July 10, 1968 Symbols To Code NUMBER 28 Cotton Classification Card Changes With '68 Season Something new is on the "green card" this year! Farmers receiving their Smith - Doxey cards this fall will notice some changes. In preparation for automation, the Cotton Division, C&MS, U. S. Department of Agriculture has changed from the use of grade names and symbols to a numerical code on their classification records. Staple lengths are also being written in code. SPECIMEN ii s|:;;|i;3;;^^ Beginning with the 1968 crop, Smith-Doxey Classification results will be recorded on Form 1 cards in code only. As example, the sample card above shows grade code 31 and staple 34. This would mean grade - "Mid" and staple length - 1-1/16. During the 1967 crop season the "green cards" showed both the numerical code and the usual symbols for grades and staple lengths This procedure was followed to let farmers become familiar with the codes before changing completely to them this year. The codes and the usual symbols for grades and staple lengths are shown below. Farmers are urged to keep this article for future reference when their Smith-Doxey classification cards are received. Page 8 THE MARKET BULLETIN July 10, 1968 Georgia Summer Recipes MISS MUFFETS PIE CRUST: 1 cup sifted flour 1/4 cup sugar 1 teaspoon grated lemon peel 1/2 cup butter or margarine 1 egg yolk 1/4 teaspoon vanilla extract FILLING: 1-1/2 cups cottage cheese, well drained 1 cup sugar 1-1/2 teaspoon flour 1/4 teaspoon salt 1 teaspoon grated lemon peel 5 eggs 1 egg white 1/4 teaspoon vanilla extract 1 teaspoon lemon juice TOPPING: 2 packages (10 ox each) frozen strawberries 2 tablespoons cornstarch 2 tablespoons sugar 1 tablespoon grated lemon peel 2 tablespoons lemon juice Fresh strawberries To prepare CRUST: Combine flour, sugar and lemon peel; make a well in the center. Cut butter or margarine into small pieces and add to the dry ingredients. Add the egg yolk and vanilla. Mix all ingredients together with a fork until soft and pliable and well combined. Roll into a ball. Press dough over the bottom and sides of a 10-inch pie plate; do not ex tend dough up on the rim. If the dough becomes hard to handle chill for a few minutes. Prick well with a fork and bake in a 400 F (hot) oven for 10 minutes. Cool before add ing filling. To prepare FILLING: Cream cottage cheese well and then slowly add the sugar, flour, salt and lemon peel. Add eggs and egg white one at a time, beating very well after each addition. Add vanilla and lemon juice. Pour into crust. Bake in a 400 F (hot) over for 30 to 35 minutes or until filling is set. Cool on rack before adding topping. To prepare TOPPING: Combine thawed strawberries, cornstarch and sugar in a small saucepan and cook over low heat, stirring constantly, until mixture is thick and clear. Remove from heat; blend in lemon peel and juice. Cool slightly and spoon over pie. If desired, garnish with fresh strawberries. Can be served at once or after chilling. Make 6 servings. PEACH CONSERVE 4 pounds peaches (weight after preparing) 1 cup shelled pecans or other nuts 3 pounds sugar 2 oranges Crop peaches in one-half inch cubes. Peel oranges and chop the fruit and also one-half of the peel, discarding the other peel and seed. Mix chopped peaches, orange pulp, sliced peel and sugar. Cook all together rapidly until the mixture is clear and transparent and give the jelly test. This would be about 220 F. The nuts should be added 5 minutes before removing from the heat. Remove from the heat, cool slightly and pack into jars. Process 5 minutes at simmering in hot water bath. Seal and store in cool, dark place. BLACKBERRY JAM 1 pound berries (1/2 ripe and 1/2 under ripe) 3/4 pound sugar Weigh berries, wash, crush and heat thoroughly. Add sugar and cook to 220 F. or until a good jelly test can be obtained. Pack and seal while hot. It is safer to process to kill mold or ganisms and to secure a perfect seal. Process in hot-water bath at simmering temperature for 15 minutes. PEACH REFRIGERATOR CAKE 1/2 pound marshmallows 1/2 cup orange juice 1/2 ginger ale Sponge cake or ladyfingers 6 to 8 peaches, sliced 1/2 cup chopped crystallized ginger 1 cup heavy cream, whipped Cut marshmallows in quarters, add all to orange juice and stir over hot water until almost melted; cool slightly and add ginger ale. When slightly thickened, fold in 3/4 cup whipped cream. Line a spring form pan with waxed paper. Arrange layer of cake or ladyfingers on bottom, next a layer of peaches, then layer of marshmallows; repeat until there are 3 layers of cake and 2 of filling. Chill in refrigerator overnight. Unmold; garnish with remaining peaches and cream and ginger. Use fresh or canned peaches. Yield: 6-8 portions. OLD-FASHIONED EGG CUSTARD ICE CREAM 3/4 cup sugar 2 tablespoons flour 1/4 teaspoon salt 2 cups milk 2 eggs, beaten 2 cups (1 pt) heavy cream 1 pint fresh strawberries, crushed Combine sugar, flour and salt in saucepan; gradually stir in milk. Cook over low heat, stirring constantly, till thickened. Add a small amount of the hot mixture to eggs and mix well. Return to saucepan; cook and stir 1 minute longer. Chill re maining ingredients. Freeze in a 2-quart (or larger, ice cream freezer, using 6 parts ice to 1 part salt. Remove dasher. Cover can with several thicknesses of waxed paper; replace lid. Pack in ice and salt; let ripen a few hours (or ripen in freezing unit of refrigerator. Make 1-1/4 quarts. Note: If desired, strawberries may be sweetened to taste. FLAVOR VARIATIONS: Vanilla: Omit strawberries and add 1-1/2 teaspoons vanilla extract. Peach: Substitute 2 cups crushed peaches for strawberries. Raspberry: Substitute 1 pint crushed raspberries for straw berries. PEACH PICKLES 6 pounds peeled peaches 3 pounds sugar 1 pint vinegar 1 pint water 1 tablespoon ginger 2 tablespoons whole cloves, crushed 4 sticks cinnamon or 4 ounces Peel peaches, following directions given in canned peaches. Drop in cold salt and vinegar solution (2 tablespoons salt, 2 tablespoons vinegar, 1 gallon water) immediately to prevent discoloration. Put vinegar into preserving kettle with hotyater, boil and skim; add spices (tied in cloth bag). Drain peaches well, drop in boiling syrup and cook about 1 minute, until they can be pierced with a straw but not too soft. Remove from fire and pack in jars and cover with boiling spiced vine gar (or let plump in syrup over night). Seal and process 20 minutes at simmering in hot water bath.
