Studies in this country, in Canada, and in Europe indicate that spontan- eous combustion, or the self-igni- tion of hay, manure, or other agri- cultural products, as the cause of fires is of far more frequency and covers a much wider territory than is generally supposed. A conservative estimate places the annual loss from - fires on farms and in rural communi- ties at approximately $150,000,000, with attending losses of 3,500 lives. Of the total property loss, it is esti- mated that 20 per cent, or $30,000,- 000 can be charged to spontaneous combustion. Added pectin: may be used to make jelly from fruits which eontain little or none of this substanee such as strawberries or rhubarb. Added acid, in the farm of lemon juice or tart apple juice,.is sometimes needed even when sufficient pectin is pres- ent, as in the case of quinces which are not sour, or sweet plums, or blackberries. As pectin is often made from apples and stored for later use in jellies, it is obviously unnecessary to add any pectin when making ap- ple jelly from suitable apples, suffi- ciently tart in themselves. Many jel- lies offered for sale are made from a combination of apple and other juices because this insures a good firm jelly texture, and the apple flavor is seldom as pronounced as that from which the jelly takes its name. added pectin results in a jelly that does not keep well, because of insuf- ficient cooking. It is desirable to cook any jelly very quickly and care- fully, but if there is too much pectin present the jelly stage may be reach- ed before the juices are thoroughly cooked, and fermentatio will re- sult. To make good plain apple jelly, choose apples of a fairly tart variety that are not overripe, extract the Juice from the entire applesskins, cores, everything but the damaged parts, which should be trimmed out and you will have the basis of a clear. Milk kept in the outdoor ice- box or on the window sill some-. times develops an off flavor that has been described as a cardboard taste having an odor like drying linseed oil. Such a defect may be due to any of several causes, but one of the most common causes, according. to Dr. William C. Frazier of the Bureau of Dairy Industry, United States De- partment of Agriculture, is ordinarily light. The light apparently acts as a catalyst in the oxidation. of the milk fat, he says. : That light is essential for the de- velopment of the cardboard taste has been demonstrated recently by Doe- tor Frazier in a series of testa in | which duplieate sets of samples of milk were prepared, one of which was exposed to daylight and the other n_of | d partment of Agriculture say that it} - Sometimes the unnecessary use of | placed in the dark. Further tests showed that the cardboard taste is not due to the cardboard cap, and that it develops in the cream or in whole milk and not in skim milk. Furthermore, milk from cows that had received no oil feeds was found to be just as sus- ceptible when exposed to light as that from cows that consumed large quantities of oil feeds. Other investigators have shown that the action of direct sunlight on butterfat or on milk repidly produces off flavors. It-is generally supposed, however, that diffuse daylight has & much slower action and would have little effect on milk flavor. Doctor Frazier reports, however, that the test samples were never exposed to direct sunlight but wete placed in a north window in diffuse light. It is apparent, he says, that exposure to light so shortens the induction period of the milk fat that oxidation may be- gins with consequent production of undesirable odors and.flavors. The few hours of exposure to light appar- ently starts a process which continues in the dark and is accelerated by more daylight. Consumers are cautioned to- keep milk in the dark, even when tempera- tures in the light are near freezing, to avoid the development of card- board taste and lingeed-oil odor. SOME OCTOBER PRECAUTIONS AGAINST ANIMAL PARASITES With the approach of cold weath- er, bright, mild days in October are a good time for dipping livestock. This is a timely reminder given in the Calendar of Livestock Parasites, published as Miscellaneous Publica- tion 25-M, for free distribution by the United States Department of Ag- riculture. Dipping livestock on farms during freezing weather may cause chilling and be injurious. The intro- ductory paragraph for the month also warns that October is time to learn about trichinosis and reasons for cooking pork well. The text of the calendar devoted to the month: of October says: Did you dip your livestock last month? If not, do it now, before cold weather. If sheep scab is dormant in your flock it will make trouble later. Consult Farmers Bulletin No. 713-F. Clean up chicken lice. Beware of trichinosis. Now is the time for early fall slaughtering of pigs. Every year pigs are killed on the farm and made into sausage and other products. Every year the in- cautious farmers wife tastes the raw sausage to see whether the seasoning is right and the farmers family or friends eat some of the raw sausage or other nork products raw. And ev- ery year there are a number of deaths from trichinosis as a result of this proceeding. The disease is caused by worms, of microscopic size, known as trichinae, which live in the muscles. Most of our trichinosis arises from farm slaughtering of pigs and the eating of raw sausage from small uninspected establishments. Trichino- Sis appears to cause swine very little trouble or discomfort, but is a very painful disease in man and frequen- tly fatal. There is no dpendable cure or treatment. Cook pork and pork products well and thoroughly, and avoid eating them raw. When nature supplies your chick- ens and turkeys with free feed in the form of earthworms, snails, slugs, and insects; there may be a eost to reekon with later. Many parasite worms use these other small animals as intermediate hosts or carriers of some sort in getting from one bird to another. Thus earthworms some- ee: These small ani gs in the droppings or in conta nated soil and carry the eggs or young worms to the bird that eats the earthworm, slug, snail, or insect. It is sometimes necessary to combat these intermediate hosts in order to control certain parasitic worms.
