THE STRING BEAN Leah Ascham and Ruth Tucker Dept. of Home Economics. Now that string beans are plentiful, why not vary-their use? They are high in vitamin A and the immature seed pod is com- parable with many leaves in vitamin C content. String beans are equal to lettuce and cabbage in vitamin B content, but not as rich is spinach. They are a fair source of iron but it tends to be partially lost in the cooking water if overcooked or if too large a quantity is used and drained off. Beans, like other green col- ored vegetables, should be cook- of water. In order to retain the minerals in this vegetable the salt should be added at the end rather than at the beginning of the cooking period. Creamed String Beans Make a white sauce: 1 cup milk, 2 tablespoons butter, 2 tablespoons flour, % teaspoon salt. Add 2 cups cooked beans. Heat and serve. Scalloped Beans Prepare sauce and beans. as above.. Pour into baking dish. Cover with buttered ae and bake until brown. Cream of String Bean Soup 2 cups milk, = 2 tablespoons butter, 2 tablespoons flour, 1 teaspoon salt, 44-1 cup ground or finely chopped cooked beans. Make sauce of milk, flour, and butter. Add beans. Heat and serve. This recipe, as well as the following ones, ig a good way to use left-over beans.
