Colorful And Good For The Holiday Season 
 
Carrot 
 
Jam Cake 
 
2 c. carrots (cooked and mashed) 
1/2 c. soft bread crumbs 2 tsp. abated onion 
 
1/2 tsp. salt 1/8 tsp. pepper 1/2 c. grated cheese 2 eggs, slightly beaten 
 
Combine all ingredients. Shape into balls about 11/2 in. in diameter. Roll in egg and crumbs and fry in deep fat (375) until browned. Drain on ab sorbent paper. 
 
5 eggs 2 c. sugar 2 c. butter 5 c. flour 1 c. chopped raisins 1 c. chopped pecans 
 
Layers: 2 Tblspn. soda 1 tsp. allspice 1 c. grape juice 1 tsp. vanilla 2 c. jam 
 
1 c. sugar 1 can no. 2 apple slices 1 Tblspn. cornstarch 2 egg whites 1/4 tsp. cream of tartar salt 
 
2 egg yolks 6 Tblspn. flour 6 Tblspn. sugar 1/4 tsp. vanilla 1/4 tsp. almond extract 
 
Mix together sugar and cornstarch in saucepan, odd apples. Cook over med. heat, stirring constantly until mixture comes to a boil; boil 1 min. Pour into 9x 9x 2 pan. Beat egg whites, salt and cream of tartar together until stiff. Beat egg yolks until thick and light colored, beat in sugar. Fold into egg white mixture. Fold in flour and flavorings. Carefully pour over apple mixture. Bake in moderate oven 350 40-45 min. or until topping is done. Serve warm or cold with cream. 
 
Cream sugar, butter and add eggs. Add spices to flour and sift with soda. Mix grape juice, jam and vanilla together and add alternately to the mix ture with the flour. Add raisins and nuts, bake in 4 or 5 pans at 350 for about 30 min. 
 
1 c. chopped raisins 2 c. chopped nuts 3 c. sugar 3 c. milk 
 
Filling: 1 c. pineapple 1 c. chopped cherries 1 c. grated coconut 
 
Cook sugar and milk together, until it starts to thicken. Don't stir unless ne cessary. Add all other ingredients and cook over low heat until it boils, stir ring constantly. Spread between layers and on top and sides.
