Grated orange and lemon rind are. % In grating, only the yellow portion of the rind should be removed. This yellow portion contains the oil cells from which come the volatile oils that give the flavor. The grated rinds are preferred by many to the commercial ly prepared extracts, which while made from. the same oils, frequetly lose their flavor more readily when heated. For grated peels, als only the yel- low portion which contains the oil cells. Use fresh or mixed with sugar and keep ina tightly covered jar. Ground peel is where the whole peel is used. It is ground fine, mixed with sugar, and used in the same manner as the grated rind. Orange peel may he candied or used for marmalade. Lemon peel has dozens of uses. The peels of other fruits and berries may be turn ed into delicious jams. It is a thrifty housewife who takes advantage of such things. i : CARE ESSENTIAL FOR Cows AT THE CALYING TIME cS i = EEE CaN Tt is well fo take the beef cows oft open range about. a week before calv- ing time so they can be seen daily, says Professor W. P. Ward, extension animal husbandman of the Georgia State College of Agriculture. If the weather is warm and bright the cow may be put in a grain field or pasture near the house to calve. .If the wea- ther is rainy or looks fe catenine she should be put ina clean:stall or un- der shelter with clean straw or pine straw as bedding. Calves are frequent- ly lost soon after birth from expos- ure. ' Especially in cold rainy weather. If the calf is lost a years expense on the cow is usually lost. A little care at this time may save it. If the cow is a heavy milker do not feed her much grain or concentrated feed for the first two or three days after calving. Give her good hay or other roughage and plenty of fresh |: water. If the calf cannot take all of the milk, milk, out the balance after the calf has sucked. Watch the udder .| to see that it does not cake. As a rule, however a small percentage of cows will give more than the calf can take. If possible, after the calf isa few days old let the suckling cows run in grain fields such as rye, oats, barley, Austrian winter peas or combination of these. They stimulate milk flow and will cause the calf to grow off rapidly. If the cows are very thin give them some feed until grass becomes really good in the spring. Too frequently sucking cows are turned in the pasture before there is sufficient grass to main- tain them and both the cow and calf may be lost. A little feed at this time is very beneficial. Dehorn all calves just as early as possible. The small horn or button may be cut out with a sharp knife and the wound rubbed with a stick of caustic Do not use caustic potash /in~ rainy weather. Castrate all gerade or scrub calves when three to ten weeks old. Put the suckling cows in a good pas- ture where the calves can be kept growing at all times. A beef calf should never be permitted to get thin. Regard- less of what its ultimate use is to be, a rapidly growing calf is the most prof- itable-Southern Culitvator. WHEN TO SELL BROILERS Nine out of ten poultry raisers are better off if they will sell broilers at two to two and a half pounds for hea- vy birds and one and 2 half to two pounds for Leghorns, rather than to cur from July 15th to October ist. This overcrow- ded condition doesnt become notice- able until the chicks are eight to ten weeks of age. If the cockerels are kept much longer than this, the pullets. are crowded and stunted, and. it means that they come into egg production late, that they are undersized and poorly developed, and that colds are much more likely to occur. if The biggest reason, however, is that. as much money can be gotten per head for a chicken that is sold weighing two to. two and a half pounds as can usu- ally be gotten for the same bird weigh- ing twice that much. This is espec- ially true of chicks~ hatched March and April. Our lowest broiler prices usually oc- broilers in June are worth 25c a pound. : poultry in August and September is is likely to be worth 15c to 18c. That means that the April-hatched cocker- l can be sold in June for 50c, but the same bird is kept until September, when he weighs twice as much, the probabilities are that we will only ge 60c for the same bird. Of course, in the meantime we have had the pleas- ure of this young roosters company and have fed hm a goodly amount of feed.
