pint of boiling water,) taken morning and night was considered excellent for curing everything from stomach upsets to a "gouty disposition." Take some of your ripest tomatoes, wash the seed from the pulp, dry the seed in the sun, and store in a cool dry place away from insects. I would like to know how to keep hoop cheese from drying out and get ting hard. I bought some ground beef and the top was red but the inside was dark. Why was this and is it good to eat after it turns dark? D.O., Tifton To keep hoop cheese from drying out keep it covered either in a container or with clear plastic wrap. The ground beef had not been aerated before packaging. If exposed to the air, the dark meat will eventually turn red also. Perfectly safe to eat. A few months ago we had a nice 9 month old beef killed and dressed out. The steaks were very good and tender but now we can hardly eat the ground beef. From your letter we assume the beef is in a home freezer. Foods stored in home freezers sometime take on odors and tastes from other-foods stored in the freezer. It sounds as if your beef has taken on odors from other foods stored there presently or earlier. These odors would cause a noticeable taste change. RESPONSE To stop hiccups, make strong tea from peppermint plants. Drink this freely several times daily. Have never know this to fail.
